Mezcal Cómplice Espadín Orígenes is meticulously crafted by Mezcalero Humberto Hernández in San Juan del Río, Tlacolula, Oaxaca, using 100% Agave angustifolia, commonly known as Maguey Espadín. The agaves are carefully cultivated for approximately 8-10 years until they reach maturity, at which point they are harvested. Following the harvest, they undergo cooking in a traditional river-stone pit oven. The cooked agaves are then crushed using a tahona, a stone wheel operated by a horse.

After the crushing process, the agave juice ferments in oak wood vats before undergoing a double distillation in copper stills. This specific release, known as Orígenes, serves as an introductory expression within the range of Mezcal Cómplice mezcals. With a lower alcohol content of 38%, it caters to those who may not be accustomed to the strength of traditional mezcal. Notably, this mezcal exhibits enticing notes of citrus, delicate fruits, and a subtle touch of smoke.

The name Cómplice Mezcal holds a fascinating tale behind it. It revolves around a man who, one night, learned about a legendary mezcalero renowned for capturing the essence of individuals within the drops of mezcal. Driven by curiosity, the man embarked on a quest to find this master of the craft. After an extensive search, he eventually discovered the fabled teacher. Following a long conversation, the master agreed to share his secrets, establishing a mutual complicity: whenever any descendant of the man encountered the teacher, they would be taught the art of capturing a person's essence in mezcal in exchange for preserving the secret within their family. Consequently, through generations, this family has safeguarded the unique flavor and secret of Cómplice Mezcal.

Tanduay has been crafting Asian rum since 1854, bringing a mysterious Eastern twist to the spirit. Headquartered in the Philippines, its origins go back to a distillery from Hagonoy, Bulacan, that was bought in 1856 by Ynchausti y Compaia, a multi-national company that was owned by the Ynchausti family, the seal of which still decorates their bottles today. By the 1900s the production had moved to the Manila distillery, and the brand Tanduay Rhum was formed, named after the area in which the distillery was located. The rum was produced in the significantly upgraded distillery in Manila until 2013, when it was decommissioned and the production moved to a much larger facility in the Philippines, capable of producing 100,000 cases each day. Since 1999 Tanduay Distillers, Inc. is owned by LT Group, Inc. In 2011, Tanduay was the 7th largest spirits brand in the world. Today their operation spans 4 plants that take care of aging, compounding, and bottling. At the heart of their lineup is an award-winning 5-year-old rum that matures in charred oak barrels. The brand has received over a hundred various awards over the years and sells over 20 million cases each year, making it one of the best-selling rum brands in the world. Tanduay Asian Rum Gold was aged for 7 years in barrels that used to hold bourbon. It has a smooth and complex profile with a distinct nuttiness, dried fruit, spices, and oak. The award-winning expression is bottled at 80 proof and is great for sipping, but works just as well in cocktails. It has garnered numerous awards in recent years, including a Gold Medal at the International Review of Spirits and a Silver Medal at the San Francisco World Spirits Competition both in 2018.

Buffalo Trace Distillery produced this Wheat Recipe Bourbon in a partnership with the Chicago Rabbinical Council (cRc). Made with the same high quality grains as W.L. Weller Bourbon Whiskey, this Kosher spirit was aged in specifically designated Kosher barrels. In order to satisfy Passover requirements, these barrels were sold to a non-Jewish executive in a ceremony witnessed by a representative from the cRc. After aging for seven years, this Wheat Recipe Bourbon was bottled at 94 proof after ensuring the bottling lines were cleaned beforehand and that no contact was made with non-Kosher spirits. Released after Passover each year, this Wheat Recipe Bourbon stands alone, a tribute to the legacy of America’s oldest continually-operating distillery.

TASTING NOTES

In 1876, John D. Willett one of Kentucky's original bourbon aristocrats transferred his interest in the Willett & Frenke Distillery to his son-in-laws, Benjamin Mattingly and Thomas Moore. Mattingly and Moore continued to operate the Willett & Frenke Distillery together until 1881, when Mattingly finally sold his stake in the company to a group of investors. Within a few years, Thomas Moore acquired complete control over the distillery and eponymously renamed it. Moore would continue to operate the distillery for another five decades, until he was ultimately forced to close his doors at the onset of Prohibition. Today, the Barton 1792 Distillery operates on the same site as the historic Tom Moore Distillery, and continues to use the same methods that Moore used over a century ago when distilling his own bourbon. 1792 Small Batch Kentucky Straight Bourbon Whiskey is made from a mash of corn, rye and malted barley. While the use of corn in the bourbon's recipe adds classic notes of buttered bread, biscuits and roasted nuts, the heavy use of rye in the bourbon's mashbill yields a more complex and full-bodied whiskey. After the grains are harvested, they are mashed and fermented before being distilled through a copper-pot still. After distillation, the bourbon is aged in new, American oak casks for a minimum of eight years in Warehouse Z on the distillery's estate in Bardstown, Kentucky. Warehouse Z is situated on the edge of a bluff and as a result, enjoys the intense heat and humidity that are ideal for maturing whiskey. "When it comes to barrel aging," says Ken Pierce, Barton 1792's master distiller, "it's just like real estate location, location, location. That's why 1792 ages in Warehouse Z up there on the bluff." In addition, during the maturation process, Pierce samples each cask of bourbon as it rests to determine when the bourbon has reached its peak of maturity. "Quality in, quality out," says Pierce, who has over two decades of experience at the distillery. Once the bourbon has matured for a minimum of eight years, it is brought to proof with water drawn from the Tom Moore spring. The iron-free, Kentucky limestone water the same water used by Moore over a century ago when crafting his own whiskey adds a subtle touch of complexity and depth to the bourbon. 1792 Small Batch Kentucky Straight Bourbon Whiskey, which was named after the year that Kentucky achieved statehood in the United States, earned the Double Gold Medal at the San Francisco Wine and Spirits Competition in 2011 and earned a score of 95 points the same as Pappy Van Winkle's 23 Year Old Bourbon at the Ultimate Spirits Challenge in 2012. After emigrating from Wales to Kentucky in 1783, Evan Williams established a distillery along the banks of the Ohio River. The location of his eponymous distillery, situated on the banks of the Ohio River, is officially marked, declaring Evan Williams as Kentucky's First Commercial Distiller. Evan Williams was an American pioneer being one of the first distillers in the US to use corn. The Evan Williams brand was founded in celebration of Williams. Heaven Hill produces their signature bourbons which are bottled in Bardstown, Kentucky. Evan Williams has long been ranked as one of the world's best-selling whiskey brands. Heaven Hill distillery was founded in 1935, Immediately after Prohibition ended in the United States in 1933, after a group of investors decided to be ready for the rebounding market. The investors including the famous Joseph L. Beam. Heaven Hill is located on a massive estate boasting 22 multi-story rick-houses across hundreds of acres of land. Now known as the Heaven Hill Bernheim Distillery they have the second-largest inventory of Bourbon Whiskey in the world. It is also the only remaining family-owned distillery in Kentucky. Evan Williams has a diverse core lineup, including their very popular signature Black Label, as well as some limited releases. Every year since 1983 Master Distiller Parker Beam (and now his son Craig) have chosen select barrels for their single barrel series, barrels selected to their exact specifications. This Evan Williams Single Barrel Vintage Bourbon is a five-time "Whiskey of the Year" award winner. This series is vintage dated, meaning each bottle is marked with the vintage date it was put into oak, along with the year it was bottled and the exact serial number of the single barrel that the Bourbon was drawn from. Carefully handcrafted for 7-8 years in the barrel, this premium and highly acclaimed Bourbon has notes of tropical fruit, vanilla and caramel and peanuts.

Method of Production: Single-distilled to 40% ABV (80 proof) requiring approximately 3 kilos (7 lbs.) of torontel (torrontés) grapes to produce one 750ml bottle. Distilled from 100% fully fermented grape juice (pure wine--no pomace) and rested a minimum of six months with no additives of any kind: no color, no water, no sugar, no wood flavoring. Distilled through traditional, flat-top falca stills.

Vuelo del Aviador crafts artisanal tequila of the highest quality in Jalisco, Mexico. Their lineup of luxury spirits consists of the Plata, Reposado, Aejo, and Extra Aejo. The finest blue weber agaves used are fully-matured, meaning they have been growing on the estate for 7 to 9 years. They are then cooked slowly in clay ovens for 72 hours before the pulp is fermented and distilled using copper-pot stills. The different juices then get aged for varying amounts of time, from the Plata which takes 4 months, to the Extra Aejo which takes 5 to 7 years. Different casks are used for maturation. These include French and American oak, Napa Valley red wine barrels, as well as whiskey casks. The Gran Reserva Plata rests for 4 months before being bottled at 80 proof. "Vuelo del Aviador" is Spanish for "flight of the pilot", hence the wings in the design of the bottle. The smooth spirit has floral, vanilla, and fruity notes and has won a Double Gold Medal at the 2020 edition of the San Francisco World Spirits Competition. The handcrafted tequila is smooth and delicate, making it a perfect sipper.
