Over the past several years, Barrell Dovetail has become a well-known expression within our portfolio of products and the Whiskey world. Recently, we became intrigued with applying the concept of "Dovetail" to some of our older stocks.

The result is BCS Gray Label Dovetail, which still boasts our award-winning blend of Whiskey finished in rum, port and Dunn Vineyards Cabernet Barrels and uses the same finishing and blending method. The difference however, as with all our Gray Label offerings, is that we used older and more rare barrels.

The result harmoniously unites a dark and fruity California cabernet finish, a jammy and pleasurable port finish, and a sweet and funky rum finish to create a well-balanced, iconic whiskey. The component whiskeys are aged up to 20 years, making the final blend significantly more elegant.

TASTING NOTES

Appearance: Warm Amber.

​Nose: Green grape, tart apple, and pollen lead into one very vivid note of just-pressed cider. The notes of gooseberry jam, cranberry sauce, and dried apricot are pronounced and defined. Maple walnut ice cream, tahini, and leather provide a subtle, savory undertone.

​Palate: Robust and impeccably balanced, with flavors ranging from strawberry rhubarb pie to fennel pollen. Flan and coconut oil provide a rich and creamy texture that balances some light sandy tannin and modest astringency. Depth seems to come mostly from the oldest Canadian whiskeys, in the form of fennel, poppy seed and peppercorn. Allspice, ginger, and cola notes from the French and American oak round it out.

​Finish: A burst of licorice candy and molasses gives way to
Earl Grey Tea with honey. The palate is left with a range of dusty mineral notes, among them necco wafers, oyster shell, and squid ink.

​With a splash of spring water: Classical notes of crème brulée and funnel cake take the lead. The complexity here is more savory, with shiso, tomato, and tajin. An unexpected burst of lychee on the finish yields to charcoal and paraffin.

About the Brand

Inspired by a passion for tradition, born as a tribute to a queen, crafted with a desire for perfection. The story of Royal Salute is unlike any other whisky.

In 1953, the young Princess Elizabeth ascended the throne. The occasion called for a tribute fit for a queen and so an exquisite blend was created using whisky from Strathisla, the oldest working distillery in the Scottish Highlands. It was given the name Royal Salute – after the famous 21-gun-salute – and so began the story of a remarkable whisky. 

To this day, Royal Salute has marked each significant event in the lives of the British Monarchy and is unique in having only ever used whiskies aged at least 21 years in its blends. It is this unique commitment to quality and tradition that has given rise to the informal motto, “We Begin Where Others End”.

The Chinese New Year Special Edition, featuring our iconic 21 Year Old Signature Blend, was designed to celebrate the arrival of the New Year.

The illustration features traditional Chinese symbols including the dragon and lucky knotwork to bring you and your family health and prosperity in the coming year.

Aromas of sweet pears and citrus fruits are balanced with notes of autumn flowers. Aromas of sweet vanilla and oak are enhanced with notes of sherry and smoke.

The taste brings rich spices and hazelnut, with sweet orange marmalade flavours infused with fresh pears.

In 1936 Thompson Willett founded Willett Distillery. Today, the tradition continues.

In 1674 Edward Willett went to London and apprenticed to Daniel Mason to learn the pewter trade. When he was twenty-three, Edward received his mark and became a pewterer. He was allowed to strike his touch, pictured here, in the Pewterer’s Hall of London in 1684.

2012

January 27th – The family puts the first barrels of their new-make Bourbon Whiskey into Warehouse A for storage. This would have been Thompson’s 103rd birthday.

2017

On March 17, 2017 (St. Patrick’s Day) the family celebrated it’s 80 Year Anniversary of when Thompson Willett and his family put their first barrels into storage.

The first release was distilled in the early Spring of 2013 and bottled in the Summer of 2022. The proprietary mashbill is barreled at 115 proof in Char# 4 American Oak. We bottle without chill-filtration to preserve the most flavor possible.

Founded in 1952, the Kumesen Syuzo Distilling Co began distilling spirits made from Long Grain Indica Rice and fermented with native Black Koji. By 1989 Kumesen began to finish their product in Bourbon casks and Kujira was born. Now after 20 years of aging, Kujira Single Grain Rice Whisky has been perfected. Where others supplement grain whisky to increase production, Kujira Single Grain 20 Year is 100% Japanese with Rice from a single distillery, produced in small batches with the same ingredients and centuries old tradition that make Okinawa special.

The Ryukyu region of Japan is quickly becoming the hub for quality Japanese Whisky due to the pure water supply and ancient techniques.

Chicken Cock Whiskey's newest limited release Chanticleer is fine Kentucky Straight Bourbon finished in premium French Cognac Barrels. Limited to only 32 barrels, Chanticleer celebrates the long time French-American friendship dating back to the 1700s and to Paris, Kentucky where Chicken Cock was founded in 1856. With vibrant notes of ripened peaches and delicate sweet cream the flavor bursts of vanilla and cherry with compliments of softened plums and candied dates. This is the second edition in a collectible series of limited holiday releases.

Cincoro Gold is a tapestry of tequila. Our Blanco, Reposado, Añejo, and rare Extra Añejo expressions are woven together to create an unforgettable experience. The blend's character reflects the generous proportion of Extra Añejo Tequila which is barrel aged over 40 months. HISTORY & CURIOSITY

For this year’s release, Trudiann Branker looked to Madeira, the beautiful Portuguese island off the coast of Morocco, that has made an iconic fortified wine for more than 300 years. Using only column distilled rums, she placed the liquid in seasoned Madeira wine casks six years ago, carefully observing how the rum aged over time.
The result is a velvety and generous blend that unfolds with every sip. The liquid has deep golden hues and the nose showcases pear, oak, grapefruit, vanilla and butterscotch. On the palate, the bold column distilled rum is married with the subtlety of Madeira wine notes from the barrel, including honey, grapes, pear, citrus rind and dried fruit.
The Master Blender Collection: The Madeira Cask Expression is bottled at 55% ABV and is non chill filtered.

Octomore 13.3 demonstrates the phenomenal force of flavour when combining super-heavy peat with the variable harvests gathered from the island of Islay, raised by friend and farmer James Brown on one singular farm.

This release is matured in a foundational parcel of first fill ex-American whiskey barrels and a supplementary selection of second fill European oak casks, hailing from the Rivesaltes region of France and the Ribera del Duero region of Spain.

Working with Islay barley is always a privilege. The ability to present it in a single estate, single vintage, single malt is perhaps even more poetic. From year to year, Head Distiller Adam Hannett works with the base spirit bestowed upon him by the grower, together with natural factors; the changing climate and weather system, agronomic yield and the terroir of the field itself. The European oak gives more subtle structure to the spirit, while the American oak allows the spirit to take centre stage. Expect vanilla and brown sugar, counterbalanced with fresh and round green fruit notes. The smoke is, as ever, gentle and dry, building to a long finish with hints of creosote and sea spray.

TASTING NOTES

CHARACTER: An Islay whisky through and through, the provenance of this Octomore expression is unrivalled. The complex flavour of the soil that raised the barley and the classic peat smoke define this whisky's character, speaking of the place it is from.

COLOUR: Barley straw

PALATE: A soft and delicate on the palate, sweet honey and brown sugar give way to a whisper of peat smoke. The second sip brings lemon rind and seashells, a delicate marine hint along with malty biscuit notes and marzipan and coconut. The peat smoke has hints of boot polish and ash but is gentle enough to allow the subtle floral malty notes to shine.

FINISH: The marine character develops and the smoke increases on the palate, honey and lemon with warm sand and marzipan. Final fruity traces of peach and stewed pears bring a little sweetness to the finish.

All Octomore .1 editions are distilled from 100% Scottish barley. They are primarily aged only in ex-American oak, in varying percentages of either ex-bourbon or ex-Tennessee whiskey casks. Acting as the backbone of each new series, Octomore's .1 releases demonstrate the raw character of the clean Octomore spirit, balanced with the modest ex-American whiskey influence - and offer a necessary comparison from which the other expressions alternate. After five aged years in first fill ex-American oak casks, our Head Distiller has offered a unique twist in this 13.1, having gathered and recasked the spirit in 2021 into yet more fresh, first fill ex-American oak casks. This final injection of flavour, taken from the interaction between the spirit and the oak, offers additional flavours of dark toffee, coconut and vanilla. This single malt is a testament to the trust our head distiller, Adam Hannett, has in the quality of his ingredients. Without more than patience and an understanding of how the flavours will evolve, this single malt perfectly personifies the courage of Octomore as a concept.

TASTING NOTES

CHARACTER: Synonyms with the classic Octomore .1 style. Hidden peat smoke allows the floral, malty spirit and the sweet American oak to combine in perfect harmony, before dry, earthy smoke sweeps across the palate.

COLOUR: Golden Hebridean sands

NOSE: Initial impressions are of sweet nutty smoke, loaded with barley sugar and ripe fruit. Syrupy apricot and ripe pear along with malty vanilla notes of barley flour and Crème Brulee, honey and tablet. The American oak brings coconut, almonds and charred oak. The peat smoke is delicate but powerful and, along with the charred oak, brings out boot polish, leather and earthy notes.

PALATE: A viscous texture across the palate, the feeling is of densely smoked grain which comes through like smoked granola with honeyed fruit. A second sip brings the opportunity to decipher the complexity on the palate, with smoked apricot jam, barley flour, peat embers and burnt heather balanced with gooseberry citrus and sweet Turkish delight. Oak chips, sugared almonds and chocolate-limes with spicy aniseed comes toward the finish. A drop of water intensifies the smoke and brings out the minerality of the whisky.

FINISH: On the finish the sweetness fades and an earthy, mossy note remains on the palate wrapped in dry heathery peat smoke. Salty-citrus and floral notes of geranium and rose come through calmly to round off another wonderful expression of the Octomore paradox.

The glory of Pinot Noir

As Madame Clicquot used to say 200 years ago, “Our black grapes give the finest white wines” an affirmation that still rings true. Beloved for its versatility, the Pinot Noir grape expresses itself differently according to its growing conditions and the year in which it is harvested.

As a fine blend of Veuve Clicquot’s historical Grands Crus, La Grande Dame is the pinnacle of the Maison’s oenological prowess, with an immense ageing potential.

Tension and elegance

Held up to the light, La Grande Dame 2015 reveals a beautiful, golden robe that sparkles brightly.

This solar vintage, while elegant and precise, offers fresh minerality with light floral notes of jasmine and acacia on the nose, which evolve into fruity notes of pear and clementine.

As for the first sip, it envelops the palate with a delightfully subtle, silky texture.

How to enjoy the cuvée

La Grande Dame 2015 and Garden Gastronomy - a new, gastronomic experience inspired by La Grande Dame. A gastronomy straight from the garden. “Grands Crus” vegetables for Grands Crus grapes. Both assertive and sustainable in its luxury, Garden Gastronomy expresses itself through inverted dishes, where vegetables and fruits centre stage, while meat and fish are prepared like condiments.

Perfect Pairing

A salad with lobster carpaccio, citrus fruits and pumpkin from the vegetable garden will perfectly reveal the elegance and freshness of La Grande Dame 2015.

Leopold Bros. painstakingly re-engineered a Three Chamber Still from old manuscripts and grew the heritage grain Abruzzi rye that was favored by Pre-Prohibition distillers to resurrect this one-of-a-kind whiskey. 

​The 2022 summer release of the Three Chamber Rye is a Single Barrel offering. Todd Leopold worked through our dunnage warehouse, searching for the best barrels that are at least 5 years old.

He found some commonalities: rich aromas of peanut shell, maple syrup, cocoa nibs, and hazelnuts followed by wafts of fruits like plum, cherries, apricot and orange marmalade. In the finish, you will find the floral notes that are the hallmarks of Three Chamber Rye: lavender, rose, elderflower, and chamomile. Each barrel he selected has differing intensities of these notes and thus every bottle from this collection is marked with the barrel number and the date the barrel was filled. We hope you enjoy this rebirth of an American classic as much as we enjoyed making it.

A SENSORY JOURNEY

This special single malt is inspired by the Ethiopian Arabica bean. Ethiopia is claimed to be the birthplace of coffee as the Arabica bean was the first species of coffee to be cultivated. ​​ 

With a distinct coffee flavour, this whisky exudes notes of espresso, dark chocolate and sweet oak. The intensely flavoured single malt invites you to immerse yourself in a sensory journey through flavour and aroma.

As our legend goes, a bewitching enchantress once lived deep within the emerald caverns of the River Ord. Powerful and beguiling, she could make the water dance at her command. As each solstice approached, she would fix her diamond-bright gaze on the river, and weave its currents into rich, and indulgent ruby-red wine. As they flowed through The Singleton’s water source, these charmed currents imparted The Singleton with a luscious and alluring character, as spellbinding as the ritual of the ruby solstice.

Chasing the river’s edge beside The Singleton of Glen Ord, the story of singular enchantment carries weight. The only remaining Single Malt distillery on the Black Isle, this whisky’s magic lies in its decadently layered flavours. Masterly slow crafting has long been the key; letting each stage of making from malt to maturation take its time, so that the liquid is balanced, smooth and enticing.

This rare expression mesmerizes with a sumptuous character, refined through eight years in wine casks. The glass gleams with glimpses of deep amber. Aromas of red wine, oak spice and fruits create an equal allure, while barley-sugar sweetness balanced by salt and crisp gooseberry sings with a rich, velvety voice. Ultra-smooth throughout, the palate seduces with a final peppery note, like a bewitching kiss of silken spice.

Tasting Notes

Appearance: Deep, lustrous amber.

Body: Medium.

Nose: Dry overall, the gentle nose gives a vinous first impression, backed by spicy, woody notes of oak shavings and beech. Alluring aromas of tart red berry fruit and creamy vanilla spread among them, and a hint of wax appears in the development. A little water softens the nose and relaxes the aroma, without great alteration.

Palate: An ultra-smooth, mouth-filling texture prefaces a lively, intense taste; barley-sugar sweet, with a pinch of salt. That sweetness becomes pleasantly tart, with suggestions of gooseberry and crisp grape. At reduced strength, it is not as tart, but still spicy; the sweetness is highlighted yet the appetising spicy heat remains.

Finish: Lengthy and palate-drying, as pepper-heat lingers in a last kiss of silken spice. With water sweeter, now with a trace of fondant in the aftertaste.

Tasting Notes: The aroma starts with a burst of caramel, fudge and baked sugar, backed by hints of fresh fruit and berries. On the palate, butterscotch vanilla combines with notes of toasted oak and a light fruity taste to carry through the finish.

Gold Spot is matured for at least nine years in Bourbon Barrels, Sherry Butts, Bordeaux Wine Casks and Port Pipes. Non chill filtered and bottled at 51.4% ABV for a whiskey that is complex and full flavoured.

Nose: A light mix of pineapple, kiwi, green banana and lime zest followed by Pot Still spices, baked apple, hazelnut and toasted wood.

Taste: A smooth mouthfeel with a subtle mix of fruit, a hint of clove and cracked black pepper corns. Sweet spices, vanilla and cinnamon add to the wood’s nutty contribution.

Finish: A lasting and distinctly palatable balance of exotic fruits and spices.
