You'd be hard-pressed to find a more iconic name in the Irish whiskey world than "Jameson." The Jameson tradition dates all the way back to 1740, when John Jameson was born into a family whose motto, "Sine Metu" ("Without Fear"), was earned through the family's courage in fighting pirates on the high seas during the 1500s. John Jameson himself was a living embodiment of Sine Metu, and his ancestors' bravery inspired in John a boldness that led him not only to open his own distillery in the latter 18th century but also to pioneer the technique of triple-distilling whiskey now the gold standard in the Irish whiskey industry. John Jameson lived to be 83 an impressive feat for someone born in the 18th century and his descendants John II, John III, and John IV all honored his legacy by leading the distillery well into the 20th century. Jameson Irish Whiskey is crafted from a mash of malted and unmalted barley that is triple-distilled just as it was by John Jameson himself centuries ago through three separate copper-pot stills: a wash still, a feint still and, finally, a spirit still. The mash itself is made using barley, maize and pure Irish water, further adding to the unique character of the whiskey. Jameson Bow Street 18 Years is a special blend of rare pot still and grain Irish whiskeys produced at the Midleton distillery. After maturing for almost two decades, these whiskeys are married together, before being finished at the Jameson Distillery Bow Street in Dublin. Launched in 2018, this whiskey is Jameson's rarest release and is bottled once per year, at cask strength.

AT COPPER FOX, WE HAVE A PARTICULAR PASSION FOR WHISKY.

The revelation of a distinct and wonderful whisky that uses fruitwood peat came to me as I visited many American distilleries with the dream of opening my own. By spring of 2000, I made the journey to Scotland, home of more than 130 distilleries and arguably the best whisky in the world. I came away with new knowledge — and great appreciation of the necessary skill, a reinforced determination, and an offer to intern at Bowmore Distillery on Islay, one of the few distilleries in the world that still malts their own barley. Three years later, Copper Fox Whisky was launched into the marketplace as the first applewood-aged whisky in the world. Our distillery in Sperryville opened in January of 2005, and with it, the first US distillery malt floor and kiln since the repeal of Prohibition.

All of our grains are grown locally by one farmer, and our 6-row Thoroughbred barley was developed for us at Virginia Tech. We floor malt the barley in the traditional style, which allows us to develop and maintain a connection to the grain throughout our entire production process.

Our innovation begins in the kiln, where instead of peat, we use local fruitwoods to gently smoke and dry the grain.

Copper Fox is the only distillery on the planet to mature their whisky with toasted applewood. This process further develops and enhances the flavor of the smoky malt, resulting in a complex and singular flavor experience. 

All of our products are non-chill filtered, allowing the natural oils to deliver to you the rich, full flavor of our grain.

We believe the result is something distinctive, original, and unlike anything else you've tasted.

Our continuing quest to bring new flavors to the whisky world led us to the delicate complexities of peachwood. Both as a smoking medium during the kiln drying process and as a maturing catalyst inside our barrels, peachwood contributes a symphony of fruity, floral notes to our signature single malt.

James E. Pepper 1776 100 Proof Straight Bourbon Whiskey

Elijah Pepper began distilling whiskey at the dawn of the American Revolution and during the War of 1812, he built the first log cabin distillery in Versailles, Kentucky. Eventually, he passed the family business on to his son, Oscar, and then on to his grandson, James E. Pepper. Colonel James E. Pepper was one of Kentucky's first Bourbon aristocrats he raced thoroughbreds in the Kentucky Derby, traveled in a private rail car and made famous the Old Fashioned cocktail. "Pepper Whisky is an old fashioned whisky, made in the old time way from a formula used for more than 100 years by three generations of the Pepper family," wrote James, in an advertisement dated August 22, 1887. "We claim not only to make the oldest but absolutely the purest and best brand of whisky made in America, and we invite comparison with any whisky of any age." In 1958, after the whiskey industry fell on hard times, the James E. Pepper Distillery was forced to close its doors. During its tenure, Pepper Whiskey, or "Old 1776 Whiskey" as it became it known, was a favorite of Presidents Andrew Jackson and Ulysses S. Grant, and was preferred by Daniel Webster, a leading American statesman and senator from Massachusetts. "Before re-launching this iconic brand," says Amir Peay, "we did extensive research and spent years collecting and analyzing full, preserved bottles of original Pepper Whiskey." Peay even acquired a letter written by Pepper himself, detailing the exact mashbill and recipe used to create Old 1776. "We wanted to pay homage to Pepper's legacy and do our best to recreate the original Pepper Whiskey something that was part of American history," he says. James E. Pepper 1776 Straight Bourbon Whiskey is made from a mash of approximately 62% corn and malted barley, and 38% rye. After distillation, the bourbon is aged for a minimum of four years in new, American oak casks. As a result, it has slightly sweet hints of vanilla, toffee and caramel, that subtly compliment notes of baking spices, spicy rye and oak. James E. Pepper 1776 Bourbon Whiskey earned Double Gold Medal at the San Francisco World Spirits Competition in 2013. "We used the same traditional methods that Pepper championed in order to restore these whiskies," says Peay.

Larceny Very Special Small Batch Kentucky Straight Bourbon Whiskey

According to the legend, John E. Fitzgerald founded a distillery along the banks of the Kentucky River shortly after the Civil War ended. Fitzgerald began distilling bourbon and selling it to passengers aboard the trains and steamships that passed through town. Shortly thereafter, Fitzgerald sold his brand "Old Fitzgerald Bourbon" to Julian P. "Pappy" Van Winkle for $10,000, a small fortune at the time. Pappy moved production of Old Fitz to his distillery, where it became one of the most famous bourbons in the world. But if you ask Sally Van Winkle (Pappy's granddaughter), the story of John E. Fitzgerald and Old Fitz Bourbon is slightly more complicated and certainly more interesting. In 1999, Van Winkle revealed that Fitzgerald was not the man nor the distiller he claimed to be he was, in fact, a bonded treasury agent. At the time, the Treasury Department was tasked with collecting taxes levied on spirits and as such, bonded treasury agents were the only people legally allowed to carry the keys to barrel storage warehouses. Fitzgerald did have a discerning palate for fine bourbon and would use his warehouse keys to pilfer the best barrels of bourbon as they aged. The barrels, which became known as "Fitzgerald barrels," and the brand were immortalized when Pappy Van Winkle named Old Fitzgerald bourbon after the treasury agent, and added a "Whisper of Wheat "to his bourbon's recipe. By using wheat rather than rye as the secondary grain in the bourbon's mash bill, Pappy imparted a rounder, softer flavor profile in Old Fitz as compared to other bourbons at the time. Larceny Kentucky Straight Bourbon pays homage to both John E. Fitzgerald's superb taste and the legacy of the Old Fitzgerald brand. Made from a mash of corn, wheat, malted barley and rye, Larceny Bourbon carries on the tradition of Old Fitz by using wheat as the bourbon's secondary grain rather than rye. As a result, Larceny Bourbon has a sweeter, softer flavor profile as compared to bourbons that use rye as their secondary grain. After the grains are milled, they are cooked in Kentucky limestone water and fermented using a proprietary strain of yeast. Following fermentation, the mash is distilled through 70-foot tall column stills and the resulting bourbon is aged in honey barrels for six to twelve years. After aging, the casks are blended and brought to 92 proof before being bottled. The resulting bourbon has notes of sweet corn, honey, vanilla and light cinnamon, along with a hint of oak and rye that provides for a subtle edge. Larceny Bourbon earned a score of 93 points at the Ultimate Spirits Challenge in 2013, and a score of 93 points from Wine Enthusiast. In addition, it was named one of the top 20 spirits in the world by F. Paul Pacult's Spirit Journal and named a "Best Buy" by Whisky Magazine. Quite simply, Larceny Kentucky Straight Bourbon is a steal.
