Famille Paquet is a 30 hectare property located in the village of Davayé, in the Mâconnais. First created in 1980 by Jocelyne and Michel Paquet under the name Domaine des Valanges, it is now run by their three sons Jean-Baptiste, Mathieu and Camille. The Paquets take great care of their vineyards, using organic and biodynamic compost and manage each of their 50 plots individually. The property is currently in conversion to organic viticulture and will be fully certified in 2021.

Pouilly Fuisse is a remarkable wine crafted by the Paquet family, who have devoted their passion and expertise to producing exceptional Burgundy wines for decades. A CRAFT BEER PIONEER SETS HIS SIGHTS ON SPIRITS

The original Anchor Distilling Company was established in 1993 by Fritz Maytag, the same beverage visionary who sparked the craft beer movement with his purchase of Anchor Brewing in 1965. Maytag had rescued the struggling brewery and its iconic steam beer, and after several decades of exclusively producing beer, Maytag saw an opportunity to expand into the distillation of spirits.

THE RETURN OF POT-DISTILLED WHISKEY TO THE UNITED STATES
Fritz’s vision of a rye whiskey revival was fueled by the bold realization that there were no pot-distilled whiskeys being made legally in America at the time. Finding inspiration in the rye whiskeys of America’s past and the great single malt whiskeys of Scotland, Fritz gathered a small team to begin top secret research and experimentation in the distillery. The first whiskey went into barrel in 1994, and the distillery soon began producing three rye whiskeys under Fritz’s guidance, all pot-distilled spirit from a mash of 100% malted rye.

PIONEER IN CRAFT WHISKEY

Old Potrero is an attempt to recreate the original whiskey of America, and marks the return of pot-distilled whiskey in the United States. It’s distilled in a small copper pot still at the Hotaling & Co. Distillery on San Francisco’s Potrero Hill from a mash of 100% rye malt, with rye being the grain of choice for America’s first distillers.

MASTER DISTILLER: BRUCE JOSEPH

In 2010, Fritz officially passed the torch to Bruce Joseph, who is now the Master Distiller of Old Potrero. Fritz and Bruce had worked alongside each other since the first barrels were laid down in 1994. The whiskey has been historically distilled in small copper pot stills at the Hotaling & Co. Distillery in San Francisco.

In Bruce's own words: "Old Potrero new packaging and bottle embody the boldness of a city that's resilient, creative and richly historic. Our Straight Rye Whiskey is now aged a minimum of six years to ensure exquisite quality and taste.

OLD POTRERO SINGLE BARREL RESERVE

Aged in extra fine grain American Oak. The wood was air-dried for 24 months and the barrels were fully toasted and then charred by hand over an oak fire. The mash of 100% malted rye was fermented for four days and then double distilled in traditional copper pot whiskey stills.

John Emerald Distilling Company is a family-run small-batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and a single malt. The latter John Emerald Alabama Single Malt Whiskey is at the very core of their lineup and is the only one to share the name with the distillery itself. Then there's Hugh Wesley's Gin, Elizabeth Vodka, Spurgeon's Barrel Aged Rum, and Gene's Spiced Rum. This expression in John Emerald's Purveyor's Series Double Wood is a bourbon whiskey that is aged in new American oak barrels. But there's a twist, the barrels are filled with wood chips. In this case, toasted American white oak chips are used. The unique way of finishing the whiskey ensures that an extraordinary amount of liquid comes into contact with the wood, imparting the nicely-balanced sweet bourbon with an extra layer of oakiness.

For the Willett family, distilling craft whiskey is a family tradition. During Reconstruction, John David Willett the family patriarch began distilling whiskey at the Moore, Willett & Frenke Distillery, which was situated just outside of Louisville, Kentucky. In 1898, his son, A. Lambert Willett who was 15 years old at the time began following in his father's footsteps. Three decades later, Lambert, together with his son, Thompson, purchased a farm on the outskirts of Bardstown, Kentucky, and began construction of the Willett Distilling Company. While the Willett Distilling Company eventually changed its name to Kentucky Bourbon Distillers, the family tradition lives on Even Kulsveen, the current owner of KBD, is Thompson Willett's son-in-law. In keeping with family tradition, Kentucky Vintage Bourbon is an authentic Kentucky straight whiskey. Bottled at a robust 90 proof, the bourbon has a golden chestnut color, along with an aroma of oranges, lemons, clovers and honey. Notes of ginger, caramel apples, roasted nuts and creamy vanilla dominate the palate, and give way to a finish accented by hints of almonds and black pepper. Kentucky Vintage Bourbon won the Double Gold Medal at the San Francisco World Spirits Competition, and earned four stars from F. Paul Pacult's Spirit Journal. With its combination of age, taste and proof making it an unparalleled value, Kentucky Vintage Bourbon is one of the best kept secrets on the whiskey market.
