Maker Notes

At the heart of our recipe is Juniperus Procera, the only species of juniper indigenous to the southern hemisphere. Procera means “tall” in Latin and when you walk through the Procera forest of the Kenya highlands, you understand why straightaway, as you’re dwarfed by these majestic giants. Native to the highlands of Kenya, and growing only above 1500 metres above sea level, this is what makes African juniper so special. Whereas common juniper grows in temperate zones and receives only summer sun for three months a year, our Procera berries receive about seven hours of daily sunlight all year round. Situated at 2200 metres, the Kijabe forest where we harvest our juniper receives even stronger, more direct sun. Hence a richness of flavour and essential oils that only the equatorial sun can provide.

We partner with the Kijabe Forest Trust, an organisation founded to protect the native forests of Kijabe from poaching of both animals and trees. They in turn work with the local communities to collect the Procera berries once they are fully ripe at the end of the short rains around the middle of the year. We know it is time to start harvesting the juniper when the local family of baboons start veraciously devouring them due to their appetising sweetness.

The Procera berries had never been used commercially before we started harvesting them and hence we’ve had to learn everything from scratch. From where the best berries grow, to when to harvest them and how to process them, every step has been a journey of discovery. It is crucial not to let the berries ferment once collected and they must be air dried for about a week before they can be flash frozen to maintain optimal freshness and brightness for distilling throughout the entire year.

By showing the local communities that each tree has a direct monetary value each year, not only are more trees being planted but there is also a reduction in the felling of the old trees. We hope that the world comes to realise that the unparalleled sun and terroir of Kijabe creates a better juniper berry with which to make gin. We dream that in the future, “African Dry Gin” will become a designated category which: must be distilled in Africa; must use African Juniper; must use only botanicals grown on the continent. If this dream were to be realised and there were 10 more Kenyan distilleries, the future of these magnificent juniper forests would not only be assured, but the reforestation of their old habitat across the entire Kenya highlands would become much more probable.

Winemaker Notes
This vibrant Sauvignon Blanc offers an enticing medley of tropical and citrus aromas, including pineapple, lemon verbena, lime and guava. The palate is lush and lively, combining a silky texture and energetic acidity with fresh melon, citrus, and pineapple flavors framed by subtle minerality throughout a long, bright finish.

Production
Winter and spring provided ample rain, which allowed the vines to set a generous crop with excellent canopies. Budbreak arrived a little over a week early, and we enjoyed warm, steady weather throughout spring and summer. We began picking Semillon, Sauvignon Blanc, and some Merlot as early as mid-August, but the first big push began after a Labor Day heat event, when our generous canopies paid dividends, helping shade the grapes. After a busy few weeks, a cool spell allowed the remaining grapes time to mature. To counter the impact of modest mid-September rains, we applied a careful fruit drop, and were equally diligent during sorting. Overall, harvest lasted eleven weeks, delivering wines with excellent concentration, supple tannins, lovely finesse and dynamic acidity.

Glenfarclas 12 Year Old Single Malt Scotch Whisky

The Glenfarclas distillery is a family business in its truest sense, having been in the hands of the Grant family for 6 generations. The distillery, which started its operations before 1791 and was first granted a license in 1836, was bought by John Grant in 1865. Grant, a well-known cattle breeder, first leased the distillery to his distant cousin John Smith. When Smith left in 1870 to start the Cragganmore distillery, John's son George took over. In 1890 George died only a year after his father, and left the distillery to his widow and two sons, John and George. George's sons, George S. Grant and John P. Grant incorporated Glenfarclas as a private limited company in 1947, and a few years later George was appointed the chairman of the company, staying at the helm for 52 years. The early years of George's tenure were marked by rapid growth and expansion, with the production doubling due to high demand from blenders. In the late 1960s, demand for whisky started to decline, and Glenfarclas lost its biggest client. George made the wise decision to put aside more stock for the distillery's own bottling instead of relying heavily on the demand from blenders. This resulted in the distillery now having an abundance of aged stock, and their warehouses currently hold casks of the past seven decades. Now the distillery is run by the 5th and 6th generation of the family, still faithful to the vision of creating the finest Highland single malt whisky in the Speyside way. With over 150 years of experience in the family, the distillery produces a traditional Highland malt with a heavy sherry influence using artisan methods handed down through generations. Glenfarclas is one of the few distilleries using direct fired stills. The six stills at Glenfarclas are the biggest in Speyside. The spirit is distilled twice before being put in casks, which are kept in traditional dunnage warehouses. Glenfarclas's 12-year expression is aged in the finest European oak casks used once for Oloroso sherry, which are personally picked by John Grant at a family-owned bodega in Spain. This multi-award winning expression, bottled at 43% ABV, is an excellent introduction to the distillery style for those who enjoy a sherried whisky.

Koval started its life as a craft distillery, founded in Chicago in 2008, as the first distillery in Chicago's city limits since Prohibition. Founders Robert and Sonat Birnecker left their professional lives in academia to found Koval. They have been crafting certified organic whiskeys, brandies, liqueurs and specialty spirits from scratch, ever since. Being the first distillery within city limits since the mid-1800s, Koval brings Austrian distilling traditions to America. Koval is named after founder Sonat's great-grandfather, who earned Koval the nickname Koval, when, at the very early age of 17 he emigrated from Vienna to Chicago at the start of the 1900s, to start a business. Robert was bequeathed a treasure trove of distilling knowledge and expertise from his grandfather, Robert Schimd. "Being a craft distiller allows us to be flexible and bring a new approach to the market," says Sonat Birnecker, the founder of Koval Distillery. "Craft can be different. Different in business model. Different in product. Craft is a way to be creative." Together with her husband, Robert, Birnecker founded Koval Distillery Chicago's first distillery since Prohibition in 2008. Koval Distillery, which is situated just a few feet away from Hollywood Beach in Chicago's North End, boasts a custom-made, 2,000 gallon, Kothe Destillationstechnik copper-pot still imported from Germany. "I come from a family that's been distilling for over a hundred years in Austria," explains Robert, who has been distilling spirits himself since he was a child. "My grandfather had a distillery in Austria and I would help him to make different eau de vies and brandies when I was growing up. He taught me the importance of having the right equipment and using fresh, organic ingredients. Koval distillery is a grain-to-bottle operation. For this special expression they use 100% organic oats sourced from the Midwest. Aged for up to 24 months in 30-gallon new, American oak charred barrels sourced from Minnesota, this single barrel has primary notes of caramel and oats with a rich, creamy finish. Only the heart cut of the distillate, makes the final cut (no heads or tails).

THE LOST ART OF TEQUILA MAKING

CAZCANES WATER
Cazcanes sources natural artesian water for our tequila. The water starts off as rain or snow high up on the pristine peaks of the San Pedro de los Landeros mountains. It slowly travels through natural minerals deep within the volcanic mountains before emerging at the Navichi springs.

NATURAL YEAST FERMENTATION
The ‘piñas’ are then cooked, and crushed to extract and concentrate their flavors.  Next comes fermentation using natural, wild yeast, and then distillation in our alembic stills.

CAZCANES AGAVE
Hand-selected Weber Blue Lowland (Tequila Valley) Agave grown in Volcanic Tufa Soil at 4000-6000 ft is harvested during peak sugar levels to deliver a distinct Cazcanes taste.
