THE END of one path forms the beginning of another. This is not just our philosophy but our story. Trail’s End is a true-born Kentucky Bourbon aged in charred new American Oak barrels. It then travels west to Hood River, Oregon where it undergoes a unique finishing process and is proofed with glacier-fed spring water from Mt. Hood. What emerges is an instant classic.

A select few barrels of 10-year Kentucky Bourbon follow the spiritual path of the Oregon Trail. Here we finish our bourbon in toasted Oregon Garry Oak casks to heighten the notes of vanilla and spice. Glacier-fed spring water from Mt. Hood completes the vision of our master distiller: A rare bourbon with hallmarks of age and heritage that flourishes with a provenance of its own. 

TASTE: Initial introduction of caramel, vanilla, cherry, and roasted corn with a foundation of warm, earthy notes of summer pine and high desert moss. Bitter orange and delicate hints of lilac are hidden beneath the vanilla and oak.

AROMAS: Considerably less opening bite with the introduction of Garryana Oak. Focused aromas of vanilla, caramel, and cherry, with warm summer pine at the end.

Batanga Reposado is aged in American oak barrels lending coffee, vanilla and toffee notes that heighten the warming spices introduced in the production process. The addition of a barrel comes through in bold, complex flavors.

Hand harvested single estate grapes, gently pressed a single time, naturally fermented into wine, Copper Pot distilled once to proof by varietal, rested & blended according to family tradition. The transition to a single barrel bourbon occurred in 2019, with the introduction of the limited 13-year edition in both 2019 and 2023. Baker's Single Barrel 13 Years Minimum Kentucky Straight Bourbon Whiskey, boasting 107 proof, presents the expected rich bourbon characteristics. Despite its 13-year aging, the prevalent oak influence, starting sweet and transitioning to a drier note in the finish, does not overpower. Legent Yamazaki Cask Finish Blend, an exclusive release inspired by diverse perspectives in whiskey craftsmanship, unfolds a remarkable journey. Originating as an exceptional Kentucky Straight Bourbon Whiskey meticulously crafted by Fred in Kentucky, it embarked on a transpacific voyage to Japan. There, at the revered Suntory Yamazaki Distillery near Kyoto, Shinji nurtured it in specially chosen French Oak wine casks and Spanish Oak sherry casks, adding rich nuances and a vibrant spiced finale. A select reserve further matured in sherry casks that once cradled Yamazaki Single Malt Japanese Whisky, contributing a full-bodied malty depth and intricate layers of flavor.

Upon returning to Clermont, the three uniquely refined batches reunited with the original Kentucky Straight Bourbon Whiskey, resulting in a bottling that epitomizes a harmonious and intricate fusion. Deep, intensely flavorful and velvet-smooth, our 2020 Apothic Crush is a luscious Red Blend brimming with appealing fruit character. Ripe black cherry, wild blackberry and raspberry fruit notes are layered on the inviting palate with toffee and milk chocolate. The long, lingering finish adds hints of rich, silky caramel. A blend of Petite Sirah, Pinot Noir and Zinfandel, this is a Crush that demands to be shared.

Viticulture Notes

We selected the majority of the grapes for Apothic Crush from Lodi and other bold regions in California’s Central Valley. Lodi is known as a producer of intensely concentrated, silky textured fruit. California’s 2020 vintage experienced a cool, mild growing season with an accelerated heat spell in August, resulting in early ripening. Vintage 2020 in California shows vibrant acidity and concentrated flavors.

Winemaking Notes

We harvested a majority of the grapes for our Apothic Crush at night in cool temperatures to preserve the character of the fruit. The Pinot Noir was cold soaked for 1-2 days, then fermented between 80° to 85°F. The other varieties were fermented between 86° to 90° F. To create a silky mouthfeel and toasted caramel characteristics, we aged the blend in a mixture of French and American oak.

Sweet and smokey with caramel and cornbread on the nose, blackberry jam and tobacco on the tongue and a tingling finish of cinnamon and spice.  Enjoyed neat or on the rocks, this rare gem is so perfectly aged, you’ll want to travel back in time for more.
