Inspired by the farmers' markets in Marin County, California, Allison Evanow set out to create a new vodka from scratch, or rather, square one. Evanow had previously been Head of Marketing at a Napa Valley winery, and then became a brand ambassador at Jose Cuervo, which rekindled her love of spirits and mixology. "The creativity of spirits,"she says "is at so many levels. How you make the spirit itself How you create a cocktail using your spirit of choice How do you serve the cocktail How fun is that" Square One Organic Vodka is a vodka distilled entirely from organic rye grains harvested from North Dakota. The state's alpine climate and dry environment North Dakota experiences an average of only 17 inches of rainfall each year and temperatures as low as 60 F result in grains that are exceptionally flavorful and plump. After the rye grains are harvested, they are milled and mashed before being organically fermented (Square One's proprietary fermentation process took nearly two years to develop). By using only natural yeasts during the fermentation process (no genetically-modified yeasts, phosphates or anti-foaming agents of any kind are introduced), the vodka is able to retain its unusually soft and delicate taste. Once the grains have been fermented, they are distilled in a single pass through a four-column continuous distillation still. Following distillation, Square One Organic Vodka is filtered and brought to proof with pure spring water sourced from the Snake River. It has notes of nutty dough, white pepper and spicy rye that are balanced by a subtle vanilla undertone, and lead to a clean, smooth finish. Square One Organic Vodka was named one of the of "Best Ever"vodkas by Trump Magazine, and earned a score of 94 points from the Beverage Testing Institute.

"Distilling in Wales was a lost art..."

Penderyn produces award-winning single malt whiskies and spirits at their distillery on the foothills of the Brecon Beacons National Park, Wales, UK.

Distilling in Wales was a lost art, but in the late 1990s, in a pub in Hirwaun in the Welsh valleys, a group of friends chatted about establishing the first whisky distillery in Wales in over a century. They dreamt of creating a whisky as pure and precious as Welsh gold, represented today by Penderyn’s ‘gold seam’.

The village of Penderyn was chosen because of the site’s own supply of fresh natural spring water. A unique copper single-pot still designed by Dr. David Faraday, a relative of the great 19th-century scientist Michael Faraday, was installed, which produces a spirit at an industry high of 92%. On St David’s Day 2004 Penderyn whisky was launched in the presence of HRH Prince Charles. An expansion in 2013/14 included a replica of the Faraday Still, and two lantern stills being installed.

With investment, inspiration, hard work, attention to detail, the finest barley, expert female distillers, and the best American oak bourbon casks, Penderyn Whisky has quickly gained a worldwide reputation for its range of whiskies, winning over 70 Double Gold/Gold/Masters awards en route. Today Penderyn is now very much part of the world's whisky conversation and is available in over 45 countries.

As a result of the company's progress, a new distillery opened in Llandudno North Wales in May 2021, and a further distillery is planned for Swansea, in South Wales, in 2022.

This Portwood-finish whisky is a firm favorite among our customers in France and is a full-bodied whisky. 

Tasting Notes

Nose: Aromas of rich dried fruits with dark chocolate and cranberries; a hint of toasty oak mingles with a baked nutty dryness

Palate: A creamy richness with some honey and spiced notes emerging

Bruichladdich Octomore 11.1

Exposing the structural brilliance of our pure, unadulterated Octomore super heavily peated spirit, our 11.1 edition is powerful, understated and vibrant. Underpinned with a delicate balance of smoke and sweet vanilla from the ex-American oak casks, this single malt has spent just 5 years in contact with fresh first fill wood. The presence of peat on the palate is huge, and yet is incredibly balanced with clean fruit and floral notes. Distilled in 2014 from the 2013 harvest of 100% Scottish barley then filled into active ex-American oak, this high provenance, high peat single malt is a fitting embodiment of how quality ingredients demand less time to reach maturity.

TASTING NOTES

CHARACTER: Lithe, sleek with intense earthy peat notes, balanced by the presence malt sugar, vanilla and oak. The scents of Islay in a glass – the ozone fragrance of the sea, bog myrtle from the moss and peat smoke in the cold night air and at the heart of it all a warmth that brings harmony to the whole.

AROMA: Initial notes of Lemon, wet peat, pencil shavings, and a salty minerality. Peach yoghurt, cinder toffee, rubbery smokey almost antiseptic notes come from the peat smoke, well balanced with the green fruit and malty notes coming through the spirit. Honey, malt sugar, dried grass, come through with time with a little hint of ginger and wood spice.

TASTE: Brown sugar sweetness hits the palate initially. The chilli heat of high strength carries the Octomore DNA across the palate, it is clean, supple in texture and has a complex combination of flavours rushing for attention. Another taste and stone fruit, apricot, that peach yoghurt come to the fore and then the cask influence appears with sweet vanilla, toasted oak, brown sugar and soft toffee. The maritime notes, the minerality and citrus all weave the Bruichladdich DNA through the flavour profile bonding the sense of place and identity in this dram.

FINISH: Malt, huge Peat notes, earthy and oily, tar and bonfires. Vanilla honey, ginger spice and syrupy sweetness.
