Filey Bay is the first single malt whisky made in, and of, Yorkshire. Why 'of Yorkshire'? Because it's created by us from field to bottle, here on the coast.

In June 2016, we ran the stills for the first time and filled our first casks. Filey Bay First Release was bottled in September 2019 and since then Filey Bay has grown and prospered. Town Branch 7yr Kentucky Single Malt Whiskey is made from 100% malted barley and aged in our own used Kentucky Bourbon Barrel Ale barrels for a minimum of 7 years. Town Branch has the oldest Kentucky Single Malt Whiskey stocks in the world resting in barrel. Bottled at 87 proof and non-chill filtered, this whiskey delivers an exceptionally balanced whiskey that continues to receive high praise.

Maker Notes

Our Peated Single Malt has been inspired by classic production methods and fueled by American innovation. We source peated barley from Scotland, use mineral rich water from Sierra snowmelt, and age in first-fill bourbon barrels to produce a whisky that is smoky, fruity, and well rounded.

TASTING NOTES

Nose: Citrus, with a peat smoke essence

Color: Light golden

Palate: Creamy full flavors of vanilla and dark red apple peels, turning into rounded peat flavors. A delicate balance of fruity and smoky notes.

Finish: Full bodied, buttery, with a lingering peaty finish

Airem 14 Year Old PX Casks Single Malt Whiskey is a refined expression aged for 14 years in Pedro Ximénez sherry casks. Redwood Empire Foggy Burl Single Malt Whiskey is a unique expression that captures the coastal influence of its namesake. Ideal for sipping neat or on the rocks, it exemplifies Redwood Empire's commitment to quality and innovation in the world of single malts.

Made from 100% Scottish grown barley and malted using peat smoke from a peat bog just a few miles from where owner Graeme Wallace was born, this whisky is a truly personal endeavor.

Aged a minimum of 3 years in virgin oak casks in order to attain a wonderful harmony of peat and oak. 

Nose: A perfect balance of smoke and oak with plenty of peat up front. Inviting and intriguing but not over powering

Palate: Sweetly glazed BBQ meat and smoked beef jerky, with some oak and vanilla. The addition of water opens peppery and briny notes, followed by blackberry and apple pie.

Bulleit Single Malt American Whiskey is a premium offering from the Bulleit brand, crafted with 100% malted barley for a distinct flavor profile. Expect inviting aromas of oak and caramel, followed by a rich palate with notes of nuts, chocolate, and spice. Smooth and luxurious, with a satisfying finish, it's a standout choice for whiskey enthusiasts seeking something special.

TASTING NOTES 

Nose: Cherry sawdust, warm pine pitch and marsh grass. A nose that is light and sunny. Closer to warm lakeside days than cold forest nights. The aroma hits with high summer energy and optimism making it unique compared to other McCarthys expressions.

Palate: Light and juicy with a good deal of burned sugar and citrus. Back flavors of salt brine and sea spray make this the whiskey version of camping on the Oregon coast. To others it’s as comforting as early morning diners and French toast with coffee. The addition of an ice cube exposes the whiskey’s sweeter tones. With a baseline of sarsaparilla root and chicory, the higher tones of toasted cereal grain, orange peel and maple syrup definitely shine.

Cabernet Cask Select
VDC Cabernet Cask Select is an American Single Malt whisky made from 100% malted barley. Aged for several years in first-fill bourbon barrels, prior to finishing in various Cabernet casks, including premium Cabernet Sauvignon barrels from France and California. Aromas of black cherry, cedar, apricot, and soft smoke meet flavors of blackberry, plum, candied ginger, and rich chocolate.

Our rich, complex original.
Solera was our very first whisky and is a bona fide Starward take on a traditional whisky expression. Rich and well balanced jammy fruits, creme brûlée and spice with a lingering dry finish. Solera neat, over ice or shaken up in a classic cocktail.

There’s a time for tradition and there’s a time to go rogue.
Solera was the first whisky where we borrowed from tradition then started asking questions. It left us with a whisky deemed world class not just by us, but award judges too.

Solera is a traditional method the Spanish used to age their Sherry and keep it consistent. A fractional amount of each young cask is blended with more mature spirit. It's the inspiration for making our Solera. And it means there's still a touch of our first ever cask in every bottle made today.

We source every Solera ingredient from just a day's drive away. A quintessential grain like Australian malted barley was a no-brainer to start with. Then, for a bold, craft flavour we ferment our barley with brewers' yeast.

Pinhook was founded with the ethos of sourcing great barrels of whiskey and taking a creative and unique approach to blending and proofing. The Collaboration Series reflects our commitment to exploring the ever growing craft whiskey movement and “pinhooking” barrels based on experience, quality, a little patience, and a bit of luck.

Edition No. 3 – Jordan Salcito
In this third edition, Sean revisited his wine roots with Jordan Salcito, our 2024 collaborator. Jordan is an internationally renowned sommelier with a storied career in the wine world and at leading restaurants including Restaurant Daniel, Eleven Madison Park, and Momofuku where her wine list was named the “Most Original Wine List in the World” by World of Fine Wine Magazine. In 2016, she founded Drink RAMONA, a family of award-winning Italian spritzes. 

She bonded with Sean Josephs over their shared love of wine and backgrounds as sommeliers. Together, they blended this extraordinary Australian whisky from four distinct styles of Starward Australian Single Malt, which had been exclusively aged in red wine barrels, further bridging the worlds of wine and whiskey.

Like Pinhook, Starward is known for moving beyond tradition and letting curiosity and creativity be their guide. Inspired by the famed Australian wine region in their backyard, they aged their whisky in red wine barrels and in Melbourne, Australia's notoriously wild climate. The constant change in temperature makes the barrels contract and expand at a much faster rate, leading the whisky to take on the delicious flavors from the wood.

VERSATILE, APPROACHABLE AND BURSTING WITH FLAVOUR.
Two-Fold is a wheat and single malt whisky folded together and matured in Australian red wine barrels. Balanced with notes of juicy red fruit, oak spice and sweet vanilla, you'll find Two-Fold is outrageously delicious neat, on ice or shaken in any classic cocktail.

Golden Moon Triple is distilled from 100% malted barley, grown in Colorado and the surrounding states, and malted in Golden, Colorado. It is mashed, fermented, distilled at Golden Moon distillery. It is triple distilled in the Irish style and aged in New American Oak casks. It is then bottled at 46% ABV (92 proof). Golden Moon Triple is a uniquely Colorado whiskey.

​Golden Moon Triple has a warm, sweet and malty nose reminiscent of lighter Irish whiskey. Smooth, but with just a touch of heat. Sweet, malty, slight caramel & candy notes with a hint of toasted oak on the finish.
