BIRD CREEK WHISKEY

Our story began with a thirst for adventure. We needed to capture the thrill of being out in our incredible environment and cross it with the integrity of our carefully selected ingredients. We wanted to explore what the great Northwest could offer in terms of flavor since it had so much to offer in terms of fun.

Today, we have five barleys from across the upper left, that range from rare to heritage, that include a plethora of beautiful tasting notes. The landscapes where these barleys grow are second to none. Take a trip out to the rolling vistas in the Palouse hills to visit Baronesse or head down to the sprawling valley floors on the west side of the Wallowas to see the waving fields of Francin.

Wherever our whiskey tasting takes you, it's sure to be an adventure.

Tasting Notes

Nose: A rich, dense and polished nose with aromas of toasted hazelnut, caramelized sugar, vanilla poundcake, mocha and dates.

Palate: Sweet and enveloping with toasted nuts, dried fruit, and vanilla accented with bright overtones of oranges and dried lemon peel. A long finish lingers on the gentle flavors of chocolate and cinnamon.

This complex AOC Calvados is drawn from one, unique distillation batch from the year 2000 that was aged in oak casks formerly used for Hungarian Tokai wine. 750 ML bottles. In individual gift boxes. 40% alc/vol.

Savor the aromas of flowers and honey. Taste the confectionary notes with orange spices.  The mouth is rich, well-structured, and round.

The oldest Calvados deserve the greatest respect: Choose a liqueur glass such as a tulip glass or small brandy snifter and pour your Marquis de Saint-Loup Calvados with care.  Warm it tenderly in the hollow of your hand.  Run the amber liquid slowly round the glass (held by the base) and admire its color and the patterns it traces on the sides of the glass. Calvados needs to breathe to develop its full qualities.  Wait for at least two minutes before bringing the glass up to your nose, finding the distance at which you can distinguish and absorb the subtle aromas. Then, take a few drops in your mouth before swallowing.  Now you are ready to truly savor your Calvados, sip by sip.  Take your time, and you will note a surprising development in flavor and taste. If you do not indulge too freely, your Calvados will leave a delicate fragrance on your palate.

Rye Batch 003 is a blend of rye whiskeys from Indiana, Poland, Tennessee and Canada, all with distinct personalities and varying ages. We started with Tennessee Rye barrels with caramel and dried fruit notes and added the Polish Rye for its nuttiness and mouthfeel. We then carefully layered in 13-year Canadian Rye to bring out earthy notes of grass, spearmint and apple. The Indiana Rye was the finishing touch to highlight the candied fruit and spiciness you expect from a rye.

FLAVOR NOTES

Appearance: A clear auburn with fiery orange highlights.

​Nose: Sweet and earthy, like Indian pudding, halva, and shortbread. That theme is carried forward by corn sprouts, clay pots, honey, almonds, brown sugar and graphite weaving in and out. This is buoyed by bright and acidic kiwi, gooseberry, lemon curd and black cherry clafouti.

​Palate: The high proof is tempered by rich peanut  butter and a moderate sweetness that carries forward notes of molasses, coconut milk, and sweetened green tea. The relatively modest amount of tannin belies the oaky-driven flavors of pine resin, juniper berry, ginger and leather.

​Finish: Holds the earthy theme, beginning with gentian, chewed cigar and mesquite smoke. As it grows gentler, some sweet cream and coconut take over and leave a lingering salty note.

Folklore and fact intermingle to create the history of the praline candy, a southern favorite for generations. This classic confectionery treat is buttery, nutty, and sweet all at once, and we’ve managed to bottle it up with our Pecan Praline Bird Dog Whiskey. The unmistakable flavor of toasted pecans covered in a silky smooth candy coating complemented by the essence of vanilla and oak aging barrels of real Kentucky bourbon. Try it in our Praline Pointer, and you’ll feel like you’re walking to the streets of New Orleans

TASTING NOTES

Named after the New Orleans bartender who first used rye whiskey in the Sazerac Cocktail, this uncut and unfiltered Straight Rye Whiskey is bottled directly from the barrel, just as it was over a century ago. Full of rich flavors, this authentic American rye whiskey is a symbol of the timeless history of New Orleans and the legacy of Thomas H. Handy.

TASTING NOTES

Powerful, lush, and boldly spicy. Flavors of toffee, fig cake, and candied fruit, followed by mint, cinnamon and clove. The finish ultimately reveals subtle notes of allspice, coconut and nutmeg. Long and warm.

The barrels chosen for this small batch have been though a rigorous selection process and match the depth and flavor profile needed to craft this highly rated bourbon.

Detailed Description

Bottled from hand selected barrels, Calumet has a customary mash bill of corn, rye and malted barley that offers a sweet, flawless finish. Glowing with butterscotch and soft oak, Calumet's harmonious perfection of wood and caramel is admirably balanced with complex flavors of light brown sugar and soft white pepper.

Tasting Notes

Nose: Vanilla with aged oak and light spice.

Palate: Elaborate layers of caramel, spice and smoky wood.

Finish: Deep, satisfying and engaging.

Pierde Almas La Puritita Verda is made from agave Espadin, which takes 8 to 10 years to mature. This Mezcal is crafted in San Juan del Rio by maestro mezcalero Rodolfo Hernandez. It has a savory smoke flavor with earthy undertones. It could be sipped neat, but is most commonly used as a mixer for cocktails.

Behind each bottle of Pierde Almas is a time-honored recipe kept alive with painstaking care by the family patriarch in each successive generation. Their labels are hand-printed on 100% acid-free, handmade paper derived from fibers that are indigenous to the region and have been in use since pre-Columbian times. With their Wild Agave Reforestation Program, they are actively engaged in the re-forestation of wild species of Agave in those areas where their populations have been depleted. Pierde Almas begins each rainy season by inviting bartenders, chefs, restaurateurs, and journalists to join them for their annual wild Tobal planting. Due to the artisanal nature of their mezcal, the ABV of each lot may vary slightly.

In May 2018, British multinational alcoholic beverages company Diageo purchased Pierde Almas Mezcal.

Inspired by a family recipe from 1862, BACARDÍ Reserva Ocho is known as The Family Reserve.TASTING NOTES

BACARDÍ Reserva Ocho is a complex golden rum with a deep, layered and mellow flavor of dried fruits, spices and oaky vanilla.

In the latter containers, the batches incorporate our OAK BILL: new French oak, ex-bourbon barrel, and a blend of sherry cask staves. An authentic 100% Blue Weber Agave tequila made in the Traditional Method. Produced with fully mature 7-10 year agave from 50% Highlands and 50% Lowlands of Jalisco, slow-roasted in brick ovens, slow-fermented, never diffused, roller press extraction, double distilled, Bourbon Barrel Aged 18 months, and additive free.

Tasting Notes

Aroma: Its roasted-pineapple opening aroma; more time in the glass allows a peppery almost viscus, floral perfume to develop. Nice aromas of toasted oak and vanilla bean also emerge.

Palate: palate entry shows roasted peppers, orange blossom, and tropical fruit. Then the mid-palate showcases luscious flavors of chocolate, orange, and sugar cookies.

Finish: Aftertaste is naturally sweet, sugary and long. A ton of chocolate, caramel, and dulce de leche flavors are very notable. This is the choice of the most sophisticated consumers searching for the full-body obtained from the more dominant wooden essence.

El Profesor stands tall being the only Rose Gold gradient-metalized tequila bottle on the market. Contemporary interpretations of the “Coa” are found on the back of the bottle.
