When I first began playing guitar, I realized that if I could learn to play three basic chords — the roots of the blues — feel their meaning, and perfect their sound, I could have a career in music. I also recognized that the beauty of the perfect melody, the arrangement of those notes, and the vibrations of those tones, could impact one’s mood and elicit powerful emotions.

One night as I was sipping bourbon in my studio with friends, the conversation naturally turned to music, sound and composition. We began to wonder how blending the “tones” of various whiskeys together could create a unique “harmony” of flavor.

We knew bourbon’s role in Americana music and the American dream. We knew we loved it.  We knew that the blues and the “three chord” progression were a blank score that we could compose our own masterpiece with. Truth, heart, and integrity.

But we wanted to do more than just create another whiskey. We wanted to shake up the industry yet maintain respect for the tradition and legacy of heritage whiskeys. To look at the process differently. To create a taste profile comparable to the finest whiskeys in the world. To craft a new classic whiskey with the same precision and passion with which I create music. The product we created is Three Chord. The process with which it is created we call “Perfectly Tuned Taste.”

Our Tennessee Straight Whiskey is light yet flavorful, distilled and aged at least 36 months. Using the maple charcoal filtration process, we have refined the whiskey to a “Perfectly Tuned Taste.” Just as a three-chord progression is at the foundation of great music, Three Chord Tennessee Straight Whiskey is at the heart of a great spirit.

MASH BILL: 80% Corn / 10% Rye / 10% Malted Barley

COLOR: Rich amber, patinated copper

AROMA: Dark sugar, light smoke, vanilla bean, and bananas foster

MOUTHFEEL: Medium plus, slightly viscous

Bookers Charlies Batch 2023-01 Straight Bourbon Whiskey

MASTER DISTILLER NOTES

The color of this batch is pleasant to the eye with an amber color of a well-aged bourbon. The nose is balanced without too much wood and with hints of oak, toasted nuts, and vanilla. This is the aroma that Dad always looked for in his Booker’s. The taste is balanced with a slight warmth and has a pleasant finish. This batch came out just the way Dad liked it, and I know he would be happy that I named it for Charlie. I hope you enjoy this batch of Booker’s as much as I do.

LABEL INSPIRATION

The first release of the Booker’s Bourbon 2023 Collection is Booker’s Batch 2023-01 “Charlie’s Batch.” This batch is named in honor of Charlie Hutchens, the craftsman behind the signature wooden boxes that each bottle of Booker’s Bourbon comes in. He is also a longtime family friend and former employee of my dad, Booker Noe.

Charlie started his career working at the Booker Noe Distillery. He was quite the storyteller and would entertain others with his tall tales throughout the workday. He was also one to pay close attention to the details, doing something over and over again until it was perfect – just like Dad was with his whiskey. It’s not hard to see why they got on so well.

After several years, Charlie left the business to open his own cabinet shop with his brother. Charlie handcrafted the very first Booker’s Bourbon wooden boxes in his garage, and he’s created every box for us since. He and his brother have expanded their business to create other fine wood products for different brands and projects in the Beam family, including supplying custom furniture to the new Fred B. Noe Distillery – where Booker’s Bourbon is now distilled.

Charlie still lives near our Booker Noe Distillery and enjoys fishing and vacationing with his family in South Carolina. One of these days, my son Freddie and I hope to get out there to fish with him. Our whole family is so grateful for Charlie as he was one of the first people to help us make Booker’s Bourbon a recognizable brand. Charlie is a very worthy recipient of his own batch, and we are excited to honor him.

Hidden beginnings 
Taking advantage of a secret waterfall, generations of the Connell family made illicit spirits in the wooded hills behind where our distillery stands today. our legal status may have changed but we still use water from the same hills today, connecting us to our origins like a river to its source.

Glen of the geese 
Every winter, the hill behind our distillery becomes a beacon for migrating flocks of geese, which is why our home on the highland border is known as the glen of the geese or, in gaelic, glen guin. but our guests have inspired more than just our whisky's name. in a world that seems to spin faster every day, we're proud to be the slowest whisky distiller in scotland.

The right way is the long way
And while our methods might appear meandering, they are anything but. like those geese, we're guided by an unwavering clarity of purpose and the knowledge that sometimes the right way is a long way.

Our unique process
In the stillness of our quiet glen, we know that patience is rewarded. nothing is rushed and every stage of our whisky-making process is given as long as it needs. uniquely-shaped stills nurse the simmering wash during the longest distillation of any Scottish whisky, prolonged contact with the copper coaxing sweet and fruity notes from the gently rolling vapors. that's why our barley is only ever dried by air, allowing the true Glengoyne spirit to shine through.

Our precious casks
From here the precious spirit is transferred to casks made to order from European and American oak, themselves prepared for six years before they're ready to carry our whisky to maturity. the natural color of the whisky is a testament to decades within the wood alone. nothing else is added, this is how we craft a whisky unlike any other. this is the Glengoyne way

Glengoyne Cask Strength

Bottled at the strength it emerges from the cask, this delicious amber gold dram is un-chillfiltered, unfussed, and untamed; the closest you’ll get to open the cask yourself. 

On the nose, you’re met with baked lemon, rich sticky toffee pudding, malt biscuits, plum, hazelnut, and an unmistakable hit of zesty apple. To taste, expect a weighty mouthful of rich vanilla and fresh fruits that develop into poached pears with cinnamon spice and a drizzle of honey. The finish is long and rewarding, with Medjool dates, apricot, toffee, and honey.

From our Reflexions R Champagne collection, reinterpreted year after year to reflect the unique character of each harvest. R.018 is the heart of Lallier signature style, the perfect balance of our four atmospheres: Freshness, Purity, Depth and Intensity.

THE ORIGINS

Sourced predominantly from the 2018 harvest, which makes up 70% of the blend. Grapes were sourced from over 50 crus within Côte des Blancs, Montagne de Reims,Vallée de la Marne and Côte des Bar regions, in mid-September. An early harvest, starting late August, yieled remarkable quantities of fruit in the vineyards, with three excellent grape varieties. The resulting base wine is fleshy, rich and intense, with a delicate freshness.

THE BLEND

The harvest of 2018, which makes up 70% of Reflexion R.018 offers intense fruity notes with a delicate sweetness. The remaining 30% is made up of reserve wines from the 2014 and 2017 harvests, each dominated respectively by intensity and fruitiness.

THE EXPERIENCE

Lallier R.018 is a versatile Champagne, which can be enjoyed as an aperitif, for spontaneous sharing moments with close friends and family. It can also be a perfect pour at the start of a bright and joyful meal.

COLOR: Light golden color with jade reflections.

NOSE: Fresh and intense citrus aromas, with notes of ripe fruit, acacia flower and a touch of honey.

PALATE: A lively and fresh opening, with generous and intense character. Clean, long finish, with a slightly silky texture

El Dorado 8 Year Old Rum

Situated along the northern coast of South America, Guyana was colonized by the Netherlands in the early 17th century. Much like other European countries at the time, the Dutch used their settlement's tropical climate Guyana enjoys an average temperature of up to 89.6 F and up to 137.8 inches of rainfall annually as a source of raw, fresh ingredients that were unable to be harvested on the European continent. In 1658, Guyana began exporting sugar back to the Netherlands and within a decade, farmer's along the Demerara River began distilling their excess cane sugar into rum. By the turn of the century, the tiny Caribbean country had over 300 unique distilleries. Today, Demerara Distillers Co. the last remaining rum distillery in the country pays homage to Guyana's rich tradition of distilling fine rum with El Dorado 8 Year Old Rum. El Dorado Rum is made from fresh, raw sugar cane cultivated in Guyana's rich, alluvial soil. After the sugar cane has been harvested by hand, it is transported back to Demerara Distillery by barge. There, the molasses is fermented with a proprietary strain of yeast specifically designed to control the brix of the wash (brix is the measure of dissolved solids in a solution). Following fermentation, the rum is distilled through Demerara Distillers antique wooden and copper stills (the stills, which are up two two centuries old, were used when the country was still a settlement). Following distillation, El Dorado 8 Year Old Rum is matured in bespoke, 45-gallon American oak casks that were previously used to mature whiskey. The hand-coopered barrels are allowed to mature in a custom-built warehouse, where Guyana's intense heat and tropical climate forces the rum and wood to mingle. Once the rum has rested for a minimum of eight years, it is brought to proof and bottled by hand. The rum has a dark aroma, with hints of tobacco, caramel and toffee. Notes of stone fruits, banana, creme brulee and papaya dominate the palate, and lead to a soft and slightly sweet finish with traces of oak and butterscotch. The rum was named the Best Rum of 2014 by F. Paul Pacult's Spirit Journal, which also named it one of the top ten spirits of the year. In addition, El Dorado 8 Year Old was named the second best rum at the Imbibe Magazine tasting competition in London.

SEASON 2004, EASE & GENEROSITY

With its remarkable ease and generosity, the 2004 winemaking year stands out in the history of Dom Pérignon. 
The year unfolded in a virtually ideal scenario. Each season segued to the next with ease and fluidity, devoid of disturbances or excess. A rather cool August was followed by a few weeks of dry heat that made the vintage.
The harvest began on September 24th, providing grapes that were superbly ripe. 

NOSE & PALATE - AN AFFIRMED AND PRECISE MINERALITY

The 2004 fruit remains discreet, yet more clearly defined in this second plenitude of the Vintage. Citrusy notes of pink grapefruit and blood oranges gently cede to figs. 
The additional time on the lees elevates the minerality of the vintage with the sublime maturity that is Dom Pérignon’s signature. Plénitude 2, 2004, has notes of Cocoa, mocha, roasted nuts, brioche and honey. 

The wine balances on the edge with immediacy and surprise, evolving between tension and weightlessness. 
It has an extreme, tactile precision, deep and sculptural. 
The sensations come together in a persistent and elegant finish, underlined by sappy, licorice notes.

FOOD & WINE PAIRING

Dom Pérignon Vintage 2004 Plénitude 2 offers attractive pairing possibilities, diving into concepts, ingredients, styles, to explore different recipes.
The wine is vibrant, a trait that can be revealed by lobster, molé verde and cardamom. 
The combination of veal, dashi broth and spirulina will bring out the paradoxical facet of the wine while pigeon, pistachio and kalamanci baklava will highlight its light.
The wine is tactile: a green tomato sorbet will magnify its silky, creamy character.
The wine exhibits a balanced tension: a facet that can be explored thanks to roasted pineapple, candied citrus peel and aniseed.
