Walsh Whiskey, situated in Carlow's picturesque countryside, was founded by Bernard and Rosemary Walsh in 1999. Originally contracting distillation to Bushmills, they later built their own distillery in 2016, marking County Carlow's whiskey distilling return after 200 years. Producing The Irishman, Writer's Tears, and Irish Cream Liqueurs, Walsh Whiskey is the only independent Irish distillery making pot still, malt, and grain whiskeys in one place. Their limited edition Irishman 12-year-old single malt, released in 2013, is triple distilled, aged in bourbon barrels, and noted for its vanilla, cinnamon, and clove aroma, peppery midsection, and malted oak finish. A Gold winner and Best in Class at the 2013 International Spirits Challenge, it reflects Walsh Whiskey's commitment to traditional Irish whiskey-making.
