The Hakushu 12 Year Old Single Malt Whisky

The Hakushu

750 ml | 43% ABV
Whiskey | Japanese

In February 1899, Shinjiro Torii the father of Japanese Whisky opened a general store in Osaka, Japan that traded in imported wines. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. Following the end of World War I, Torri fascinated by whisky his entire life decided to expand his business and began construction of the Yamazaki Distillery, Japan's first-ever whisky distillery. Fifty years after the construction of the Yamazaki Distillery, Keizo Saji inherited his father's vision and began construction of Suntory's second distillery. Although inspired by traditional Scottish distilleries, both Torii and Saji envisioned a uniquely Japanese approach to distilling whisky. As a result, the Hakushu Distillery is situated amidst the deep forests of Mount Kaikomagatake in Japan's southern Alps, and enjoys a unique microclimate as a result of being surrounded by nearly 6,000 varieties of plants and thousand-year-old granite rocks. The Hakushu 12 Year Old Japanese Single Malt Whisky is made exclusively from malted barley, which is milled and mashed with water sourced from the Ojira River and Jingu Rivers (the water has a unique softness and purity, made possible by its filtration through the granite rocks of the Japanese Alps). Once the grains have been mashed, they are fermented by a unique strain of yeast (Hakushu Distillery has thousands of unique strains in its arsenal) in wooden washbacks. Despite the additional cost and labor required, wooden washbacks as compared to stainless steel washbacks take advantage of the distillery's unique location by incorporating naturally occurring lactic acid bacteria and other microorganisms into the wash. Following fermentation, the wash is distilled twice through Hakushu's copper-pot stills before the whisky is laid to rest in the distillery's warehouses. Once the whisky has aged for a minimum of twelve years, it is brought to proof with pure Japanese spring water. As a result of the whisky's slumber in Japan's deep forests, Hakushu 12 Year Old Japanese Single Malt Whisky has an herbal aroma, with hints of apples, pears and almonds. The palate has notes of pears, butter cookies and dark plums that are complemented by a subtle, smoky undertone. The finish is soft and pleasant, with a dry, lingering touch. Hakushu 12 Year Old earned the Gold Medal at the International Wine and Spirits Competition, where it was named "Best in Class." In addition, it earned the Double Gold Medal at the San Francisco World Spirits Competition in 2013, and a score of 92 points from the Beverage Testing Institute.

Sullivans Cove Double Cask Single Malt Whisky

Sullivans Cove

750 ml | 40% ABV
Whiskey | Single Malt

Situated along the banks of the River Derwent on the island of Tasmania, Sullivans Cove was the site of one of Britain's first penal colonies in Australia. In 1804, at the order of the Governor King of the British settlement of New South Wales, Lt. John Bowen transported some of the most heinous British criminals to Sullivans Cove, which eventually developed into the city of Hobart. Hobart was the perfect penal colony the area's dense forests required a huge labor force in order to establish a settlement, and its isolation and inaccessibility ensured there was no escape. Today, the island of Tasmania remains of one the most isolated and natural places on earth approximately 37% of the island is protected as natural reserves. Sullivans Cove Single Malt Tasmanian Whisky is made from barley grown exclusively on the island of Tasmania. "The island's deep red basalt soil, pure water and mild temperatures result in a barley that is perfect for distillation," says Patrick Maguire, the distillery's founder and master distiller (his ancestors were convicts that were imprisoned on the island). In addition, the island has one of the oldest and strictest quarantine programs in the world, ensuring that the barley remains untainted. Once the barley has been harvested, it is malted at the Cascade Brewery by Roger Ibbott, who has over four decades of experience malting barley. The malted barley is then mashed and fermented at Sullivans Cove Distillery using a unique strain of yeast developed specifically for the production of Sullivans Cove Whisky. Then, the wash is twice-distilled through a handmade copper-pot still. "The real trick is to cut the run short, so that only the sweetest, best flavors and purest alcohol from the heart of the run is captured", says Macguire. "It's not the most sensible approach by an accountant's standards, but then it's a good thing that we are not accountants!" Following distillation, Sullivan's Cove Double Cask Single Malt Whisky is matured in a combination of American oak casks that were previously used to mature Jim Beam (two-thirds) and thirty-year old French oak casks that were previously used to mature port (one-third). After maturing for eleven years in each cask, the whiskies are married together, brought to proof and then bottled. Sullivan's Cove Double Cask Single Malt Whisky has an aroma of soft spices and vanilla, which lead to notes of cloves, rock candy and pear. The well-rounded and smooth finish has a touch of oak and milk chocolate. The whisky earned the Gold Medal at the World Whisky Masters in 2011.

Colonel E.H. Taylor Jr. Single Barrel Bourbon Whiskey

Colonel EH Taylor

750 ml | 50% ABV
Whiskey | Bourbon

Colonel Edmund Haynes Taylor, Jr. is widely considered one of the founding fathers of the bourbon industry, fighting for the Bottled-in-Bond Act of 1897, nearly three decades after he purchased what is now called Buffalo Trace Distillery. During his time, Taylor implemented several innovative methods still used today, including climate controlled aging warehouses. Many of the barrels selected for the E.H. Taylor, Jr. Single Barrel are aged in Warehouse C, which was built by Taylor in 1881 and proven to be an excellent aging warehouse. Each barrel is hand-picked and Bottled in Bond at 100 proof to honor its namesake.

Barrel pick may vary, the available pick will be shipped

TASTING NOTES

The aroma carries lightly toasted oak, with dried figs and butterscotch. One sip brings flavors of sweetness balanced with tobacco and dark spices. The finish is just long enough to prepare the palate for another sip. The bottle itself is a likeness to Colonel Taylor's original design used over a century ago.

Whiskey | American

Order Beyonce’s Sir Davis Whiskey Online at Royal Batch! As a premier online store, we’re thrilled to include Queen B’s Sir Davis Whiskey in our collection. Beyoncé Knowles-Carter, a global superstar, collaborated with Moët Hennessy (a significant player in the spirits and wine industry) to craft Sir Davis Whiskey. Considering the influence of Beyonce, Moët Hennessy assigned highly esteemed Master Distiller Dr Bill Lumsden to lead the whiskey-making process. Beyonce’s decision to enter the whiskey world is related to her deep affection and love towards her grandfather. During the prohibition period in the 1920s, David Hogue (Beyonce’s paternal great-grandfather) was a moonshiner. To pay tribute to her late grandfather, the pop superstar unveiled a whiskey named after him (Sir Davis).

Sir Davis Whiskey Review: Beyonce’s whiskey combines the rich complexity of rye with the refined elegance of malted barley, culminating in a finish perfected in Pedro Ximénez sherry casks. The result is a harmonious blend of spice and delicate fruit notes. Beyonce’s whiskey invites you to reimagine the possibilities of the craft—unlike anything you’ve encountered before. So, don’t think much! Order the genuine-quality Sir Davis Whiskey online at Royal Batch today!
