The Hakushu 18 Peated Malt is made up of carefully selected malt whiskies all aged for a minimum of 18 years in various casks, created in honor of Suntory Whisky's centenary. The Hakushu Distillery blenders work with peat, while softening the palate using the exceptional mountain water of the area, filtered through ancient granite rocks. Refined and elegant, this centennial Hakushu Peated Malt brings smoke that is less strong, never dominant and in typical Japanese style, more complex and gentle. The creation of the 2013 vintage reveals the resonance between the pinots noirs and chardonnays, between acidity and fullbodied. The precise, elegant and tactile bouquet blooms in an extremely delicate powdery aromatic braid around three nuances: first citrus, then a more vegetal facet and lastly, spices. This precision reveals a simple and evident elegance where the wine, after an ethereal attack, amplifies and blossoms before ceding to an ineffable sensation of clarity.

The delicate nose unfolds in swaths of color. The green of eucalyptus, mint and vetiver, the yellow-orange of mirabelle plums, apricot and orange blossom, the brown of pepper, cardamom and licorice sticks, and finally silvery saline and toasty hues. The oak continues to reveal itself, adding notes of vanilla, combined with a honeycomb sweetness and freshly roasted coffee beans.

Taste
Luscious at first with succulent fruits and a distinctive creaminess along with a herbal quality akin to camomile tea. The pot still spices add depth and intrigue as they weave amongst the floral grain qualities found lingering throughout. Buffalo Trace Distillery began experimenting with recipes and barrel treatments more than two decades ago. Currently there are more than 30,000 experimental barrels of whiskey aging in its warehouses. Periodically, an experimental whiskey is bottled and sold on a limited basis.

For this limited release, we took an exceptional 15-year-old Kentucky Straight Bourbon and finished it for one year in new French Oak barrels sculpted by the virtuoso artisans of Tonnellerie Leroi, one of France’s most renown cooperages. The exquisite bourbon that has emerged from these barrels is as luxurious in taste as it is in appearance.

Bourbon is the quintessential American Whiskey. A storied spirit whose French roots have been strong since its inception over two centuries ago. This 16-year-old Limited Edition Rabbit Hole Founder’s Collection expression is an homage to bourbon’s French connection.
