In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. Our mission is to produce the finest hand-crafted spirits made with our own grain, floor malted, craft distilled in our copper pot still, aged in fine oak and hand bottled at our estate in the Hudson Valley Highlands. Crowned by a fine 1806 Georgian house built by a successful grain merchant and Revolutionary War Captain and meticulously restored to its original beauty, Hillrock Distillery overlooks our rolling barley fields and the distant Berkshire Mountains. Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. By controlling every aspect of production from planting & harvesting heirloom grains, to smoking our malt, to crafting whiskies in our copper pot still, to aging in small oak barrels and hand bottling, we are able to create the highest quality whiskies reflecting the unique local terroir.

After aging in Hillrock's Solera and Oloroso Sherry casks, this unique American whiskey is then finished in fine Shea Vineyard Willamette Valley Pinot Noir wine casks. The multi-barrel aging of this copper/amber whiskey with slight chestnut hues offers a nose full of bright red fruit (ripe cherries, blackberry and plums) and sweet desserts (taffy, crème brûlée, creamy caramel and candied almonds). Warm vanilla and cherries, with sweet notes of toffee and French oak complimented by a bouquet of floral and fruity notes – complete the palate before leading to lingering rye spice, dried plums, allspice, nutmeg and vanilla flavors.

About the Wine
The 2021 Apothic White is a vibrant blend of four varietals grown from California and Washington state. Chardonnay leads the blend while Pinot Gris, Riesling and Viognier add fragrant aromas and complexity. Layers of green apple, lemon zest and tree-ripened apricot open to a palate layered with notes of white peach and vanilla undertones. The finish is bright and crisp.

Viticulture Notes
Ongoing drought conditions throughout California caused a slight reduction in crop size in 2021. Mild summer conditions allowed the fruit to take its time ripening and developing optimal flavor concentration. Washington state experienced some prolonged heat spells, which also caused a slight drop in crop size. Harvest in both viticultural regions produced yields of high-quality grapes with excellent quality.

Winemaking Notes
To retain the natural characteristics of each varietal, we fermented the blend at cool temperatures. The Pinot Grigio, Viognier and Riesling were fermented 100% in stainless steel tanks to preserve delicate fruit aromas. Select lots of Chardonnay were fermented and aged on oak to add a touch of vanilla before undergoing malolactic fermentation to enhance fruit character.

Willett Pot Still Reserve Straight Bourbon Whiskey is a premium bourbon whiskey produced by the Willett Distillery, a family-owned and operated distillery located in Bardstown, Kentucky. The distillery was established in 1935 and has been producing high-quality bourbon ever since.

The Willett Pot Still Reserve Straight Bourbon Whiskey is named after the copper pot stills that are used to distill the whiskey. These stills are made of copper, which is believed to impart a unique flavor and character to the bourbon. The whiskey is made from a mash bill of corn, rye, and barley and is aged for a minimum of four years in charred oak barrels.

One of the unique aspects of the Willett Pot Still Reserve Straight Bourbon Whiskey is its high proof. This gives the whiskey a richer and more complex flavor profile, with notes of vanilla, caramel, and oak.

The Willett Pot Still Reserve Straight Bourbon Whiskey is also known for its distinctive bottle design. The bottle is shaped like a pot still, with a bulbous base that tapers up to a narrow neck. The label on the bottle features the Willett family crest, which includes a pot still and the motto "The Price of Perfection."

For this expression of Colkegan Single Malt Whiskey, Santa Fe Spirits takes Colkegan from select aged barrels and transfers it to freshly emptied Apple Brandy barrels, where it continues to age for a minimum of one year. This mellows and sweetens the Colkegan, resulting in a whiskey Whisky Advocate described as having “soft and juicy aromas of ginger juice, apple tart, strawberry shortcake, and light, sweet smoke” with “a good deal of apple, poached pear, marmalade and light smoke” on the palate, and which they awarded 89 points.

Santa Fe Spirits bottles all of its Colkegan Apple Brandy Cask Finished from small batches, so each batch will have its own unique flavor. With the Apple Brandy Cask Finished we like to maintain the differences.

Santa Fe Spirits was founded by Colin Keegan in 2010 with the goal of becoming the Southwest's pre-eminent artisan distillery. With products ranging from silver whiskey to barrel-aged apple brandy, Santa Fe Spirits is a relatively small distillery proud to be producing exceptional spirits designed to capture and accentuate the essence of the southwest.

Naturally aged for at least four and a half years, the bold and full-bodied blend of DUSSE VSOP Cognac is made from a selection of the finest eaux-de-vie, including some that were carefully matured in the cellars of the Cha^teau de Cognac. The result is a uniquely powerful Cognac that begins with bold intensity and finishes pleasantly smooth and balanced.

Natural humidity of the cellars impacts evaporation and maintains the perfect balance of humidity, dryness and temperature, unique aging conditions found only at the Cha^teau de Cognac. Produced using the Charentaise method - slow double-distillation in copper stills.The lees (spent yeast cells) are kept in the wine to add additional depth and character to the eau-de-vie.

The Fairies in the story of Clanyard Bay are well suited to this more delicate, and subtle single malt whisky. In 1887 it became the first distillery north of Inverness to have electricity and a telephone. Teaninich remained in Munro family hands up until 1904, when Robert Innes Cameron, formerly a major shareholder, became the sole owner. In 1970 the distillery was greatly expanded, and an entire new building with six new stills was taken in operation. The four older stills remained in operation alongside the new stills.

Tasting Notes

Nose: A fragrant nose, with citrus fruit orange oils and cut grass. Freshly cut hay, chamomile and tangy apple promise a light and fascinating single malt. Soft bitter notes drift into roasted coffee beans and soft malt.

Palate: Toasted hazelnuts develop into warm baked apple pie. Baking spices linger and finish with a soft peppery prickle. With water added becomes dry with a whisper of smoke, and beeswax note mid-palate.

Finish: Long-medium finish and quite dry. Bitter orange marmalade and freshly baked biscuits bring a close to the fascinating whisky.

Meukow XO is the fruit of the blend that combines the power of the tannins brought by the long aging in oak wood barrels and the delicacy of Grande and Petite Champagne eaux-de-vie with the sweetness of Fins and Bons Bois eaux-de-vie.

Description

Our Cucumber Gin is made with 8 botanicals, including fresh, crisp cucumbers. We macerate and steep cucumbers into the spirit with our other botanicals for four days before re-distillation. The large citrus component helps lift the cucumber into a beautiful, light and bright flavor profile.

We have won several awards for this spirit, most recently receiving a Gold Medal from the Denver International Spirits Competition. This Gin is delicious in a classic Gin and Tonic or used to brighten your favorite cocktails.

Maotai, also known as Moutai, is a type of baijiu, a Chinese liquor distilled from fermented sorghum. It originates from the town of Maotai in Guizhou province and is manufactured by the state-owned Kweichow Moutai Company. The drink comes in various forms and is made using basic ingredients like grain and water, then aged for four years in urns before being available for sale.

CAMUS BORDERIES VSOP is a Single-Estate Cognac produced exclusively from CAMUS’ own magnificent vineyards in the very heart of the prestigious Borderies Appellation.

Borderies is the oldest and smallest cru in the appellation, representing less than 5% of the cognac AOC. With its 188 hectares (464 acres), CAMUS owns the largest extension of vineyards belonging to one single producer within the Cru. Thanks to their unique clay-limestone soil rich in flints, our parcels in the Borderies Cru give origin to a very distinctive Single Estate VSOP, with deep floral notes.

TASTING NOTES

Color: Beautiful, consistent orange color with flashes of rich amber.

Nose: Reveals enticing notes of vanilla pods and orange zest, on a bed of soft spice and floral aromas.

Palate: Ample and unctuous, with a robust yet elegant structure and a light hint of woodiness. Beautiful, long finish, well-balanced and wonderfully fresh.

Taste: The rye whiskey starts with sweetness. Hints of cherry pits and vanilla, and then the spice of the rye comes in on the tip of my tongue, but it has a soft mouthfeel to it.

Mid-palate, there are subtle notes of caramel and golden maple syrup with some tobacco and cinnamon notes as it becomes buttery smooth, and well-rounded between the sweet and spicy characteristics. 

Finish: A nice clean finish with ginger, black pepper spice, and moderate warmth with a dry sawdust bite.

Beautifully lush and expressive, this alluring Merlot draws you in with aromas of black currant, black cherry, boysenberry and sweet baking spices. On the palate, it is plush and polished, with silky tannins carrying the luxurious dark berry, creamy mocha and bittersweet chocolate flavors to a long, supple finish.

Production
The growing season began with minimal winter rains and a mild spring. With drought conditions throughout California, we carefully tailored our vineyard practices to ensure balanced crop loads. With slightly elevated temperatures, budbreak at our North Coast vineyards was approximately two weeks ahead of the cooler Central Coast. As a result, our North Coast harvest concluded on October 15th, with our harvest on the Central Coast wrapping up on November 6th. In both regions, the berries and clusters were smaller than average, producing lower yields but deeply concentrated flavors, aromas and textures. Overall, the resulting wines are of exceptional quality, with lovely balance, excellent natural acidity and bright, juicy flavors.
