Diplomtico is an independent and family-owned brand that is focused on producing rum of the finest quality. Founded in 1959, their distillery is situated by the Andes Mountains in Venezuela with access to pure water and close to sugar processing plants. Their line features a range of award-winning and highly-regarded column, batch kettle, and pot still rums. They are involved with the community and employ sustainable production practices. Named Diplomtico in honor of the statesman who brought order and balance to a restless era in Venezuela during the 19th century, the 18th-century distiller Don Juancho Nieto Melndez also known as El Ambassador these rums are the exquisite product of Venezuela's warm, tropical climate. The sunny days, cool nights, constant breeze, and abundant rainfall create an idyllic environment for growing and cultivating juicy, fresh sugarcane. The sugarcane is harvested, fermented, and distilled into rum, before being aged in a range of bourbon, port, and sherry casks. They are then masterfully blending by the hands of Tito Cordero, Diplomtico's maestro ronero. The N2 Barbet Rum expression is a part of The Distillery Collection, a threesome of special edition rums, each distilled a different way. This one was distilled using a French continuous Barbet column still the La Miel distillery got in 1959. Made from sugar cane molasses and matured for 4 years in ex-bourbon and whisky American white oak barrels, it's a well-balanced, tropical, fruity, and oaky spirit.

Winemaker Notes

Crafted from our finest blocks and barrels of Estate fruit, the 2018 vintage of The Discussion is rich, radiant and profoundly complex. As it evolves in the glass, enticing aromas of black cherry, red currant and rose petals mingle with sophisticated hints of hazelnut, clove, caramel and fig preserves. On the plush, silky palate, juicy layers of plum, tayberry and chocolate-covered blueberries are framed by elegantly structured tannins, with notes of red licorice, mint, maple and sage adding drama and complexity to a long, dynamic finish.

Production

For both red and white grapes, 2018 offered near picture-perfect growing conditions, with mild spring and summer weather, and no significant heat events. The conditions were ideal for both our Semillon and Sauvignon Blanc, which show beautiful tropical notes and ripe flavors at low sugars. While our Chardonnay harvest began about three weeks later than normal, the fruit arrived at the winery in pristine condition, producing dynamic and complex wines. The excellent growing conditions naturally resulted in a slightly larger than average crop for our red Bordeaux varieties, with fully lignified seeds at low sugars levels. With temperate weather throughout fall, we were able to pick each block at optimal ripeness, yielding exceptionally juicy and polished red wines, with plush, well-rounded tannins, and lovely overall structure.

In the cellar, we applied classic techniques of French oak barrel fermentation with lees stirring, resulting in a Chardonnay that balances the complexity and richness of Napa Valley.

Winemaker Notes

This tantalizing Chardonnay begins with alluring aromas of lemon cream, orange blossom, Key lime and candied pineapple. On the palate, a lush, silky mouthfeel and energetic acidity frame lively orchard-fruit flavors of pear and white peach, with hints of brioche emerging on the long, focused finish.

Production

Despite an unusually dry winter and warm spring, budbreak was delayed due to light rain in March. The overall lack of rainfall led to light clusters and small berries, which resulted in reduced yields and great concentration. Harvest began on August 5th with Semillon, and early heat generated a fast and furious first few weeks of picking. A much-needed mid-September cool-down allowed for sugars to realign with flavor development. Moderate temperatures continued throughout the rest of the season, providing additional hangtime for the grapes. Our last red grapes were harvested before the rains in late October, resulting in beautiful wines that are dense, pure and polished.

Situated in a former microbrewery on a west London street in England, Sipsmith Independent Spirits Distillery is home to London's first new gin in nearly two centuries. The distillery was founded by a triumvirate Sam Galsworthy (who previously worked at a microbrewery), Fairfax Hall (a former Diageo representative) and Jared Brown (a master distiller who has crafted new spirits in Vietnam, Norway, Sweden and the United States) with the goal of producing a traditional yet authentic craft gin. Sipsmith London Dry Gin is crafted using ten carefully selected botanicals, including Macedonian juniper berries, Bulgarian coriander seed, French angelica root, Spanish liquorice root, Italian orris root, Spanish ground almond, Chinese cassia bark, Madagascan cinnamon, Sevillian orange peel and Spanish lemon peel. "The best botanicals make the best gin no way around it," says Brown, who has been distilling spirits for over a dozen years. Once the botanicals arrive at the distillery, they are distilled through a copper-pot still named Prudence (Prudence is able to produce approximately 280 bottles of gin each day). "Prudence is the first copper still installed in London in nearly 200 years. We designed her with Germany's oldest distillery producers, Christian Carl a small, family business that has been crafting stills since 1869. She is the only one like this in the world." The still is designed with a bespoke pot, column still and carter head, which makes it incredibly versatile. After the botanicals have been distilled through Prudence, the gin is brought to proof with water sourced from the Lydwell Spring before being bottled by hand. Sipsmith London Dry Gin V.J.O.P is a desire by Sipsmith to create the ultimate gin for juniper lovers. This powerful overproof spirit is an amplified take on their London Dry, using triple the amount of juniper berries, and crafted by macerating the juniper berries in warm spirit overnight to burst the skins and release the essential oils. Juniper is the lead instrument in this botanical orchestra, enhanced by the increase in proof which is necessary when increasing the flavor profile in a gin. At 57.7% ABV, this juniper-forward gin uses triple the amount of juniper berries to their London Dry Gin.
