The bonds of our friendship strengthened while drinking bourbon. For years, we dreamed of making our own bourbon and how we wanted it to taste. We imagined it would be easy to drink and smooth on the tongue. The name Glencadam is derived from the area known as The Tenements of Caldhame. These tenements were plots of land given to the burghs of Brechin for the purpose of food production. The Glencadam distillery is geographically surrounded by these plots, which are situated to the north and south east of the Den Burn. Glencadam is located in the Burgh of Brechin and was built in wake of the Excise Act of 1823. As the only distillery in Angus county, the distillery was owned by George Cooper, before he sold the distillery to David Scott in 1827. The distillery was later acquired by Gilmour Thompson & Co, a Glasgow blender who purchased the distillery in 1891. In 1954 Glencadam was sold to Canadian distiller Hiram Walker, as a part of a large acquisition that took place in Scotland. Then distillery proceeded to become a part of Allied distillers, who mothballed the facility in 2000 and was purchased three short years later by Angus Dundee of London, who are also owners of the Tomintoul distillery in Speyside. Glencadam single malts are quality Whiskies, no chill filtering or coloring additives are used. Sourcing water from the Barry Burn, the facility houses two stills with a capacity to produce 14,000 liters. Glencadam also sources unpeated industrial maltings for their single malts, and they age their Whisky in mostly ex-Bourbon American casks. The Whiskies are distilled using a technique that maximizes reflux. Upward sloped lyne arms on the stills impart a distinctly floral, pear-drop element to the Whisky. Glencadam Whiskies also have other signature characteristics, like rich oily textures, and creamy flavors. The Glencandam range is a diverse lineup of Whiskies that include Portwood and Oloroso Sherry cask finishes. Glencadam Origin 1825 is the first NAS (non age statement) Whisky to be released by Glencadam. Launched in 2016 this single malt was matured first in American-white-oak bourbon barrels, then finished in oloroso-sherry butts. This Highland spirit effervesces notes of fruit and flowers. It's a smooth single malt, not overly complex, a perfecter starter Whisky for aspiring aficionados!

Maker Notes

61% Malted rye, 4% malted chocolate rye, and 35% malted barley make up the grain bill of this rich, delicious whiskey. Unlike many other rye whiskeys, we do not use corn to fill up our grain bill, choosing instead malted barley which means Corsair Dark Rye is technically both a rye whiskey and a malt whiskey. This produces exceptionally smooth rye whiskey with chocolate, coffee and spice instead of green notes common in most ryes

Corsair never uses artificial flavors or colors, achieving superior flavor and color through quality malted rye and barley, innovative distillation and small barrel maturation.

Tasting Notes

Rye and citrus fruit forward nose with a hint of chocolate. Chewy, viscous mouth feel with rye malt spice and oaky sweetness on the pallet. Subtle chocolate and spice notes followed by a clean rye finish and a lingering chocolatey rye after tone.

Hiram Walker is Canada's largest distiller and blender. Hiram Walker was an American entrepreneur and founder of the Hiram Walker and Sons Ltd. distillery Windsor, Ontario, Canada.After purchasing land across the Detroit River, just east of what is Windsor, Ontario, he established a distillery in 1858, in what would become Walkerville, Ontario.

A sugar-free 25-year old, ultra premium rum that is sustainably produced and Fair Trade certified. From a 5th generation family estate, it is naturally aged without artificial ingredients, distilled 100% with renewable energy and KOSHER certified. A full-bodied rum with a long and smooth finish that lingers in the palate. Best enjoyed neat or on a rock, and paired with 70% cocoa chocolate.

Another funky expression where the proprietary Jamaican style rum brings depth and harmony to the final product while maintaining the lime and allspice notes that are expected from Falernums. Grade A fancy molasses, fermented using special rum yeast are blended with the spice infusion to bring the right level of Tiki to every bottle.

GEORGE T. STAGG KENTUCKY STRAIGHT BOURBON WHISKEY

George T. Stagg built the most dominant American distillery of the 19th century, during a time known as the Gilded Age of Bourbon. Uncut and unfiltered, this robust bourbon whiskey ages for nearly a decade and boasts the bold character that is reminiscent of the man himself.

TASTING NOTES

Lush toffee sweetness and dark chocolate with hints of vanilla, fudge, nougat and molasses. Underlying notes of dates, tobacco, dark berries, spearmint and a hint of coffee round out the palate.

Square One Bergamot, takes the vibrant taste of bergamot citrus and layers it with mandarin, tangerine and navel oranges. We then add herbal warmth of ginger, coriander and juniper botanicals to create an orange inspired spirit with greater depth and character than what is typically found among “flavored” vodkas on the market.

Bergamot orange, predominately grown along the shores of the Mediterranean Sea, is a hidden gem among citrus fruits. Bergamot gives Earl Grey tea its signature floral notes and chefs use bergamot citrus as an extra layer of flavor in gourmet deserts. In aromatherapy, bergamot elevates the essences in designer fragrances 

We chose bergamot because of the remarkable grassy, floral and tangy qualities of the fruit's peel.  Unfiltered, the delicious citrus oils stay in the bottle and showcase the exceptional fruit, floral and herbal qualities of the other botanicals. Square One Bergamot is a surprisingly complex, yet approachable expression of an orange-based spirit.

Tasting Notes

The aroma is freshly peeled orange varieties with subtle green wild flower. On the palate, floral bergamot is wrapped in juicy tangerine and the pleasant bitterness from mandarin orange. The finish is warm from the spice of ginger and juniper.

Once a year, Long Island Spirits hand selects 5 our finest aged Bourbon Barrels and bottles fewer than a couple of hundred cases per batch. This high-rye straight bourbon whisky is aged between 4 and 7 years prior to receiving additional maturation in French Oak casks from local wineries that have been rinsed with high proof brandy. When the perfect flavor and balance are achieved, Happy Warrior is bottled straight from cask at 114 proof. Extremely limited releases are selected from the finest casks in the barrel warehouse.

Long Island Spirits, makers of Rough Rider, was established in 2007 as the first distillery on Long Island since the 1800's and became the 100th Distillery in the United States of America; today there are over 1,600 distilleries throughout the USA. Surrounded by centuries old of potato, corn and rye farms, the distillery is located on the bucolic North Fork of Long Island, in the heart of the acclaimed wine region. The North Fork boasts over 60 wineries and dozens of pre-revolutionary family-owned farms that have been blessed with a microclimate that is very similar to the Bordeaux region in France. Housed in twin-cupola barn that has been repurposed into a state of the art Craft Distillery. Long Island Spirits is proud of its sustainable distillery practices and the innovative fermenting, distilling and blending techniques it has pioneered and the fact that all our spirits are non-chill filtered.

Although Bourbon may be produced anywhere in the United States, it is most commonly associated with Bourbon County, Kentucky, where it has been produced since the late 18th century. Made from a mash bill containing at least 51% corn, the Bourbon Whiskey distillate must be aged in new, charred white oak barrels. Bourbon Whiskeys are bottled at eighty proof (40% abv) or higher and cannot contain any added color or flavor. A versatile spirit that can be sipped neat, with water or on the rocks, it also performs nicely added to cocktails like the Old Fashioned.
