Municipality of Bué, we operate 1.84 hectares out of the 26 hectares of this plot. Higher up and facing south, “Le Chêne Marchand” is more “solar” than the other plots. Aging on fine lees for 5 months in temperature-controlled stainless steel vats, this historic “cru” of the appellation has a generous and gourmet profile. Its soil, limestone brings a great minerality, freshness and salinity.

Grape variety: Sauvignon Blanc grape variety (9534 bottles, 252 magnums, 40 jeroboams).

Terroir: Commune of Bué, the house has 1.83 hectares out of the 26 hectares of this plot selection. Limestone terroir, old vines.

Winemaking
Manual harvest of 40-year-old vines, southern slopes. Each grape is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of winemaking. We do a light press and only keep the drop and core juices from the press. Natural vinification in thermoregulated stainless steel vats with aging on fine lees for 8 months.

Character: Wine with a lot of complexity, dry, fruity, nice salinity.

Agreements: Wild sea bass, ceviche and raw fish.

Rich, pure and authentic, the ultimate taste experience.  4 Copas Extra Añejo is aged 50 months in American White Oak barrels carefully charred and refined in taste. The Extra Añejo is another special creation of Master Distiller Sebastian Melendrez and his all-star team over the last several seven years. In the mouth, it is silky and has a sweet texture, emitting vanilla, caramel, nuts and spice flavors. The nose is harmonious and elegant with vanilla aromas, caramel, walnut, toffee, dried peaches and orange peel tastes; special and purely organic. It is best to approach this special Tequila as a scotch or cognac drinker would, raising your level of expectation to meet the agave flavored purity. Expect to be in love with the experience upon the very first sip.

TASTING NOTES

Color: Very luminous, bright, with an intense amber color and orange nuances, full-bodied.

Nose/Aroma: Vanilla aromas, caramel, walnut, toffee, dried peaches, orange peel, from its storage in barrel; Delicate canned cherry and apple vapors, ripe banana, spices such as anise, herbal sparkles like rosemary and thyme. Cooked agave is delicate. Balanced.

Taste/Mouthfeel: It fully confirms its olfactory promise, leaving vanilla flavors, caramel, mixed nuts and spices. It is silky, sweet with great permanence in the mouth.

Aberfeldy Distillery is nestled within a lush valley in the foothills of the Central Highlands of Scotland. This 100% rye starts with pure, traditionally-grown rye cultivated exclusively for us on the Omlin family farm in Quincy, Washington. The grain is mashed, distilled & barreled in our Woodinville distillery then trucked back over the Cascade Mountains to our private barrel houses, where Central Washington's extreme temperature cycles promote the extraction of natural flavors from the oak. Prior to being coopered, the barrel wood is seasoned in open air, rain, wind, sun and snow for eighteen months softening the wood's harsh tannins. They are then slowly toasted and heavily charred to further enrich the wood's desirable flavors. The result of this meticulous process yields a truly hand-crafted whiskey with aromas of cinnamon, clove, and fruit leather, and notes of caramel, wood spice, and honey on the palate with a long, memorable finish that will leave you anticipating your next sip.

Color: Natural, light and golden.

Nose: Complex yet balanced. Buttery pastries and brioche develop into aromas of toasted malts and sweet baking spices.

Palate: Structured with a full body. Brioche quickly transitions into grassy notes. A slight woodiness balanced perfectly with vanilla and nutmeg. Refined and well-rounded.

Finish: Sophisticated and subtle. The soft spices and nutty malts balance beautifully leading to slightly sweet notes from the extra old cognac casks.

Created by the marriage of meticulously selected casks, both Bourbon and Port, this single malt Irish whiskey is a small piece of history, unique and rare. Batch No. 3 is a limited release of 13,000 bottles at 46.5%. It is a marriage of Bourbon and Port casks. A burst of blue/black fruits on the nose forms a tart almost jam like sweetness on the palate with some subtle notes of citrus peels, the liquid coats the mouth like warm honey, mixed berries and marmalade linger on the tongue.

In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. For over four generations Gonzlez family has been perfecting the tequila-making craft. To this day, they incorporate age-old processes and values handed down for generations. El Mayor represents a legacy of Tequila. Rodolfo Gonzlez is a very hands-on Master Distiller. Passionately overseeing the entire process from field to bottle, and ensuring every drop that leaves his distillery is nothing short of perfection. Rodolfo's son Paul and daughter Graciela represent the fourth generation of Gonzlez distillers and continuation of the family legacy. El Mayor tequilas are handcrafted in the fertile, rocky soils of Jalisco Mexico using Weber Blue Agave. Once harvested their hand-selected agave is chopped stacked and cooked in autoclaves, before the cooked agave is shredded and gently pressed to extract the full agave flavor. After being fermented with a proprietary, family-owned yeast strain, the agave juice is double distilled in copper lined pots. El Mayor Extra Aejo Tequila is the epitome of aging gracefully. A 100% agave tequila is meticulously aged in American white oak barrels for a minimum of three and a half years. This stunning Aejo earned Platinum at the 2017 SIP Awards and Master in the 2017 Tequila Masters Super Premium Category.
