THE BLEND

Veuve Clicquot presents the third edition of its Extra Brut Extra Old collection. With one of the largest and most varied collections of reserve wines in Champagne (between 400 and 500 wines), the Maison has a unique wine heritage.

True to its expertise in the Art of Blending, Veuve Clicquot enriched its Extra Brut Extra Old collection in 2021 with a new cuvée composed of 8 years selected among its remarkable reserve wines: 1990, 1998, 1999, 2008, 2009, 2012, 2013, and 2014.

A precise Champagne made for wine lovers, this new wine is matured twice. First in vats on fine lees for several years, then in cellars for a further three years before disgorgement, giving it its texture and aromatic complexity. 

On the nose, Extra Brut Extra Old 3 reveals aromas of white flowers, citrus fruits (lemon), white fruits and opens with notes of bread dough and orange peel. The first sip reveals a great freshness on the palate, then comes the complexity and depth. Extra Brut Extra Old 3 has an aging potential of more than 15 years and brings all the precision and liveliness of a rare and complex Champagne.

TASTING NOTES

The aromatic purity of the Extra Brut Extra Old 3 cuvée is best enjoyed when paired with a balanced cuisine full of freshness: vegetables with fresh fruits, iodized ingredients such as fresh seaweed with crustaceans, or with fresh herbs.

Nikka Yoichi Single Malt Whisky

In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masataka's family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. Upon matriculation, however, Masataka showed more interest in whisky than in sake and in 1918, enrolled at the University of Glasgow, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing with distilleries at night, learning to distill and blend whisky first-hand at some of Scotland's most prestigious distilleries. In 1920, Masataka returned to Japan, and within the decade, had produced the country's first single malt whisky. Deeming the terroir perfect for whisky production, Masataka moved to the town of Yoichi in 1934 and opened the doors to Nikka Whisky Co. Yoichi is encapsulated by mountains (to the east, south and west) and by the Sea of Japan (to the north), creating a unique and isolated environment for whisky-production. The clean air, humidity and access to underground water filtered through a layer of peat results in a rich and masculine malt. Years later, Masataka established the Miyagikyo Distillery, which is also situated in northern Japan. Surrounded by mountains and two rivers, the Miyagikyo Distillery produces a more mild and feminine whisky as compared to Yoichi. This Yoichi single malt is full of pleasant peaty notes and smokiness, resulting from the traditional direct coal-fired distillation. The whisky also has subtle briny notes imparted onto the spirit by the sea breeze during the aging process.

Winemaker Notes
Graceful, pure and polished, this enticing Chardonnay offers tantalizing aromas of green apple, nectarine and candied citrus, with fragrant hints of roasted nuts and acacia blossoms. On the palate, it is rich and lushly textured, with a flowing elegance that frames the fresh citrus and stone fruit flavors, while carrying the wine to a long, silky finish.

Production
While the growing season began with a mild winter and less than average rainfall, there was enough precipitation to provide ample soil moisture. After an early and ideal budbreak, temperate weather throughout spring and summer produced balanced canopies and steady shoot growth, with relatively small berries. Mid-August brought a week of temperatures over 100º F, providing a final push towards optimal ripeness for our Sauvignon Blanc, Chardonnay, and select Pinot Noir vineyards. While late-season wildfires in Northern California brought logistical challenges, we were able to successfully pick our vineyards during a very busy, truncated harvest, resulting in beautifully pure and aromatic white wines, and lush, spicy and concentrated reds.

Founded in 1959, their distillery is situated by the Andes Mountains in Venezuela with access to pure water and close to sugar processing plants. Their line features a range of award-winning and highly-regarded column, batch kettle, and pot still rums. They are involved with the community and employ sustainable production practices. Named Diplomtico in honor of the statesman who brought order and balance to a restless era in Venezuela during the 19th century, the 18th-century distiller Don Juancho Nieto Melndez also known as El Ambassador these rums are the exquisite product of Venezuela's warm, tropical climate. The sunny days, cool nights, constant breeze, and abundant rainfall create an idyllic environment for growing and cultivating juicy, fresh sugarcane. The sugarcane is harvested, fermented, and distilled into rum, before being aged in a range of bourbon, port, and sherry casks. They are then masterfully blending by the hands of Tito Cordero, Diplomtico's maestro ronero. The N2 Barbet Rum expression is a part of The Distillery Collection, a threesome of special edition rums, each distilled a different way. This one was distilled using a French continuous Barbet column still the La Miel distillery got in 1959. Made from sugar cane molasses and matured for 4 years in ex-bourbon and whisky American white oak barrels, it's a well-balanced, tropical, fruity, and oaky spirit.
