Cordon Negro Rosé’s bright, fruity personality envelops the senses in the glass with fresh raspberry and fruit cocktail aromas. The toasty palate mixes strawberry jam and red currant to deliver a pleasant mouth feel, wrapped up in a slow, light, sweet finish.

Vinification
The late harvested Garnacha grape, also known as Grenache in France, collects sun and warmth a month longer than most cava grapes, proffering abilities to build higher levels of sugars, translating to higher alcohol content. The indigenous and rare Trepat grapes, by contrast, are low altitude, low sugar grapes that ripen mid harvest, delivering lower alcohol levels upon fermentation. The combination of the two makes for a delightfully complex, nicely balanced blend with a rosy complexion. At harvest, the grapes are processed separately, then transferred to stainless steel tanks where proprietary yeasts from Freixenet's own collection begin the first fermentation. After 10 to 12 days of interaction with the yeasts in perfect 59 to 63 degree atmosphere of the caves, the wines are racked, fined, filtered, and prepared for blending in traditional méthode champenoise, heralding the second fermentation.

Oyster Bay Marlborough Sauvignon Blanc all starts in the vineyard. We treat each vineyard block and parcel of wine individually. The fruit is harvested at optimum maturity, crushed, gently pressed and the juice is clarified.

A long, slow, temperature controlled fermentation and immediate bottling after winemaking retains all the wonderful fruit flavors and aromas present.

Oyster Bay Marlborough Sauvignon Blanc is pale straw green in color with brilliant clarity. A concentration of assertive passionfruit and tropical fruit flavors with an abundant bouquet, it is a white wine that is always crisp, elegant and refreshing.

John Emerald Purveyors Series Double Wood Rye Whiskey

John Emerald Distilling Company is a family-run small-batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and a single malt. The latter John Emerald Alabama Single Malt Whiskey is at the very core of their lineup and is the only one to share the name with the distillery itself. Then there's Hugh Wesley's Gin, Elizabeth Vodka, Spurgeon's Barrel Aged Rum, and Gene's Spiced Rum. The John Emerald Purveyor's Series Double Wood is a rye whiskey that is aged in new American oak barrels. But there's a twist, the barrels are filled with pecan wood chips. This unique method of finishing the whiskey ensures that an extraordinary amount of liquid comes into contact with the wood, imparting the sweet and spicy rye with additional nutty pecan notes. The unique rye whiskey is bottled at 86 proof.

Edmund Haynes Taylor, Jr. was ready to embark on a new business venture, having profited from the trading of grains such as corn during the war. Taylor purchased a small distillery on the banks of the Kentucky River with a vision of producing top quality whiskey distinguished from all others of that time. Taylor knew exceptional whiskey could only be crafted by using the finest ingredients, and his time selling grains during the war taught him that grains often varied tremendously from different farmers and harvests. This special edition Four Grain bourbon is crafted just as Taylor would have wanted. Using the highest quality grains and a distinct combination of corn, rye, wheat, and malted barley, to create a flavor that is sweet with hints of caramel and vanilla, yet spicy with notes of clove and pepper. After twelve years of aging, this impeccably balanced bourbon embodies the character of the man that would expect no less.

TASTING NOTES

Opens with an inviting aroma, with the first sip bringing a lot of character. Caramel notes are touched by sweet vanilla and caramel corn, then underwritten by slightly smoky flavors and oak tannins. It maintains a smooth evenness between the four grains interacting with the charred oak barrel. Overall, a nice balance, and unique.
