Single Malt whisky has always been the drive and passion behind Balcones. Over the years we have been inspired by and drawn to other spirit traditions, including the classic American spirit: Rum.  After a few small batches of our Texas Rum, we refilled the same casks with select Texas Single Malt, marrying two of our favorite things together to create a unique Texas Whisky. Bottled at cask strength, this is a bold Single Malt with notes of rock candy, spice cake and toasted oak.

The Jalisco Highlands in Mexico are the tequila capital of the world and the name Camarena counts among the most illustrious in the spirit's rich history. After working with his brother Carlos for years, the fourth-generation tequilero (G4) Felipe Camarena decided to open his own distillery in 2011 and the Destilera El Pandillo was born. Named after his grandfather's favorite bull, the distillery proudly displays the old tahona stone from the family distillery that burnt down during the Mexican Revolution before it even became operational. G4 takes pride in taking things slow and respecting the land and tradition. They grow their own agaves without using any chemicals, and they are never harvested before fully ripening. They are cooked in traditional stone ovens for 22 hours, after which the remains are converted into fertilizer. Copper-pot stills are used for the first and second fermentation and many details in the production process ensure power efficiency. They have also strived to use solar and wind power, as well as harvesting rainwater. As all their tequila, the G4 Tequila Blanco expression is made from 50% spring water and 50% harvested rainwater and bottled at 80 proof. "Im not in the business of making fancy bottles. Im in the business of making great tequila," says Felipe of their spirits and this unaged version shows it with a smooth agave-forward profile that is as crisp as it is complex.

We learned the great tradition of tequila making from our ancestors, who have been farming agave in Los Altos de Jalisco since the 1860s. Refinement in a bottle. Aged for at least six months in very old George Dickel Tennessee whiskey barrels, our Reposado is an expression of the landscape, with flavors influenced by the floral, herbal, and citrus plantings we grow at Rancho El Pandillo.

The Aejo has spent at least 18 months in ex-bourbon American oak barrels, which leads to an exceptionally smooth character. As all their tequila, the Aejo is made from 50% spring water and 50% harvested rainwater and bottled at 80 proof.

While the Extra Aejo might look comparatively light, it is due to a complete lack of any coloring additives it has spent a minimum of 3 years in ex-bourbon American oak barrels. All the maturation takes place in-house, often giving the spirits twice the amount of aging necessary for a particular category. This gives the end product an exceptional smoothness and complexity. It's extra-smooth, agave-forward, with a pleasantly soft oakiness and vanilla note. As all their tequila, the Extra Aejo is made from 50% spring water and 50% harvested rainwater and bottled at 80 proof.

Heritage Distilling Co. (HDC) is a craft distillery based in Gig Harbor, Washington. HDC has been the most awarded craft distillery in North America by the American Distilling Institute 7 years in a row from 2014 up until 2020. It is barreled for at least two years in new American Oak Charred Barrels. This 103-proof big brother of the award-winning whiskey is cut sparingly with their private crystal clear water source and infused with natural brown sugar and cinnamon flavors. More bourbon and less sweetness make this version the bigger and bolder of the two BSB brothers.

BLANCO TASTING NOTES

Maker Notes 

Our process is unique in that we use 94% Danko Rye grown on the shores of Conesus Lake. This big, bold, spicy grain captures the true spirit of the Empire State. Our temperature controlled fermentation and proprietary pot, column, pot, column distillation method all contribute to our unique flavor profile, all before being set to age in our custom charred barrels.
The Empire Rye requirement to use local grains and barrel down at a lower proof, in combination with our harsh NY winters and hot humid summers, all contribute to the unique flavor of this product. Unfiltered to provide you with true and authentic flavor, our Rye is best enjoyed neat, on the rocks or in a traditional whiskey cocktail.

The non-governmental organization Mezonte is focused on promoting, supporting, and preserving the tradition and heritage of Mexican agave spirits. Led my mastermind, curator, and expert of everything agave Pedro Jimenez, they collaborate with various producers, featuring spirits from all over Mexico, especially Jalisco and Michoacn. These producers provide mezcal, raicilla, barranca, tuxca, sikua, and any other agave-based distillates. Whenever they purchase a batch from a local producer, it never exceeds 60% of the batch, as they strive to keep the spirits thriving in the community as well. Mezonte Raicilla Japo is made by Hildegardo "Japo" Joya in Cabo Corrientes, Jalisco. The Maestro Mezcalero has been producing the spirit for his whole life, meaning he has decades of experience under his belt. Everything is done the traditional way: The 12- to 25-year-old Amarillo agaves are harvested under the light of the full moon, they are cooked underground, hand-crushed with wooden mallets, and left to ferment in volcanic rock containers, before being distilled using a direct-fired copper still. Bottled at 94 proof, it's a beautiful Mexican spirit and a celebration of a rich distilling tradition.

INGREDIENTS

Corn, wheat, and malt

This powerful and inviting whisky epitomizes the harmony achieved through our blending and aging techniques. We begin with a blend of two non-peated French malt distillates that matured in different casks, the majority in extra old cognac casks and a proportion in new French Limousin and American oak casks. Once the optimal blend is achieved, the double malt ages exclusively in extra old cognac casks where it develops complex and balanced flavors. Finally, it is blended with a lightly peated French malt distillate and is finished in the same extra old cognac casks until it reaches its optimal flavor.

WHISKY MAKER'S NOTES

Color: Deep copper.

Nose: Bold and inviting. Warm raisin bread and baking spices surround notes of smoky barley.

Palate: Powerful yet delicate. The silky texture gives way to baking spices and juicy grapes. Rich and balanced, with a hint of peat.

Finish: Long, very long. The subtle peat amplifies the soft tannins of the extra old cognac casks.

In 1846, John Dewar began blending the finest whisky he could source in Scotland and bottling it with his own name on the label. Within a decade, Dewar was supplying whisky to bars and hotels throughout Scotland. By the turn of the century, the brand had expanded to become one of the best selling whiskies in the world and today remains the best-selling Scotch whisky in the United States. By the end of the 19th century, the famed Dewar's Aberfeldy Distillery became operational. Situated by the Pitilie Burn, the small river has served as a source of pure water to this day. After the malted Scottish barley is brought in, it is left to ferment for an extended period of time, before being distilled in tall pot stills. The Aberfeldy single malt that is produced here remains the heart of Dewar's blend today. The premises are open for tours and cask tasting with a whisky lounge and cafe on hand. Dewar's whisky is crafted by blending together "the rarest of rare whiskies from across Scotland." The backbone is that 27-year-old single malt whisky that is crafted at Aberfeldy Distillery. Once the 27-year-old is married together with other whiskies, the resulting blend is allowed to rest again in oak casks. This secondary maturation process "is a marriage made in heaven ensuring our whiskies are even smoother and creamier," said Dewar's retired master blender Thomas Aitken. It's this great foundation and the signature "double aging" process that have made Dewar's the most awarded blended Scotch whisky in the world. Where the "double aged" series ends, the innovative and premium Double Double picks up. Created by Dewar's Master Blender Stephanie MacLeod, this 27-year-old expression takes the matured single malt and grain whiskies and blends them, then lets each style age separately. Afterwards, both are blended together and re-casked for an additional month. In the end, the liquid is transferred to Paolo Cortado sherry casks for a round of finishing, before being bottled at 92 proof. The 4-sided bottle reflects the 4 stages of the aging process.

Founded in 2008, WhistlePig is now the most awarded Rye Whiskey maker in the world. Their remote 500-acre hard-working farm in bucolic Shoreham, Vermont, is the perfect place to perfect their experiments with blending and finishing, ultimately leading to a portfolio of deeply complex Rye Whiskeys. In 2017 WhistlePig was awarded the coveted "Best In Show Whiskey" title from the San Francisco World Spirits Competition. Crafted in this time of social distancing, WhistlePig Homestock Whiskey was created by the community, including Flaviar members and industry professionals. The exciting experiment had WhistlePig fans working on blends together with "Blend Your Own" whiskey kits and instructions sent to enthusiasts worldwide. The data was then analyzed by Masted Blender Pete Lynch who picked 3 of the most popular styles. The tasting and voting took place via a live stream and a winner was picked by the fans from the comfort of their homes. It's a blend of 4-year-old rye whiskey and 5-year-old wheat and barley whiskeys that is pleasantly sweet and spicy, as well as wholly unique. The winner also came as a surprise, as it comprised 45% rye, 30% wheat, and 25% barley. "HomeStock is a truly special blend for us, not only due to how it was made but it's the first time were releasing a whiskey that features something other than Rye. Were thrilled that this blend got voted as the winner, it could be a sign of things to come from us in the future as a natural extension of our famed FarmStock range," says WhistlePig CEO Jeff Kozak. 

Southwind corn whiskey moonshine began when two artists, Maxime Berthou and Mark Polep, took an old paddle steamer down the Mississippi River exactly 1712 miles of it. After two years of preparation the month-and-a-half journey took the pair through 10 states during the record-breaking 2019 floods. The 21-foot steamboat mostly putted along happily at up to 4 miles per hour (3.5 knots), though not without incident while the flooding provided a lot of driftwood for fuel, it also caused the rudder to break 3 times. The wood-fired engine took lots of hard work, with the pair working in 2-hour shifts. The duo had set out with several goals in mind: The adventure would serve as a basis for a book and film, but more importantly for us they would gather several samples of corn along the way from at least 10 different producers and create a moonshine once the journey was completed. But they couldn't just go about creating the moonshine the ordinary way. Once they moored in New Orleans, the boat was transformed into a floating distillery, producing moonshine from the 42 corn varieties they gathered from 10 different states. With the help of Big Easy's own Seven Three Distilling the pair created Southwind a moonshine that tells the story of the Mississippi River and their epic undertaking.
