This powerful and inviting whisky epitomizes the harmony achieved through our blending and aging techniques. We begin with a blend of two non-peated French malt distillates that matured in different casks, the majority in extra old cognac casks and a proportion in new French Limousin and American oak casks. Once the optimal blend is achieved, the double malt ages exclusively in extra old cognac casks where it develops complex and balanced flavors. Finally, it is blended with a lightly peated French malt distillate and is finished in the same extra old cognac casks until it reaches its optimal flavor.

WHISKY MAKER'S NOTES

Color: Deep copper.

Nose: Bold and inviting. Warm raisin bread and baking spices surround notes of smoky barley.

Palate: Powerful yet delicate. The silky texture gives way to baking spices and juicy grapes. Rich and balanced, with a hint of peat.

Finish: Long, very long. The subtle peat amplifies the soft tannins of the extra old cognac casks.

In 1846, John Dewar began blending the finest whisky he could source in Scotland and bottling it with his own name on the label. Within a decade, Dewar was supplying whisky to bars and hotels throughout Scotland. By the turn of the century, the brand had expanded to become one of the best selling whiskies in the world and today remains the best-selling Scotch whisky in the United States. By the end of the 19th century, the famed Dewar's Aberfeldy Distillery became operational. Situated by the Pitilie Burn, the small river has served as a source of pure water to this day. After the malted Scottish barley is brought in, it is left to ferment for an extended period of time, before being distilled in tall pot stills. The Aberfeldy single malt that is produced here remains the heart of Dewar's blend today. The premises are open for tours and cask tasting with a whisky lounge and cafe on hand. Dewar's whisky is crafted by blending together "the rarest of rare whiskies from across Scotland." The backbone is that 27-year-old single malt whisky that is crafted at Aberfeldy Distillery. Once the 27-year-old is married together with other whiskies, the resulting blend is allowed to rest again in oak casks. This secondary maturation process "is a marriage made in heaven ensuring our whiskies are even smoother and creamier," said Dewar's retired master blender Thomas Aitken. It's this great foundation and the signature "double aging" process that have made Dewar's the most awarded blended Scotch whisky in the world. Where the "double aged" series ends, the innovative and premium Double Double picks up. Created by Dewar's Master Blender Stephanie MacLeod, this 27-year-old expression takes the matured single malt and grain whiskies and blends them, then lets each style age separately. Afterwards, both are blended together and re-casked for an additional month. In the end, the liquid is transferred to Paolo Cortado sherry casks for a round of finishing, before being bottled at 92 proof. The 4-sided bottle reflects the 4 stages of the aging process.

Founded in 2008, WhistlePig is now the most awarded Rye Whiskey maker in the world. Their remote 500-acre hard-working farm in bucolic Shoreham, Vermont, is the perfect place to perfect their experiments with blending and finishing, ultimately leading to a portfolio of deeply complex Rye Whiskeys. In 2017 WhistlePig was awarded the coveted "Best In Show Whiskey" title from the San Francisco World Spirits Competition. Crafted in this time of social distancing, WhistlePig Homestock Whiskey was created by the community, including Flaviar members and industry professionals. The exciting experiment had WhistlePig fans working on blends together with "Blend Your Own" whiskey kits and instructions sent to enthusiasts worldwide. The data was then analyzed by Masted Blender Pete Lynch who picked 3 of the most popular styles. The tasting and voting took place via a live stream and a winner was picked by the fans from the comfort of their homes. It's a blend of 4-year-old rye whiskey and 5-year-old wheat and barley whiskeys that is pleasantly sweet and spicy, as well as wholly unique. The winner also came as a surprise, as it comprised 45% rye, 30% wheat, and 25% barley. "HomeStock is a truly special blend for us, not only due to how it was made but it's the first time were releasing a whiskey that features something other than Rye. Were thrilled that this blend got voted as the winner, it could be a sign of things to come from us in the future as a natural extension of our famed FarmStock range," says WhistlePig CEO Jeff Kozak. 

Southwind corn whiskey moonshine began when two artists, Maxime Berthou and Mark Polep, took an old paddle steamer down the Mississippi River exactly 1712 miles of it. After two years of preparation the month-and-a-half journey took the pair through 10 states during the record-breaking 2019 floods. The 21-foot steamboat mostly putted along happily at up to 4 miles per hour (3.5 knots), though not without incident while the flooding provided a lot of driftwood for fuel, it also caused the rudder to break 3 times. The wood-fired engine took lots of hard work, with the pair working in 2-hour shifts. The duo had set out with several goals in mind: The adventure would serve as a basis for a book and film, but more importantly for us they would gather several samples of corn along the way from at least 10 different producers and create a moonshine once the journey was completed. But they couldn't just go about creating the moonshine the ordinary way. Once they moored in New Orleans, the boat was transformed into a floating distillery, producing moonshine from the 42 corn varieties they gathered from 10 different states. With the help of Big Easy's own Seven Three Distilling the pair created Southwind a moonshine that tells the story of the Mississippi River and their epic undertaking.

This one was distilled using discontinuous copper-pot stills that came to the La Miel distillery in 1959. It was crafted using the finest sugar cane honeys and aged in small American white oak barrels. It's the most complex and heavy of the three expressions.

Lovingly handcrafted and aged in Kentucky, Pinhook Bourbon was established in 2014 and has produced several small batch bottlings in their newly restored Castle & Key distillery in Frankfort, KY, to much critical acclaim. What makes their line unique is the brand's three distinctive characteristics: its limited availability, mass appeal and strong ties to Kentucky's legacy of horse racing. Each release of Pinhook Bourbon is named after a thoroughbred owned by Bourbon Lane Stable. The label also features the horses racing records on their brand's website. Every fall Pinhook features an annual vintage of Pinhook Bourbon and Pinhook Rye, each of which is inspired by a thoroughbred horse. Each blend is as unique as the horse on the label. "Pinhooking" refers to an old Kentucky term for purchasing young thoroughbreds, holding them until they mature, and selling them when they are ready to run. Successful pinhooks much like whiskey are made on instinct, experience, an appreciation of quality, and a little luck. Pinhook bourbons and ryes are handcrafted to reflect the richness of the Kentucky soil and the character of its beautiful horse country. Pinhook Bohemian Bourbon was distilled, aged, and bottled at the historic Old Taylor Distillery (now known as Castle & Key), the first bourbon in 50 years to do so. Crafted from a mash bill of 75% corn, 15% rye, and 10% malted barley, it's a high-proof expression that has been aged for a minimum of 34 months. This expression is limited to 100 barrels and was proofed and blended by Pinhook co-founder Sean Josephs.

Each year, Pinhook releases a new vintage of bourbons and ryes. Every expression is the best representation of our barrels at that moment in time, and dedicated to a promising young thoroughbred. Through a combination of careful barrel selection, blending in small batches, and meticulous proofing, each Pinhook vintage has a personality as unique as the horse on the label.

Casa San Matas has been making tequila since 1886, making it one of the oldest family tequila distilleries in Mexico. It was during the revolutionary era that Don Delfino Gonzales sprung on the opportunity to channel his passion into making the famous Mexican spirit. In 1940 the distillery was relocated to Ojo de Agua in the Los Altos region of Jalisco. They were the first distillery to introduce an extra-aged tequila to the Mexican market in the 1990s the San Matas Gran Reserva. With more than 130 years of tequila-making behind them, they are just as passionate about tradition as they once were. Majestic Rey Sol tequila was launched in 1998, just as the first International Space Station brought mankind closer to the sun. The depiction of the sun on the beautiful decanter was designed by Mexican artist Sergio Bustamante. It's a traditionally-crafted spirit, made from Casa San Matas' own agaves, grown in the mineral-rich soil of the Jalisco Highlands. These are first baked for 48 hours at exactly 194F. The cooked agaves are then milled and natural spring water is added. The juice ferments for 72 hours in fermentation tanks, before being distilled slowly at a low temperature. Finally, the tequila is aged for 6 years in French and American white oak barrels.

Our founder, born and raised in California, is both wildly passionate about both wine and whiskey. His love for excellent bourbon coupled with his access to fresh Central Coast cabernet sauvignon casks combined for a truly exceptional whiskey. We are proud to present our California Oak Straight Kentucky Bourbon, which earned a Gold Medal at the San Francisco World Spirits Competition right out of the gate in 2020. This bourbon beautifully represents its dual citizenship by showcasing the superiority of Kentucky distilled and aged bourbon, as well as the rich nuanced complexities of California's Central Coast cabernet.

Ron Colón Salvadoreño High Proof Rum is made from a special blend, creating a complex flavor palate. The blend includes a Salvadoran column distilled rum and aged and unaged pot-distilled rums from Jamaica. By combining column-distilled and pot-distilled rums, the overall flavor offers contrasting characteristics that interact to create something quite unique.

RECIPE

• 6-year-old column stilled Salvadoran rum produced by Licorera Cihuatán, a part of Ingenio La Cabaña of El Salvador, one of the largest and oldest sugar producers in the country established in 1920.

•Unaged pot stilled Jamaican rum produced by Worthy Park, Hampden and Monymusk distilleries. • 3-year-old Jamaican pot stilled rum produced by Worthy Park estate.

PROCESS

The rum begins its life from local sugar cane that is gathered and then run through a 100-year-old sugar cane mill to be turned into molasses. From molasses it undergoes fermentation with proprietary yeasts for 36 hours before being distilled by a modern multi-column still. After distillation the rum is aged in white oak ex-bourbon barrels sitting alongside rums that The Licorera Cihuatán distillery has been producing since 2004.

TASTING NOTES

The palate brings notes of tropical fruit notes, but with a developing toasted warm spicy caramel flavor. Balanced with creamy milk chocolate, roasted almond and dried chewy apricot notes.

The coffee infused Ron Colón Salvadoreño is made with single estate beans grown on the side El Salvador’s famous Santa Ana volcano. Each step from growing, processing and roasting is done by Tomas and Andres Trigueros of Jags Head Coffee. The beans are dried using the natural process; consistently turned by hand to ensure they dry equally over a period of four weeks. This slow process allows for the bean to interact with the natural sugars from the cherry (the fruit around the bean) over a long period of time, giving the final bean a more fruit-forward flavor. Our goal was to bring together the best Salvadoran Coffee and Rum.

PROCESS

Ron Colón Salvadoreño Coffee Infused Rum 111 Proof is cold macerated with whole coffee beans for 48 hours. This allows enough time for the coffee beans to release their rich cherry, chocolate, and honey flavors before the bitter notes begin to impart on the liquid.

TASTING NOTES

The coffee infusion brings notes of dark chocolate and dried sticky plums. A medium to dark roast gives the rum a rich, warming, nutty flavor with a tiny hint of bitterness. This is balanced from the notes of the aged rum of fresh banana and juicy pineapple.

His favorite pastime brought him into contact with fantastic rare Caribbean rums. He felt he needed to share these with his fellow Americans, which is how Holmes Cay came to be. Passionately standing behind the tradition and honor that is an integral part of rum, Kaye hopes to bring incredible as-of-yet-unknown unadulterated cask-strength rums to the US, introducing spirit-lovers to the best-kept secrets of the rum world. Their very first release Holmes Cay Barbados 2005 fittingly came from the legendary Foursquare Distillery in Barbados. The Holmes Cay Fiji Single Cask Rum was distilled in 2004 at the South Pacific Distilleries of Fiji. The 16-year-old pot-still rum was matured tropically in an ex-bourbon barrel for 12 years, then 4 years in the UK in an American oak cask, then bottled in 2020 at 116 proof without chill filtering. The cask yielded 240 bottles of this premium unadulterated rum.

The Holmes Cay Guyana Single Cask expression is a premium Caribbean rum that was distilled in 2005 in Guyana at Demerara Distillers. This 15-year-old pot-still rum was matured in the UK in an American oak recycled rum cask.

TYKU is a premium sake brand and one of the fastest-growing in the US. It is handcrafted in Umenoyado Brewery in "The Birthplace of Sake", Nara, Japan. The brewery has won the prestigious Japanese sake competition Zenkoku Shinshi Kanpyo Kai 10 times. The Umenoyado Brewery has been overseen by the Yoshida Family for 5 generations and is currently ran by Kayo Yoshida, the first female brewery owner in Nara. The iron-free and soft pure water is sourced from the underground springs and the production of sake is natural, using only 4 simple ingredients: non-GMO rice, water, yeast, and koji, a mold that is used for breaking down starches into sugars. Sake is mainly produced using traditional methods and TYKU is no different. First, the residual powder, left over from polishing the rice, is washed off. The rice is then steamed, before being sprinkled with koji mold and yeast and left to ferment. The liquid then gets pressed from the mixture and gets filtered. After pasteurization, the sake is matured in barrels for around 3 weeks before finally being bottled. The special edition Tokubetsu Benihana Sake was created in partnership with the American Benihana restaurant company and is a Tokubetsu Junmai. Junmai is a premium sake where 30% or more of the rice is polished off. A special blend of sake rice is used along with ultra-purified water, making for an exceptionally smooth and subtle sake that is meant to be enjoyed chilled and with a wide variety of cuisines. 

Coconut Cartel Special is a premium tropical sipping rum. It starts off with reserve selection of the finest single-origin Guatemalan Añejo rum. 

The magic happens when we use freshly harvested coconut water to down-proof our añejo blend from cask to bottle strength (80 proof).

At our 100% vertically integrated distillery in Guatemala we grow and press our own sugarcane, ferment, distill and barrel rest our rums in American White Oak for up to 12 years. 

Our regionally grown coconuts are of the Maypan and Panama Tall Varietal. This special breed of coconut is jam packed with electrolytes and minerals, with a nutty flavor and just a tad of sweet and saltiness. By combining these two naturally synergistic ingredients together we created the smoothest tropical sipping experience, in the world!

TASTING NOTES

This deep amber whiskey has a complex aroma of vanilla, mint and molasses. Pleasantly sweet to the taste with notes of brown sugar and spice that give way to oak, toffee, dark fruit and anise. This whiskey finishes long and smooth with serious depth.

The Prisoner Red Blend was inspired by the wines first made by the Italian immigrants who originally settled in Napa Valley. The Prisoner is now the most recognized red blend, leading the resurgence of interesting blends by incorporating Zinfandel with the unlikely mix of Cabernet Sauvignon, Petite Sirah, Syrah, and Charbono. Bright aromas of ripe raspberry, vanilla, and coconut give way to flavors of fresh and dried blackberry, pomegranate, and vanilla, which linger harmoniously for a smooth and luscious finish.
