In 1776, John and James McConnell opened their Belfast distillery where they crafted the first recorded Irish Whisky brand. McConnell's Irish Whisky was a popular export worldwide, including America, where it became popular from New York to California. Willett Family Estate 19 Year Old Single Barrel Bourbon #1582 111.8 Proof

Kentucky Bourbon Distillers are the owners of the Willett distillery in Bardstown. Willett distillery was built in 1936, just a few years after the repeal of National Prohibition by Lambert Willett, a former distiller for Max Selliger & Co. The distillery was initially a success, principally through its Old Bardstown and Johnny Drum brands, however it was hit hard by the bourbon slump of the 1970s. The result was an ill-advised move into producing ethanol for the production of "gasohol," spurred by the 1979 energy crises. When that market re-stabilised, Willett was left floundering and eventually closed in the early 1980s. Lambert's granddaughter, Martha Willett and her husband, Even Kulsveen, then purchased the distillery and established Kentucky Bourbon Distillers in 1984. They originally bottled the remaining barrels of 1970s-distilled stock, however as that gradually diminished, they began sourcing barrels from other producers in order to replenish it, becoming one of the most important independent bottlers in Kentucky. The majority of their barrels were believed to have come from neighbouring Heaven Hill, and with these casks they developed a wealth of important brands, including the Willett Family Estate, Noah's Mill and Rowan's Creek. In addition, they contract-bottled brands for other companies, such as the Very Olde St Nick and Black Maple Hill brands. Revered for the quality of their whiskey, their products have become some of the most collectible to come out of Kentucky.

For the Willett family, distilling craft whiskey is a family tradition. John David Willett began distilling at the Moore, Willett & Frenke Distillery in Kentucky during Reconstruction. In 1898, Lambert Willett, who was 15 years old at the time, began apprenticing with his father. Nearly four decades later, Lambert, together with his son, Thompson, purchased a farm on the outskirts of Bardstown, Kentucky and began construction of the Willett Distilling Company. Today, Evan Kulsveen, Thompson Willett's son-in-law and the owner of Willett Distilling Company, continues to shepherd the family legacy forward. This Willett Family Estate Small Batch rye is matured for four years in hand selected White Oak barrels for four years. The 18th & 19th centuries there were the glory days of the Irish whiskey industry, with over 200 licensed distilleries in all of Ireland. There were also countless unlicensed distilleries at the time, producing diverse styles of poitn, whiskey, gin, and even absinthe. But through a series of unfortunate events, the Irish whiskey industry dried to a trickle in the 1970s. Glendalough Distillery is part of a revival of this Irish heritage. Their philosophy is "to make innovative spirits while staying true to the tradition and heritage of our ancestors." Glendalough started out making poitn the traditional Irish distillate made in small pot stills. From there they seamlessly transitioned to whiskey production, and most recently, seasonal,wild botanical gins. All of their production is handmade. This very special, small-batch Gin takes the Wild Gin recipe and redistills it with extra fruit, flowers, spices and an abundance of fresh rose petals.Three varieties of rose are used including the rare and elusive Wild Rose from the Wicklow mountains, large fragrant Heritage Roses and the ancient prized Damask Rose. Combined these roses create a naturally pink, very floral gin. The delicate nature of petals requires a more gentle, slower distillation than the wild botanical gin. Vapor distillation is more efficient in extracting the essential oils and flavors. After distillation, the gin is further infused with even more roses to deepen the flavors and create a beautiful pink hue. Floral, fragrant and flavorful, this unique gin is the product of endless experimentation with plants, fruit, spices, and flowers.

It is known for its medicinal properties and many benefits, including expectorant and anti-inflammatory. In the language of flowers, the violet symbolizes shy and secret love. The violet is often used in confectionery, and sometimes in pastry, for syrups, liqueurs and in perfumery. Created in the 19th century, crème de violette peaked at the end of the century. Today, popular cocktails made with crème de violette include Aviation and Blue Moon.
