In Kentucky, buffalo carved a pathway followed by America’s first explorers. Those brave pioneers distilled whiskey using traditional methods and drank it right off the still. They called it White Dog. This raw distillate was clear, un-aged and had a hint of sweet corn. Later distillers discovered this spirit was perfect for aging - creating what we know today as fine Kentucky Straight Bourbon Whiskey. We’re still making whiskey on the spot where ancient buffalo once crossed the Kentucky River and following centuries of time-honored distilling tradition. DISTILLING NOTES

Caramel and vanilla flavors from the charred white oak barrels come through first with a spicy rye note from the spirit. The rye becomes more assertive in the finish. Clean, dry and spicy with a nice warmth. We crafted this rye to be smoother and more approachable than many rye whiskeys. Carefully pot-distilled, specifically to be aged in our selection of cooperages and sizes, the spirit is balanced between the spicy grain character of rye and the sweet caramel & vanilla flavors of high quality oak barrels.

Each year as part of the Parker's Heritage Collection, we select a special Whiskey to be released in the name of our late Master Distiller Parker Beam. The 18th edition of the Parker's Heritage Collection® consists of 14-year-old Malt Whiskey aged in the upper floors of Rickhouses O and Q. Then, barrels that previously held Cognac were reconstructed to include a handful of new heavy toast staves. The Malt Whiskey was then rebarreled in the reconstructed barrels and aged for almost four months. Bottled at 107 proof without chill filtration, the rebarreling transforms the Malt Whiskey's earthy, herbal characteristics into complex notes of molasses, dark chocolate, and dried summer fruit.

MacNair’s Lum Reek 21-year-old is a marriage of Single Malts from Islay and Speyside – two of the most sought-after whisky regions in Scotland – combining both peated and unpeated spirit to create a perfectly balanced and complex malt. The recipe, concocted by industry veteran and Master Distiller/Blender of the Year, Billy Walker, includes aged GlenAllachie single malt.

The small batch expression was matured to perfection at The GlenAllachie Distillery in a combination of Oloroso sherry, red wine and virgin oak casks expertly sourced from across the globe. The resulting whisky, offered without added colouring or chill-filtration, is brimming with dark chocolate, vanilla fudge, and cinnamon buns, all with gentle peat undertones.

The Launch
Yellow Rose launched in the Texas market in 2012. After years of hard work and dedication, we are proud to be Houston’s First Legal Whiskey Distillery.

True to its name, this one breaks all the traditional bourbon laws. Made from 100% Texas yellow corn and aged in small American oak barrels right here in Houston. The 15-20 degree temperature swings in this part of Texas give our bourbon unique characteristics that can only be achieved here. In fact, our angel share is 15% per year, making our whiskey extremely rare and valuable to us.

Outlaw Bourbon is full-flavored with warm caramel and vanilla overtones. Our traditional pot still helps us produce a true small-batch whiskey. One sip and we think you’ll agree you’ve never had anything like it.

Maker Notes

Don Vicente is naturally handcrafted in Destileria El Pandillo, located in the Highlands of Jalisco in a famous tequila town called Jesus Maria. Destileria El Pandillo is one of the best, most sustainable, and most innovative distilleries in the world. It has topped many lists as the best tequila distillery in Mexico.

This is all masterminded by our master distiller Ing. Felipe J. Camarena. Felipe Camarena is a 3rd generation Tequila Distiller and a 6th generation Agave Farmer, a family tradition going all the way back to 1861. His main goal is to produce the cleanest, most natural, and traditionally made tequila there can be. Camarena is also an engineer by profession. The way he mixes his engineering skills along with his tequila knowledge can be seen throughout El Pandillo in the most innovative and impressive way.

REPOSADO

Remarkably smooth. The same body of Don Vicente Blanco rested in American White Oak Bourbon barrels for less than a year. The aging adds a complexity of aromas and flavors. The cooked Blue Weber Agave, minerality, and earthiness are all still very present; with hints of vanilla, caramel, and butter.

A rich and buttery mouthfeel.

Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of his counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskies, vodkas and even an aging balsamic vinegar (it's 14 years old already). Our objective with St. George Raspberry Brandy, explains Winters, was to take an olfactory snapshot to capture exactly what raspberries smell like at their peak of ripeness. We used the whole fruit in its entirety in a deliberate effort to maximize the most elemental and essential flavors and aromas. Once the raspberries have been harvested, they are distilled through copper pot stills without the use of sugar or any other artificial ingredients. The brandy has an extraordinary texture and flavor profile, with rich waves of soft fruit, raspberries, oak and cinnamon that are complemented by a mineral touch. The brandy was named one of the Top 75 Spirits of 2014 by F. Paul Pacult's Spirit Journal.

LEGEND HAS IT

A ship carrying spiced rum from the Caribbean was attacked by a monstrous Kraken. The Beast thrust upon the ship its massive limbs, plunging the vessel and the men on board into impenetrable darkness.

THE LONE SURVIVOR

All of the barrels of rum were destroyed except one, which was badly stained by the squid’s black ink. It was dubbed “The Kraken Rum.” It is now known as a liquid of unparalleled darkness.

As dark as a cloud of bats from under the Congress Ave bridge, The Kraken is a spiced rum blended with natural flavors and caramel color. If reports are true, Houston definitely has a problem, as its tentacles have stretched across the Lonestar state, riding fences and keeping Austin weird.

Casa San Matas has been making tequila since 1886, making it one of the oldest family tequila distilleries in Mexico. It was during the revolutionary era that Don Delfino Gonzales sprung on the opportunity to channel his passion into making the famous Mexican spirit. In 1940 the distillery was relocated to Ojo de Agua in the Los Altos region of Jalisco. They were the first distillery to introduce an extra-aged tequila to the Mexican market in the 1990s the San Matas Gran Reserva. With more than 130 years of tequila-making behind them, they are just as passionate about tradition as they once were. Majestic Rey Sol tequila was launched in 1998, just as the first International Space Station brought mankind closer to the sun. The depiction of the sun on the beautiful decanter was designed by Mexican artist Sergio Bustamante. It's a traditionally-crafted spirit, made from Casa San Matas' own agaves, grown in the mineral-rich soil of the Jalisco Highlands. These are first baked for 48 hours at exactly 194F. The cooked agaves are then milled and natural spring water is added. The juice ferments for 72 hours in fermentation tanks, before being distilled slowly at a low temperature. Finally, the tequila is aged for 6 years in French and American white oak barrels.

The Quinta do Seixo 2017 is an exceptional single estate Port Wine produced from selecting only the best grapes on the property.

This unique Port has an almost opaque deep ruby color with an excellent aroma that is complex and intense. Notes of black and red fruit, shrubby tones, spices and hints of balsamic harmonize perfectly. Great volume on the palate, this wine has opulent and firm tannins, a well-balanced acidity and further shrubby tones that invite a vigorous and layered finish.

As a symbol of our offering to the makers who came before us and whose inspiration roused us to seek a future all our own, Cataleja Texas Single Malt is one of the most complex and unique whiskies in our portfolio. The Single Malt made with 100% Golden Promise Malted Barley was first aged in refill casks, then in a variety of decommissioned Sherry Solera puncheons: Moscatel, Amontillado Dulce, Oloroso, & Palo Cortado. The word Cataleja is a loose translation of the English word spyglass. As we chart our course, we honor our elders by viewing the horizon through their lens, learning the lessons we need to chart our own course and ensuring the future of Texas whiskies and American Single Malts.

TASTING NOTES

ON THE NOSE, Cataleja is bright yet earthy with notes of brandied figs dusted with smoked paprika that build to sautéed apricots served on an olive wood spoon. Deeper breaths reveal sophisticated savory notes of sobrasada garnished with orange zest, mossy cherry cavendish, and venison jerky in browned butter.

ON THE PALATE, it is sticky with brooding notes of medjool dates stuffed with cashew butter, cacao nib, and ground clove which transitions to vibrant notes of eucalyptus oil and burnt lemon peel. Pineapple kebabs on matchstick and cinnamon skewers fade to a bittersweet finish of licor de hierbas and affogato made with cherry ice cream.

A MASTERFUL COMBINATION

Cosseted away in the finest, hand-selected oak casks and allowed to mature at its own sedate pace, this is one of the most remarkable, perfectly balanced single malt scotch whiskies of its kind. One of our rarest whiskies, bottles of Bowmore 18 Year Old may be limited, but there's no end to its enjoyment.
