When everything is hurtling along around us, we hold true to practices honed over centuries. our unique distillation process has evolved little by little in pursuit of perfection over the best part of two centuries
Nothing is precious as time
we believe nothing is as precious as time. its passing can be measured, but its value cannot. so, we'll keep moving at our own pace, to create extraordinary whisky, creating impressions that stand the test of time.
Hidden beginnings
Taking advantage of a secret waterfall, generations of the Connell family made illicit spirits in the wooded hills behind where our distillery stands today. our legal status may have changed but we still use water from the same hills today, connecting us to our origins like a river to its source.
Glen of the geese
Every winter, the hill behind our distillery becomes a beacon for migrating flocks of geese, which is why our home on the highland border is known as the glen of the geese or, in gaelic, glen guin. but our guests have inspired more than just our whisky's name. in a world that seems to spin faster every day, we're proud to be the slowest whisky distiller in scotland.
The right way is the long way
And while our methods might appear meandering, they are anything but. like those geese, we're guided by an unwavering clarity of purpose and the knowledge that sometimes the right way is a long way.
Our unique process
In the stillness of our quiet glen, we know that patience is rewarded. nothing is rushed and every stage of our whisky-making process is given as long as it needs. uniquely-shaped stills nurse the simmering wash during the longest distillation of any Scottish whisky, prolonged contact with the copper coaxing sweet and fruity notes from the gently rolling vapors. that's why our barley is only ever dried by air, allowing the true Glengoyne spirit to shine through.
Our precious casks
From here the precious spirit is transferred to casks made to order from European and American oak, themselves prepared for six years before they're ready to carry our whisky to maturity. the natural color of the whisky is a testament to decades within the wood alone. nothing else is added, this is how we craft a whisky unlike any other. this is the Glengoyne way
Glengoyne 12 Year Old
Lemon zest, toffee apples – and a scent of coconut. Hand-selected sherry casks help create this paradise of flavors and rich, golden color. It’s the taste of Scotland’s slowest distillation, and our insistence on barley dried by air – never peat
TASTING NOTE
APPEARANCE: Natural, rich gold
NOSE: Coconut oil, honey, lemon zest, dried oak
PALATE: Toffee apples, cinnamon spice, ginger, orange, shortbread
FINISH: A hint of sherry and soft oak. Very well balanced
