Introducing the fifth chapter of the Midleton Very Rare Dair Ghaelach series—Midleton Very Rare Dair Ghaelach Kilranelagh Wood. Once again, the rarity of Midleton Very Rare meets the luxury of Irish oak to bring you an exceptional offering from the pinnacle of Irish whiskey.  

This release takes us to Kilranelagh Estate near Baltinglass, County Wicklow. Situated amid rolling hills and picturesque features, the native Irish woodland on the estate has been managed carefully and in tune with nature by one family, the Westerholt for many years. When their great Irish oak had reached the end of their life cycle and were ready to be felled so the new oak could grow in their place, they knew they wanted their legacy to live on—and Midleton Very Rare Master Distiller Kevin O’Gorman knew that he had the perfect whiskey which would bring new life to these relics of a time gone by through finishing in this Irish oak.

Tasting Notes

Nose: Forest notes of fresh pine accompanied by floral honey and ground pepper at first, while sweet and tropical fruits can be detected amongst the herbal green tea and freshly mown hay. The use of the native Irish oak lends itself to creating distinctive aromas of smoked almonds with sweet vanilla and cinnamon that are complimented by the pot still savoury spices.

Taste: Robust and lively at first with notes of dried chilli flakes and red bell peppers which quickly soften, allowing notes of candied orange and crisp red apple to shine through. The oak continues to deliver sweet vanilla and cinnamon spice throughout, while the pot still spices add a hearty and full-bodied nature to this complex and intricate whiskey.

Finish: Wonderfully long finish which sees the pot still spices and oak linger, almost effortlessly, for an age.

Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskies, vodkas and even an aging balsamic vinegar (it's 14 years old already). St. George makes their Dry Rye Gin in the same 1,500-liter copper pot still that they use to make their Terroir and Botanivore Gins. These Gins each have intricate botanicals bills designed to create a layered olfactory experience. St. George's also makes a limited-release, barrel-aged version they call Dry Rye Reposado Gin. Rested in French and American oak wine casks, it has a lovely pink hue and a deep, rich flavor. For their Dry Rye Gin they chose only six botanical ingredients: juniper berries steal the shown this expression, having 50% more than any of their gins. The botanicals are complemented by black peppercorn, caraway, coriander, grapefruit peel, lime peelwhich were all designed to play up the juniper's peppery nature. A base of 100% pot-distilled rye makes for a very unconventional gin, but a unique option for whiskey lovers. This gin has structure, spice, and an impeccably rich mouthfeel. Warm and spicy, it has a natural affinity with bitters, citrus, stone fruit, and ginger (St. George's).

Every drop of bourbon in a Baker’s bottle comes from one single barrel. And once those bottles are gone, they’re gone. Which means you’ll discover layers of unique, subtle nuances in every bottle you pick up. That’s what makes Baker’s so special.

WHERE IT’S AGED MAKES ALL THE DIFFERENCE
One thing that makes Baker’s unique is there’s not one particular location where it ages. With four campuses, a lot of differences can occur inside each barrel. For example, airflow, location of the rickhouse and dump date all play a part. Each barrel is tested. Only those that meet the highest quality standards are bottled.
Baker has always believed the ideal bourbon is made according to three fundamental rules: First, it’s aged at least seven years because that’s the sweet spot for getting big vanilla notes from the charred oak barrel. Second, a great bourbon carries substantial flavor. And third, when he tries it, he better like it. These rules might seem simple, but they make for one hell of a bourbon.

TASTING NOTES
The beauty of single barrel bourbons lies in the intensities and flavors that change with each barrel. So, one bottle might be smokey, while another might be more floral or peppery. While every barrel of Baker’s offers a unique tasting journey, you can expect some defining characteristics. Here are a few.

Nose: Fruit, vanilla and caramel.

Palate: Medium bodied with flavors of oak, toasted nuts and vanilla.

Finish: Robust flavors sit on the tongue for a while, warm and rounded.
