CONVITE is proud to be a 100% Oaxacan industry, heirs of knowledge transmitted over more than five generations in the distillation of agave and in the bottling of local beverages.We believe that a good mezcal is a real elixir for the most discerning palates. Therefore, we are committed to protecting our traditions, while offering an artisanal drink of the highest quality.CONVITE aspires to be a point of reference in our community, by supporting environmental sustainability, fair trade and community development; that is why we also carry out all our value chain activities exclusively in Oaxaca.In every bottle we produce, you can find the presence of fragments of ancient traditions, the land where the plant was grown and the knowledge inherited generation after generation.

PRODUCTION PROCESS

Mezcal CONVITE is a high quality artisanal mezcal. The thorough selection of wild agaves and the careful distillation adopted from ancient methods give our mezcals their distinctive flavors and luxurious tastes. Made 100% in the traditional way, without any accelerators or added flavors, using the highest quality ingredients. The production is made in small, exclusive lots, with a superb flavor. A true elixir of Mexico for the world! These attributes make it 100% natural, high quality, with an exquisite flavor, special and unique in the world.

ESPADÍN-MADRECUISHE

Semi-dry and mineral, with citric tones and a sensation of herbal freshness. It is an enjoyable and unmatched combination in which the Espadín agave appears to hold back its attributes in order to highlight the flavour of the Madrecuishe.

 A Reposado Tequila is the first stage of

"rested and aged"    Aged in oak barrels or storage tanks between 2 and 11 months    The oak gives it a mellowed taste and its pale color    Reposado keeps the blue agave taste and is gentler to the palate

Stellum Bourbon finds its flavor in the tension of three Indiana Bourbon mash bills, two of which are high-rye, with the third being almost exclusively corn. Older barrels from both Kentucky and Tennessee are folded in slowly, through a multi-step blending process. This brings added layers of depth and complexity, ultimately allowing us to round out a uniquely Stellum flavor profile.

Barr Hill Gin is our ode to the hardworking bees of the Northeast. Each batch is distilled in our custom-built botanical extraction still. The juniper-forward botanicals are brought to a perfect balance by the floral depth of the raw honey. The results are distinctive and unparalleled. How do we extract such complexity from simple raw materials? Our secrets are kept in the hive.

MICO Reposado is aged in American Oak whiskey barrels then finished in Napa Valley Cabernet barrels to create warm vanilla notes that marry with the tequila’s natural agave edge. The result is a Tennessee-inspired finish that doesn’t forget its Jalisco roots.

Plantation O.F.T.D. Rum is our take on that classic style of overproof rums. And not just ours: to join him on the quest to get the blend and the proof just right, Alexandre Gabriel scoured rum joints around the world to find six grizzled old salts who knew which end of a rum bottle was which.

Together they came up with this blend of Guyana, Jamaica and Barbados rums, bottled at 69 percent alcohol.

O.F.T.D. officially stands for Old Fashioned Traditional Dark but if you ask any of the seven collaborators who were in the room when this blend was born, they’ll tell you it really stands for something else that was exclaimed when the winning rum was tasted…

TASTING NOTES

Nose: Intense and very precise notes of coffee, orange, plum, jam and truffles.
Palate: It bursts with caramel cream, chocolate and vanilla notes. It continues on with cinnamon, raisins, nutmeg, oak and molasses with smoky accents.
Result: Long and lingering with dark chocolate, clove and caramel.
