Today, their legacy lives through each bottle of Casa Sauza. Situated in Jalisco, Mexico, Sauza was founded in 1873 when Don Cenobio Sauza established La Perseverancia distillery. Owned by Beam Suntory, it's headquartered in Chicago, Illinois. Their products include Sauza, Conmemorativo, Hornitos, and Tres Generaciones. Their agave are harvested from Sauza's very own plantations, the agave fibers are prepped for a diffuser sugar extraction, yielding a solution of water and agave sugar. The agave mash is then fermented in stainless steel tanks using a proprietary blend of yeasts and nutrients, using closed tanks and an automated cleaning process. The resultant liquid is twice distilled to 55-65% ABV, filtered using various methods such as carbon filters, through which tequila is filtered through in cold temperatures to remove the excess fatty compounds that give tequila a cloudy appearance. All of the containers and barrels used in production are made from American white oak with a smoky finish, which aligns with the Sauza's standards, and are used only for aging processes. As one of the first spirits to come out of Sauza's storied tequila house, Sauza Silver delivers the crisp, refreshing agave flavor.

American Freedom Distillery was founded by four ex-Green Berets. Currently, they're building the distillery in St. Petersburg, Florida. For now, Horse Soldier Bourbon is distilled in Columbus, Ohio. The Balvenie Distillery is just up the road from Glenfiddich on the north side of Dufftown smack dab in the middle of Speyside. Dufftown is also the home town of the Mortlach Distillery. And a young William Grant worked there at Mortlach for more than twenty years learning the distilling business. When he was ready to start out on his own, he bought the empty field and laid the foundation stone for The Balvenie in 1886. Still owned by William Grant & Sons, The Balvenie has long been a favorite of Speyside Whisky lovers. It's famous for producing Single Malts in the classic styles of the region light, fruit-forward, sweet, and clean without a trace of peat smoke. Balvenie took it a bit further, being one of the first to innovate with various double and triple-wood combinations to add complexity. All that adds to a large range of Single Malt agings and wood combinations to entertain the taste buds of fans all over the world. Released as a part of The Balvenie's Stories Collection, A Week of Peat is a reincarnation of the incredibly unique Balvenie Peat Week. Though recipe remains the same, it has been renamed to fit into the new Balvenie Stories collection. Balvenie Peat Week 2002 was the first vintage of a really interesting idea. It started as the brainchild of David Stewart Balvenie's malt master and whisky specialist Ian Miller. For one week each year they would distill peated Single Malt and thus turn the entire distillery on its head. Everything else stays the same, and the spirits are then aged in ex-Bourbon casks for a full fourteen years and bottled at 48.3% ABV. You can still taste the signature Balvenie Single Malt style notes of tropical fruits, honey, peaches, and vanilla. But now it also has a warm, earthy smoke flavor and aroma. It's Balvenie as youve never had it before, and still very different from the famous Islay peated spirits on the other side of Scotland. It's should be on the must have list of every Speyside and Balvenie fan. 

Kentucky Peerless Distilling Co. traces their roots back to the 1880's, to the heart of Henderson Kentucky. Peerless Whiskey was founded by a businessman with a bold personality Henry Kraver, who revived the brand from the brink of ruin in the late 1880s. Under Kraver's guidance, rose from the ashes, increasing production 25-fold. But the growth of the brand was subsequently stunted by the very unforgiving era of Prohibition. Now, a century later, Peerless Whiskey is in the hands of Kraver's great-grandson Corky Taylor and great-great-grandson Carson Taylor. Keeping Kraver's legacy alive, the duo has resurrected the brand, even distilling under the original Distilled Spirits Plant number, DSP-KY-50 in a centuries-old warehouse in downtown Louisville, near the Ohio River. Two years after releasing its flagship 2-year-old inaugural straight rye Kentucky Peerless Distilling Co. has launched its first bourbon. Crafted onsite from grain to bottle, Master Distiller Caleb Kilburn used a sweet mash process and non-chill filtration to craft this landmark release for the brand. Most bourbon on the market today is "sour mash" cooked with a bit of already fermented grains (and the consistent yeast and bacteria included) from a previous distillation cycle. In contrast, "sweet mash" bourbon uses a freshly cultured batch of yeast each time. "The launch of our bourbon marks the realization of so many dreams from the team at Kentucky Peerless" says Caleb Kilburn. Aged four years this new release is bottled at a low barrel proof 108.9, a factor of both a low distillation proof and a low barrel entry proof, setting this bourbon apart from the crowd.

Maker Notes

It gives us great pleasure to introduce the beautiful Balmorhea. This magnificent Texas Straight Bourbon Whiskey is bold but majestically-crafted, having been aged four years in new American white oak barrels, then transferred to a second new American white oak barrel, and aged for one year. Simply put, this 2-time US Micro Whisky of the Year and San Francisco Double Gold winner is bourbon candy in a bottle.

In 2013, our Master Distiller Donnis Todd filled 22 new American white oak barrels from The Barrel Mill – a Minnesota cooperage – with freshly-distilled 114 proof white dog. The barrels were then aged in the relentless West Texas heat for two years. All the while, the liquid inside cycled through the wood’s pores and crevices, extracting every bit of flavor possible.

In 2015, Donnis lugged the barrels in from the barns and dumped the liquid into stainless steel tanks. He then rolled a few 27-gallon Kelvin Cooperage barrels from Louisville, Kentucky below the tank spigot and filled the barrels with the already two-year-old straight bourbon. This second round of barrels had far different lignin and chemical compositions than the original barrels because they had been scorched and toasted differently, caramelizing the sugars in a wonderful new way.

In 2017, the bourbon was dumped into a long, thin stainless steel trough we call The Whiskey Girl, and we all began nosing and tasting the results. After rounds of tear-filled high fives and brotherly hugs, we started talking about names – the easiest part of getting this sensational liquid to market.

WHAT IS BALMORHEA?
About 40 miles south of Pecos, Texas, there’s a little swimming hole called Balmorhea where I took my kids when they were young. The park’s name comes from four men’s surnames: E.D. Balcom, H.R. Morrow, John, and Joe Rhea. These men formed an irrigation company in the area in the early 20th century.

It’s rumored that big game hunters may have gathered at the springs in the Balmorhea area 11,000 years ago. Native Americans also swam the springs before the sadistic Spanish explorers came to the area. In 1849, the springs were known as Mescalero Springs, after the Mescalero Apache who watered their horses here.

To see the water flowing up from the underground spring into the canals is mesmerizing, undeniable evidence that God exists. Today, many are concerned that fracking could hurt the water quality or otherwise damage this beautiful child of Mother Nature.

Cleveland Black Reserve is a 100 proof, full-bodied bourbon. Cleveland Whiskey uses a proprietary process called Pressure-Aging, a process that opens and closes the pores of charred oak to significantly speed the aging. However, you’ll find the technique also makes for a richer, more flavorful bourbon that’s easy to drink.

Situated along the banks of the East River, Kings County Distillery is New York City's oldest operating whiskey distillery and the first distillery in New York City since Prohibition. Wedged between Williamsburg and Vinegar Hill, Colin Spoelman and David Haskell, the master distillers at Kings County, make hand-crafted bourbon and moonshine out of the 113-year old Paymaster Building at the Brooklyn Navy Yard. A typewriter the two distillers found on the sidewalk in Williamsburg is used to make the labels that adorn their clear, flask-like bottles, while a hairdryer (made by Revlon) is used to affix each bottle seal. Handwritten scrawls on a chalkboard keep track of different batches, and mesh laundry bags are used as strainers. Haskell and Spoelman use the first alcohol produced from each batch the "head" as a disinfectant and sell the used mash to a pig farmer who uses it as feed. "I still don't understand why it doesn't make the pigs drunk," Haskell says. Kings County Bourbon is made from a mash bill of New York State-grown corn and malted English barley. Twice distilled on Scottish copper pot stills it's then aged for at least two years in new oak barrels. Smooth, spicy, and complex, this bourbon is a precocious whiskey, surprisingly robust for its age with notes of cinnamon, nutmeg, black pepper, and vanilla. Awarded three stars by the New York Times, and a double gold medal from the SF World Spirits Competition in 2019. Kings County currently produces about 150 gallons of bourbon a month. "We make enough to supply some of Brooklyn, some of Manhattan and that's about it," Spoelman says. After visiting their distillery, we bamboozled them into sharing some of their juice with the rest of the country. The bottles are filled, labeled and sealed by hand.

What is Peated Bourbon It's bourbon whiskey that conforms to the American requirements for bourbon but it incorporates malted barley that has been smoked with peat, a tradition common to some Scotch whiskeys. Made from 75% organic New York State corn, and 25% Scottish peated malt. Peated bourbon will definitely appeal to the adventurous whiskey traveler who has had a whiskey or two in their life. Aged for two summers (14 to 24 months) in a five-gallon charred, new oak barrels, Kings County Peated Bourbon Whiskey has an aroma of bonfire and juicy corn, which leads to notes of buttered toast, raisins and caramel on the palate. The finish is slightly smoky with hints of biscuits and more sweet corn. Now available in full 750 ml bottles.

There’s no better place than Montana in the Spring, when the air is perfumed with apple blossoms and the cottonwood floats on the breeze. We love this time of year, because the bees are busy gathering pollen to make their incomparable honey that we use in our Montana Honey Moonshine. This spirit is made from a traditional sweet feed recipe used by moonshiners, made up of three whole grains and molasses. We barrel age our spirit and add a touch of honey for a balanced and approachable flavor.

Willie’s Montana Honey Moonshine is directly tied to the Madison river with the odes to world class fly fishing you find on the bottle. The flow rate and temperature of the Madison river at time of bottling are listed directly on the bottle.

The 18th & 19th centuries there were the glory days of the Irish whiskey industry, with over 200 licensed distilleries in all of Ireland. There were also countless unlicensed distilleries at the time, producing diverse styles of poitn, whiskey, gin, and even absinthe. But through a series of unfortunate events, the Irish whiskey industry dried to a trickle in the 1970s. Glendalough Distillery is part of a revival of this Irish heritage. Their philosophy is "to make innovative spirits while staying true to the tradition and heritage of our ancestors." Glendalough started out making poitn the traditional Irish distillate made in small pot stills. From there they seamlessly transitioned to whiskey production, and most recently, seasonal,wild botanical gins. All of their production is handmade. This very special, small-batch Gin takes the Wild Gin recipe and redistills it with extra fruit, flowers, spices and an abundance of fresh rose petals.Three varieties of rose are used including the rare and elusive Wild Rose from the Wicklow mountains, large fragrant Heritage Roses and the ancient prized Damask Rose. Combined these roses create a naturally pink, very floral gin. The delicate nature of petals requires a more gentle, slower distillation than the wild botanical gin. Vapor distillation is more efficient in extracting the essential oils and flavors. After distillation, the gin is further infused with even more roses to deepen the flavors and create a beautiful pink hue. Floral, fragrant and flavorful, this unique gin is the product of endless experimentation with plants, fruit, spices, and flowers.

J.W. Rutledge Distillery was founded by former Four Roses master distiller Jim Rutledge. As the construction of their new sustainable distillery is underway (a facility that utilizes clean technologies like geothermal heating and cooling, solar energy, and biomass energy), Jim Rutledge sources and blends whiskey from other distilleries to put out new releases under the J.W. Rutledge brands, beginning with Cream of Kentucky. Their aim is to produce Kentucky Straight Bourbon Whiskey and Straight Rye Whiskey the old-fashioned way relative to the requisites, guidelines and standards for Straight Whiskey production that have been in place for close to two centuries. The Cream of Kentucky label was first introduced in 1888 by I. Trager & Co. of Cincinnati, Ohio. Before Prohibition ended, the brand was picked up by the renowned Schenley Company and re-introduced to the industry in 1934. Cream of Kentucky reached great success in the 30s and 40s, using the work of famed artist Norman Rockwell. Cream of Kentucky is now owned by J.W. Rutledge, who has recently secured a limited supply of Kentucky Straight Bourbon Whiskey he feels is worthy of the rebirth of Cream of Kentucky Bourbon as a premium whiskey. Cream of Kentucky is an 11.5-year-old straight bourbon blend of 60 barrels. Bottled at 102 proof, this bourbon has notes of sweet cherries, vanilla, and dry tannins followed by a floral cracked pepper finish.
