Wilderness Trail Distillery fans who have been enjoying side-by-side comparisons of its yellow label wheated Bourbon and its black label small batch rye Bourbon may now take their analogies to the next level. Look for the silver label with a “6” on the neck tag to indicate that it’s Wilderness Trail 6-year wheated Bourbon or 6-year rye Bourbon. Our Visitors Center is one place to find the bottled in bond goodness of the 6-year small batch rye Bourbon. However, the Visitors Center has sold out of the 6-year wheated Bourbon. Bottles are $69.

The other releases by the Danville distillery, owned by Shane Baker and Dr. Pat Heist, have been four- and five-year-old, bottled in bond Bourbons and a cask strength rye whiskey of similar age expressions.

Everyone wants to know a little bit about how the 6-year-old tastes. Well, your tasting notes would be different from your friend’s and so forth. Let’s just say that the extra two years in the barrel has elevated an already remarkable Bourbon to an even higher level.

Old Carter is the passion project of “flavor chaser” partners Mark Carter and Sherri Carter, whose beverage industry roots trace back to award-winning careers in the California wine business. After resurrecting the long-dormant bourbon brand Kentucky Owl in 2011, the two were irreversibly hooked on the art of whiskey making and blending. Kentucky Owl sold unexpectedly in 2017, but by then Sherri & Mark were so enamored with the vibrant spirit of Kentucky’s whiskey community, they made a commitment to carry on their love affair with whiskey by making a statement of their own, right in the Bluegrass. And Old Carter Whiskey Co was born.

The Night Sweats Straight Bourbon was created in partnership with the band to benefit The Marigold Project, Nathaniel Rateliff’s nonprofit that supports community and nonprofit organizations working on issues of economic, racial and social justice.

In fact, $10 of every bottle sold goes to The Marigold Project (TMP).

This partnership all began in 2021 with a cocktail, The Marigold Sour. Our version of the classic Whiskey Sour features a tincture infused with marigold petals and a house-made marigold syrup. Using the cocktail to help raise funds for TMP lead us to a discussion about new ways to collaborate and promote TMP’s mission. Now here we are, with two batches of The Night Sweats Straight Bourbon under our belts and thousands donated!

TASTING NOTES
The earthy sweetness of the millet (a small kernel ancient grain) does the balancing act in this Bourbon. The peppery red corn and sweet tortilla blue corn notes give it that traditional bourbon sweetness. It’s a big whiskey that sips neat but isn’t scared of an ice cube either. Dark caramel and brown sugar compliment the grain notes that remain prominent in this spirit.

Midleton Dair Ghaelach, which means quite simply, Irish oak, is the result of a six-year exploration by the Midleton Masters into using native oak to mature Irish whiskey.

Led by then Master of Maturation, Kevin O’Gorman, the two prerequisites for the project were to source Irish oak in a sustainable way, viable for the long-term, and to craft a new and outstanding style of Single Pot Still Irish Whiskey.

This whiskey is a range of releases that have been matured in barrels made from virgin Irish oak from particular forests across Ireland. The oak selected for each release influences this special whiskey with the true and unique flavour of Ireland.

Its provenance told in each sublime sip, this is the tale of our native oak striking harmony with the classically rich and spicy Single Pot Still Irish Whiskey character. This is a whiskey like no other.

THE TASTE OF A PRISTINE LAND

Smogóry Forest is crafted with rare Diamond Dankowskie rye from a single estate located in Smogóry, a tiny village in rural Western Poland surrounded by the region’s vast, pristine forests. This exceptionally bold, robust and savory vodka captures the essence of its unspoiled region, recalling the dense hardwood forests dominating the terroir.

The Single Estate Rye Series celebrates Belvedere’s craftsmanship and expertise in vodka distilling, as well as our ability to produce vodkas of complex character. When tasted side by side, the two vodkas deliver demonstrably different taste profiles, illustrating the variation of terroir on the same Dankowskie Diamond rye grown in each unique location.

TASTING NOTES

Nose: Intense aromas of sea air, toasted rye bread and caramel.

Palate: Rich and mellow with initial impressions of salted caramel, cereal and a touch of honey. Persistent with delicate notes of toasted bread, white pepper and fudge. Mouthfeel is rich, well rounded and luscious.

Finish: Long and salty/sweet. Notes of baked bread, sea salt and caramel.

Tullamore, in Ireland's Midlands, was once ruled by Clan O'Molloy. On May 10, 1785, a hot air balloon crash ignited a fire, leading to the world's first aviation disaster. The city adopted a phoenix as its coat of arms, symbolizing resilience. Tullamore DEW Distillery, founded 50 years later at the crash site, uses malted barley, unmalted barley, and corn to craft its whiskey. The grains are milled, mashed, and fermented in wooden washbacks. Triple distillation in copper-pot stills intensifies the alcohol content and flavors. Tullamore DEW 18 Year Old Single Malt Irish Whiskey matures in Madeira, Oloroso, and Port casks, offering an aroma of malt, oak, apples, and tobacco, with a palate of tropical fruit, vanilla, butter, and a long sherry finish.

The latest permanent release from Basil Hayden consists of an entirely new brown rice mashbill and a secondary finish in toasted barrels. The result is a bourbon with less spice, and deepened notes of sweet caramel with a bright, light mouthfeel.

Stellum Black Bourbon is the next step in Stellum Bourbon’s evolution. By incorporating reserve barrels from our stocks with the original Stellum Bourbon blend, we created a bourbon that delivers robust flavor alongside profound complexity. Yellowstone National Park was established in 1876, and just a few short years later, the Yellowstone Kentucky Straight Bourbon Whiskey brand would emerge with an equally-rich story. J.B. Dant, legendary distiller and son of J.W. Dant, first began distilling in the late 1800s, using a "log still" instead of the more popular yet more expensive copper pot stills (a log still is made by hollowing out a tree trunk and lining the interior with copper pipes, a cheaper yet still effective way of distilling). As Dant's Yellowstone brand gained popularity in Kentucky, he was able to purchase other nearby distilleries and formalize his process. In the early 1900s, it was through this expansion that Dant began working more closely with M.C. Beam of the illustrious Beam family. Together, Dant and Beam operated their network of facilities as the Yellowstone Distillery and continued to produce Yellowstone Kentucky Straight Bourbon Whiskey for "medicinal purposes" throughout Prohibition. Although the Yellowstone brand changed hands several times throughout the 20th century (first to Diageo and recently to Luxco) and eventually fell out of favor, Luxco, along with the Beam family's new Limestone Branch Distillery, has recently revitalized the brand, unearthing an old Beam family recipe and partnering with Paul and Steve Beam to create a spectacular bourbon that pays homage to the original. The annual Limited Edition series of straight bourbons from Yellowstone has been around since 2015. The blended bourbons are on the experimental side, having been aged in (sometimes re-charred, even multiple times) wine casks, resulting in unique expressions. The 2022 edition is a 7-year-old small-batch affair that was finished in French armagnac casks, imparting the bold, oaky, and sweet bourbon with toffee, butterscotch, and chocolate notes.
