The Launch
Yellow Rose launched in the Texas market in 2012. After years of hard work and dedication, we are proud to be Houston’s First Legal Whiskey Distillery.

True to its name, this one breaks all the traditional bourbon laws. Made from 100% Texas yellow corn and aged in small American oak barrels right here in Houston. The 15-20 degree temperature swings in this part of Texas give our bourbon unique characteristics that can only be achieved here. In fact, our angel share is 15% per year, making our whiskey extremely rare and valuable to us.

Outlaw Bourbon is full-flavored with warm caramel and vanilla overtones. Our traditional pot still helps us produce a true small-batch whiskey. One sip and we think you’ll agree you’ve never had anything like it.

Maker Notes

Don Vicente is naturally handcrafted in Destileria El Pandillo, located in the Highlands of Jalisco in a famous tequila town called Jesus Maria. Destileria El Pandillo is one of the best, most sustainable, and most innovative distilleries in the world. It has topped many lists as the best tequila distillery in Mexico.

This is all masterminded by our master distiller Ing. Felipe J. Camarena. Felipe Camarena is a 3rd generation Tequila Distiller and a 6th generation Agave Farmer, a family tradition going all the way back to 1861. His main goal is to produce the cleanest, most natural, and traditionally made tequila there can be. Camarena is also an engineer by profession. The way he mixes his engineering skills along with his tequila knowledge can be seen throughout El Pandillo in the most innovative and impressive way.

REPOSADO

Remarkably smooth. The same body of Don Vicente Blanco rested in American White Oak Bourbon barrels for less than a year. The aging adds a complexity of aromas and flavors. The cooked Blue Weber Agave, minerality, and earthiness are all still very present; with hints of vanilla, caramel, and butter.

LEGEND HAS IT

A ship carrying spiced rum from the Caribbean was attacked by a monstrous Kraken. The Beast thrust upon the ship its massive limbs, plunging the vessel and the men on board into impenetrable darkness.

THE LONE SURVIVOR

All of the barrels of rum were destroyed except one, which was badly stained by the squid’s black ink. It was dubbed “The Kraken Rum.” It is now known as a liquid of unparalleled darkness.

As dark as a cloud of bats from under the Congress Ave bridge, The Kraken is a spiced rum blended with natural flavors and caramel color. If reports are true, Houston definitely has a problem, as its tentacles have stretched across the Lonestar state, riding fences and keeping Austin weird.

Casa San Matas has been making tequila since 1886, making it one of the oldest family tequila distilleries in Mexico. It was during the revolutionary era that Don Delfino Gonzales sprung on the opportunity to channel his passion into making the famous Mexican spirit. In 1940 the distillery was relocated to Ojo de Agua in the Los Altos region of Jalisco. They were the first distillery to introduce an extra-aged tequila to the Mexican market in the 1990s the San Matas Gran Reserva. With more than 130 years of tequila-making behind them, they are just as passionate about tradition as they once were. Majestic Rey Sol tequila was launched in 1998, just as the first International Space Station brought mankind closer to the sun. The depiction of the sun on the beautiful decanter was designed by Mexican artist Sergio Bustamante. It's a traditionally-crafted spirit, made from Casa San Matas' own agaves, grown in the mineral-rich soil of the Jalisco Highlands. These are first baked for 48 hours at exactly 194F. The cooked agaves are then milled and natural spring water is added. The juice ferments for 72 hours in fermentation tanks, before being distilled slowly at a low temperature. Finally, the tequila is aged for 6 years in French and American white oak barrels.

The Quinta do Seixo 2017 is an exceptional single estate Port Wine produced from selecting only the best grapes on the property.

This unique Port has an almost opaque deep ruby color with an excellent aroma that is complex and intense. Notes of black and red fruit, shrubby tones, spices and hints of balsamic harmonize perfectly. Great volume on the palate, this wine has opulent and firm tannins, a well-balanced acidity and further shrubby tones that invite a vigorous and layered finish.

Maker Notes

Inspired by memorable dinners and nights out on West 32nd Street in New York City’s Koreatown, we sought to develop an approachable, high-quality Soju to share over any meal, toast with for celebrations, or to kick back and catch up with friends.

American craft soju triple carbon filtered without chemical sweeteners or artificial additives.

Clément VSOP Rhum Vieux is distilled from sugarcane juice as is typical in Martinique and proudly wears the “AOC Martinique” designation signifying an exemplary degree of expertise in every stage of production.

As a symbol of our offering to the makers who came before us and whose inspiration roused us to seek a future all our own, Cataleja Texas Single Malt is one of the most complex and unique whiskies in our portfolio. The Single Malt made with 100% Golden Promise Malted Barley was first aged in refill casks, then in a variety of decommissioned Sherry Solera puncheons: Moscatel, Amontillado Dulce, Oloroso, & Palo Cortado. The word Cataleja is a loose translation of the English word spyglass. As we chart our course, we honor our elders by viewing the horizon through their lens, learning the lessons we need to chart our own course and ensuring the future of Texas whiskies and American Single Malts.

TASTING NOTES

ON THE NOSE, Cataleja is bright yet earthy with notes of brandied figs dusted with smoked paprika that build to sautéed apricots served on an olive wood spoon. Deeper breaths reveal sophisticated savory notes of sobrasada garnished with orange zest, mossy cherry cavendish, and venison jerky in browned butter.

ON THE PALATE, it is sticky with brooding notes of medjool dates stuffed with cashew butter, cacao nib, and ground clove which transitions to vibrant notes of eucalyptus oil and burnt lemon peel. Pineapple kebabs on matchstick and cinnamon skewers fade to a bittersweet finish of licor de hierbas and affogato made with cherry ice cream.

Bourbon distinguishes itself from regular American whiskey through its requirement for aging in new, charred white American oak barrels. Michter's Whiskey, specifically their US*1 Unblended Small Batch American, goes beyond the standard rules by deviating from the 80% ABV requirement. Located in Kentucky, Michter's has an old distillery and produces whiskey that is unique because it's aged in bourbon-soaked barrels and bottled at an exact 83.4 proof, making it stand out. They also have a meticulous production process, using custom-made, well-dried barrels and a unique chill filtration technique. This whiskey maintains its distinct character and offers rich butterscotch and vanilla notes at 41.7% ABV.

On the banks of the Salt River, nestled in the quiet Kentucky countryside near Lawrenceburg, Four Roses Distillery is a testament to American ingenuity and perseverance. Built in 1910 to resemble the architecture of California wineries, the distillery now listed on the National Register of Historic Places was one of six distilleries that was granted permission to operate during Prohibition in order to produce medicinal bourbon. Following Prohibition, Four Roses Kentucky Straight Bourbon became the top-selling bourbon in the United States. In 1943, Seagram's bought the distillery and a decade later, discontinued the sale of Four Roses Kentucky Straight Bourbon. In 2002, the distillery changed hands again, and the new owner brought a renewed sense of purpose and vigor to Four Roses. Four Roses Small Batch Kentucky Straight Bourbon Whiskey is made from a blend of four different Kentucky bourbons, each distilled at the Four Roses Distillery in Lawrenceburg. Two of the bourbons are comprised of a mash of 60% corn, 35% rye and 5% malted barley, while the other two bourbons are comprised of a mash of 75% corn, 20% rye and 5% malted barley. Each of the bourbons is fermented with a unique, proprietary yeast culture used to bring about a specific flavor in the bourbon. "We do things differently," said Jim Rutledge, Four Roses' former master distiller - Whisky Magazine's Hall of Famer. After distillation, each bourbon is aged for a minimum of four years at a one-story rickhouse maintained near the distillery. While most distilleries age bourbon in warehouses that are many stories high, Four Roses ages its bourbon in a one-story warehouse to ensure that each barrel is aged in a similar environment. After aging, the barrels are hand-selected and then blended together in order to create Four Roses Small Batch Bourbon. The high rye content in two of the bourbons results in a rich, spicy flavor and contributes notes of nutmeg and cinnamon. In addition, the high corn content in the remaining two bourbons results in a lighter, fruitier flavor that balances out the spiciness with notes of maple syrup and caramel.

Aged for a minimum of two months in French oak barrels to give it a light oakiness, Rooster Rojo reposado tequila is one of Mexico’s finest tequilas, enjoyed alone or as a mixer.

Fine, handcrafted Mezcal from the mountains of Oaxaca in Mexico. Made for the discerning connoisseur who is ready for new and complex flavor profiles. Craft Luxury at its best, we still bake our Agave Hearts for six days in earthen ovens and mill them under a great stone wheel drawn by horses. Fermentation is careful and chemical-free while distillation takes place in a wood-fired, serpentine copper alembic – More Craft, Than Craft. Pierde Almas Espadin Mezcal is handcrafted, artisanal, and meant for sipping; great for food pairing.

For the Willett family, distilling craft whiskey is a family tradition. During Reconstruction, John David Willett the family patriarch began distilling whiskey at the Moore, Willett & Frenke Distillery, which was situated just outside of Louisville, Kentucky. In 1898, his son, A. Lambert Willett who was 15 years old at the time began following in his father's footsteps. Three decades later, Lambert, together with his son, Thompson, purchased a farm on the outskirts of Bardstown, Kentucky, and began construction of the Willett Distilling Company. While the Willett Distilling Company eventually changed its name to Kentucky Bourbon Distillers, the family tradition lives on Even Kulsveen, the current owner of KBD, is Thompson Willett's son-in-law. In keeping with family tradition, Pure Kentucky XO Small Batch Straight Bourbon Whiskey is an authentic Kentucky straight bourbon. Aged for about twelve years ("XO" meaning "extra old"), Pure Kentucky is bottled at an unusually robust proof of 107, yet is remarkably smooth and drinkable. The bourbon has an intense aroma of sweet vanilla, cedar and oak. The aroma yields to notes of spicy rye, vanilla and maple syrup, with hints of cherry. The slightly salty finish is long and smooth, with continued vanilla notes. Pure Kentucky won the Double Gold Medal at the San Francisco World Spirits Competition, and is highly recommended by F. Paul Pacult's Spirit Journal. A premium mezcal brand that originates from the Oaxaca region of Mexico and is known for its high-quality and carefully crafted mezcal. The Espadin Tobala Joven mezcal is made from a blend of two types of agave plants, the Espadin and Tobala. The Espadin is the most commonly used agave plant for mezcal, while the Tobala is a rarer and more prized variety.

The production of 400 Conejos Espadin Tobala Joven mezcal is a labor-intensive process that involves harvesting the agave plants, roasting them in an underground pit, crushing them to extract their juice, fermenting the juice, and distilling it in copper pot stills. The resulting mezcal is then bottled and labeled by hand.
