Caymus has a signature style that is dark in color, with rich fruit and ripe tannins, as approachable in youth as in maturity. Since its founding in 1972, Caymus has become renowned as a consistent leader in the production of Napa Valley Cabernet. Grapes for this wine are farmed in a range of Napa’s sub-appellations – from Coombsville to Calistoga – with fruit from the valley floor creating lushness and the hillsides providing backbone. Diversification enables us to make the best possible wine in a given year, featuring layered, lush aromas and flavors, including cocoa, cassis and ripe berries.

WEALTH AND AUTHENTICITY

The rich and intense style of Jamaica and Barbados, with their notes of plum, banana and vanilla, is enhanced by meticulous blending and further maturation, in France.

The result is a profound structure spiced with notes of cinnamon and clove, whose smoky quality adds texture.

TASTING NOTES

Nose : Hints of black peppercorn, clove, cinnamon, baked cherry, prune, molasses; later sniffs encounter forest, leaves, black tea, dry stone.

Palate : Entry is fruity with white raisins, dried pineapple, and is off-dry. midpalate is spicy, piquant, minerally, and significantly drier than the entry stage. Ends spicy.

Ultramarine is inspired by an iconic deluxe blended Scotch, in particular the first bottlings of the late 1980s and early 1990s. Harnessing old school Sherry
casks and ethereal peatiness, Ultramarine highlights the enchanting possibilities, and the breadth of flavours and textures, afforded by combinations of aged malt and grain whiskies.

Powerfully flavoursome and impressively textural, the first release in the Extinct Blends Quartet relies on mature malts from the Caol Ila and Glendullan distilleries; aged grains from the Cameronbridge and Girvan distilleries, as well as a medley of pre-blended stocks.

Bottles of Scotch whisky are time capsules. Even more than single malts, blends can reflect the production methods and philosophies that prevailed in Scotland during specific eras. Scotch is constantly evolving, and blends aggregate these trends and adaptations.

Fashions change, and formulae follow suit. Blended whiskies of the 1970s, '80s and '90s are very different to today’s versions, even when the brand name remains the same. The Extinct Blends Quartet reimagines four of our favourite blended Scotches from yesteryear, using some of our rarest and most idiosyncratic stocks of whisky.

Toffee, antique polished oak and complex peatiness are primary aromas, with a palate of roasted pecan, raisins and smoke.

Like the forests along Okinawa’s shores, Hayashi 24 is an expression of the land it comes from. Crafted with indica rice and bourbon casks, Hayashi transforms a 500-year-old awamori tradition into a radiant 24-year-old whisky.

The Breckenridge Distillery is the “World’s Highest Distillery”. Founded in 2008, the Breckenridge Distillery is most widely known for its blended bourbon whiskey, a high-rye mash American-style whiskey. Meaning “aged” or “vintage”, is tequila that has been rested in small oak barrels for more than 1 year. Naked Diablo’s Añejo is aged to perfection in smaller batches for a minimum of 16 months in 10 year old Bourbon oak barrels. Rich, distinctive, and wonderfully smooth, this light amber tequila is full-bodied and strikes the perfect balance between bourbon, honey drizzle, peppercorn, toffee, agave, wood, and hints of vanilla. It is best experienced neat or simply on the rocks.

OBTAINIUM is exactly what the name implies. We “obtain” barrels from distilleries all over the world. Including the US, Europe, Canada, and The Caribbean. We source these spirits of varying types, light whiskey, rye, bourbon, etc. to create our own blends and products. These products are bottled at either barrel strength or blended to create our signature flavors. That being said, all of our creations, whether it’s a single barrel bottling or one of our blended products, will be unique either to that particular barrel or batch. No two will ever be “exactly” the same. We strive to ensure flavor consistency
throughout every batch of our blends to give our fans confidence and the comfort of familiarity. That paired with slight variances in each batch, brings a sense of anticipation for the next batch.

OBTAINIUM Light Whiskey came into existence in 1968 because consumers were moving away from Bourbon and more into clear spirits such as vodka or gin. Light whiskey is distilled between160-190 proof. Contrast that with Bourbon or American Rye which tops out at 160 proof. It must be aged in used, charred oak barrels or new, uncharred oak. Most distilleries didn’t let it age very long. Sourced from MGP in Indiana.

Avuá Oak Cachaça, following Brazilian tradition, is aged for up to 2 years in French Oak, or carvalho, previously used to age white wine. Carvalho, the most common wood used for cachaça-aging in Brazil, imparts notes of vanilla and butterscotch. Oak-aged cachaça finishes dry with a slight bitterness that has many layers for an exquisite sipping spirit. It is also the perfect base for stirred cocktails and tropical cocktails like the Mai Tai or Planter's Punch.

Bird Dog Blackberry Flavored Whiskey is crafted by infusing two hand selected, all-natural blackberry flavors. The distinctive taste was nationally recognized during the 2010 San Francisco World Spirits Competition.

Tequila Ocho Reposado Barrel Select Widow Jane 2022 undergoes a meticulous production process that starts with hand-harvested blue Weber agave grown in the Jalisco Highlands. The agave is carefully cooked and crushed to extract its flavorful juices, which are then fermented and distilled to create a high-quality tequila.

Following distillation, the tequila is aged in carefully selected oak barrels. This particular expression benefits from the expertise of Widow Jane, known for their unique aging techniques and selection of exceptional barrels. The aging process allows the tequila to develop its characteristic flavor profile and acquire the desirable attributes associated with a reposado tequila.

Inspired by a passion for tradition, born as a tribute to a queen, crafted with a desire for perfection. The story of Royal Salute is unlike any other whisky.

In 1953, the young Princess Elizabeth ascended the throne. The occasion called for a tribute fit for a queen and so an exquisite blend was created using whisky from Strathisla, the oldest working distillery in the Scottish Highlands. It was given the name Royal Salute – after the famous 21-gun-salute – and so began the story of a remarkable whisky.

The Chinese New Year Special Edition, featuring our iconic 21 Year Old Signature Blend, was designed to celebrate the arrival of the New Year.

The illustration features traditional Chinese symbols including the dragon and lucky knotwork to bring you and your family health and prosperity in the coming year.

Aromas of sweet pears and citrus fruits are balanced with notes of autumn flowers. Aromas of sweet vanilla and oak are enhanced with notes of sherry and smoke.

The Busker Pot Still is a distinctive expression of Ireland with an exceptional character. After Ben Iravani and Josh Rennielauched their trendy bar in Aberdeen, Scotland in 2009 they decided to experiment with an ideal recipeof botanicals infusions andunique methodsto extract the herbs and spices using a cold vacuum distillation. Together with university professor Andrew Porter they created a special vacuum still, subsequently naming their gin after him. The distillate used for Porter's Gin is sourced from G&L Distillers near Manchester. This spirit is infused with juniper, coriander seed, angelica, licorice, citrus zest, almond, and cinnamon. These custom vacuum stillsprocess pink peppercorn, cassia, and Buddha's hand a rare Asian citrus fruit with spindly fingers-like lobes. You can expect bright notes of citrus and baking spice with ample pink peppercorns, followed by crisp clean finish with a subtle lingering nuttiness.

Black Steel is a very limited-release straight Kentucky small batch bourbon crafted by bourbon connoisseur Guy Beahm, also known as the gaming legend Dr Disrespect, and an award winning history-making Master Distiller, Marianne Eaves. Together, this unwieldy team created a delectable small run of bourbon that speaks for itself. Black Steel Bourbon delivers a smooth yet wildly distinctive flavor profile enveloped with notes of sweet grain, charred wood, green apple, vanilla bean, and citrus peel at 93 proof. It's the perfect combination of artistry and tradition with an unconventional revamp of what it means to be a bourbon.

Winemaking Vineyard
Cabernet Sauvignon is synonymous with Napa Valley and has always been a mainstay in the winemaking program at Stags’ Leap Winery. Our Napa Valley Cabernet Sauvignon is a combination of grapes from select Napa Valley growers with a focus on sourcing from the valley floor. Our winemaker selects fruit that is similar in expression to the grapes from the Stags’ Leap estate, avoiding fruit from areas he considers to be too warm and instead sourcing grapes from the southern part of Napa Valley, where the climate is cooler. This strategic sourcing ensures the focus and character for which Stags’ Leap Cabernet Sauvignons are known.
