About this product
The 2021 Apothic Red is a rich Zinfandel-led Red blend with red silky, smooth layers of black cherry, boysenberry and black pepper. Syrah and Merlot add intriguing notes of ripe blueberry and boysenberry, while a mix of other red varieties add dimension and depth with hints of spice. Soft and plush on the palate, the long finish brings vanilla and mocha characteristics, a reflection of the selective oak aging used to enhance and support the wine’s elegant appeal.

Viticulture Notes
We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2021 growing season was cool and mild, excellent conditions for developing mature, layered fruit. A heat spell in August resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.

Winemaking Notes
Red was our first Apothic release: a daringly bold and original blend of California-grown red grapes that created a phenomenon. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes.

About the Brand

The Camarena brothers used to run the Santa Maria ranch from sunset to sunset. The only thing that could stop them was their parents call to come home for dinner.

Driven by the unbridled passion that lived in their hearts, one afternoon in the cold winters of 1976, they left the ranch without permission to ride their horses, taking them to the municipal lane of Arandas for a clandestine race of 100 rods, the young brothers looked at each other with the certainty that this day would remain engraved in their memories; with passion and enthusiasm, they set off on their horses in an unprecedented race, competing head to head….

A few meters from the end of the race, the unexpected happens, they see that the chain of the finish line is set and they know perfectly well that their end is near… Suddenly, the imposing mare «Paloma» runs to line up next to the horse «Pinto», and with the sum of their strength they manage to break the chain, saving the lives of the Camarena brothers. That moment was the motivation to follow a dream, Tequila Carrera.

Diplomtico is an independent and family-owned brand that is focused on producing rum of the finest quality. Founded in 1959, their distillery is situated by the Andes Mountains in Venezuela with access to pure water and close to sugar processing plants. Their line features a range of award-winning and highly-regarded column, batch kettle, and pot still rums. They are involved with the community and employ sustainable production practices. Named Diplomtico in honor of the statesman who brought order and balance to a restless era in Venezuela during the 19th century, the 18th-century distiller Don Juancho Nieto Melndez also known as El Ambassador these rums are the exquisite product of Venezuela's warm, tropical climate. The sunny days, cool nights, constant breeze, and abundant rainfall create an idyllic environment for growing and cultivating juicy, fresh sugarcane. The sugarcane is harvested, fermented, and distilled into rum, before being aged in a range of bourbon, port, and sherry casks. They are then masterfully blending by the hands of Tito Cordero, Diplomtico's maestro ronero. N1 Batch Kettle Rum is a part of The Distillery Collection, a threesome of special edition rums, each distilled a different way. This one employs the semi-continuous batch kettle still from 1959, a system that originates from Canada. It's crafted from sugar cane honeys and matured for 6 years in ex-bourbon American white oak barrels for a rich, sweet, fruity, and floral profile.

Although Santa Fe Spirits’ Colkegan Single Malt Whiskey is proud to pay homage to its heritage, this whiskey is much more than just another peat-smoked whiskey from across the pond and wouldn’t want to be called Scotch even if it could be.

Like its Scottish single malt cousins, Santa Fe Spirits’ Colkegan Single Malt Whiskey is made entirely from malted barley, carefully distilled, aged and finished in various oak casks to enhance the complex flavors inherent to true single malt whiskey. But there are key differences that set this remarkable spirit apart from its Scottish relatives.

While peat-smoked malt has always been a key ingredient in many well known Scotch whiskies, Santa Fe Spirits’ Colkegan Single Malt Whiskey’s wonderfully complex flavor profile benefits from a very different type of smoked malt : mesquite. The result is a smooth, mellow, mysteriously balanced hint of smoky complexity unique to Santa Fe Spirits.
