The El Buho Jabali Mezcal is a very small production of 738 liters. The jabali agave is notorious for being the most difficult agave to work with due to the foam it produces and the lower sugar content. It requires three to four distillations. This agave is named after the wild boar because of it’s spikey, curved leaf resemblance to the animal. This production was also aged in stainless steel for eight months.

Produced in limited quantities , Banhez Cuishe is an incredibly easy sipping mezcal with all the tropical fruitiness, acidic dryness, and herbaceous notes that Cuishe is typically known for.

This wine is produced primarily from the terroir of “La Crau”, with the blend primarily Grenache reinforced by a strong proportion of Syrah, and complemented by Mourvèdre, Counoise and Vacarèse. The red wine of Château de Nalys is intense with a deep, dark, ruby red colour. A third of the wine is aged for 18 months in large oak vats and oak barrels. With aromas of small black fruits and spices, on the palate it has silky tannins and a powerful, long finish. This Grand Vin from Châteauneufdu-Pape is a perfect illlustration of the nobility and complexity of the wines of Château de Nalys.

This special batch of mezcal is made exclusively from Espadín agave planted 10 years ago by the Jimenez Mendez family in their field (hornos), in Santiago Matatlán, Oaxaca. After nine years the agave sprouted quiotes, which were cut, and left in the field for one year before harvesting. The resulting mezcal is a coveted family treasure called “PURO CAPÓN.”

El Buho Especial brings delicious, limited edition mezcals made from rare and wild agaves. This tepeztate expression comes from multiple batches of the rare agave, which grows wild off the mountainsides. The plant ages 25-30 years before harvesting and requires a 3rd distillation due to its low sugar content. Made only in limited edition batches, savor the tropical fruit, sandalwood and exotic peppers notes.

Glen Scotia Victoriana has been bottled at cask strength and finished in heavily-charred oak casks. Victoriana has notes of richly-spiced fruit, vanilla and oak throughout the palate, followed by a gently smoky finish.

WHAT MAKES IT SPECIAL: Blended with Extra Añejo, Aged for over 1 year in American oak barrels

At Dovetail Distillery we malt our own wheat for use in our mash bill in a hand-built cedar cabinet. We then grind the malted wheat, wheat and oats into a fine flour which is then weighed out for our small batch process. We use local water from the Sierra Nevada snow melt to cook our mash and then allow it to ferment in open containers until it is ready to distill. At Dovetail Distillery we use the tried-and-true process of double distilling in a copper pot still to produce a spirit with both a full body and flavor. White Dove is unfiltered to maintain a full flavor.

TASTING NOTES:  White Dove has a strong peppery taste up front which is followed by a buttery caramel finish that lasts on the palette for several minutes.

AROMA:  White Dove has a strong aroma of cut grass and toasted oats.

MAKER'S NOTES:  White Dove pairs well with stone fruits and anything with a floral note. White Dove can easily be substituted in place of gin due to its strong botanical flavor. White Dove is unfiltered in order to maintain a rich, full flavor and body as is the tradition of an authentic Whiskey.

The Bottled In Bond Act of 1897 was created to regulate the quality of American whiskeys. Before this act was passed, whiskey had few regulatory guidelines and was often adulterated with additives and colorants.

After the act was passed, distilleries could label their whiskey as Bottled In Bond if it met specific criteria.

American Whiskey has of course become far more regulated since 1897. Present day Bottled In Bond whiskeys use the term to signify a true grain to bottle product. Every Oregon Spirit Bottled In Bond barrel is carefully selected by our distillers, and is bottled and stamped with its unique barrel code to showcase what makes that particular barrel a part of our single barrel program.

A 6 month accelerated-aged Kentucky Bourbon. WBW has a unique flavor with a light front end of Cabernet berries with a smooth bourbon middle and a long-lasting Carmel finish on the back of the mouth. The mash was made in Kentucky, then sent in barrels to a manufacturer to accelerate the aging process by using ultrasonic waves (more Bourbon to stave contact). The Bourbon was then finished at our San Diego distillery in French Oak Cabernet wine barrels used to make Charles Woodson's Napa Valley wine.

The Ron Colón Salvadoreño rum used in RumRye is made from a special blend, creating a complex flavor profile. The blend includes a 6-year-old Salvadoran rum from Licorera Cihuatán distillery with aged and unaged pot-distilled rums from Worthy Park Estate, Monymusk and Hampden distilleries in Jamaica. By combining column-distilled and pot-distilled rums, the overall flavor offers contrasting characteristics that interact to create something quite unique.

The whiskey in RumRye is a 2017 American Straight 100% Rye Whiskey, a 4-year old straight whiskey produced from 100% rye to showcase the warm and rich spice of the grain. It’s aged in a charred new oak container, with #4 Char barrel a char level on the staves and #2 Char on the heads. The overall flavor is bold with distinctive honey like texture, fresh mint and floral notes.

TASTING NOTES

Nose: Tropical fruit with sticky banana, pineapple, fresh mint and warm honey and a hint of spice.

Palate: Bold, with notes a candied fruit, orange blossom, rich, bright and distinctive spice of a classic rye balanced with the natural sweetness in the rum.

Finish: The finish is dry, with notes of citrus and soft mint.

About the Brand

Founded in 1823, Fukano Distillery is located in Hitoyoshi City, of the Kumamoto Prefecture of Japan on the island of Kyushu. Hitoyoshi is surrounded by mountains and is known for its pure water and nature. Shigeruriku Fukano is the fifth generation of his family to run the distillery. They use a combination of malted and un-malted rice to make their whisky in a pot still. These releases are very limited in nature and only a few casks are bottled each year. For 2016 they have released a few single new oak casks and also one white label marriage of sherry and new oak casks. Fukano Distillery makes a wonderful whisky that is sold in export markets only and is not to be considered as a Japanese Whisky. It is a Whisky that is distilled, matured, and bottled in Japan.

Our Process

LOCALLY GROWN RICE, A PURE WATER SOURCE & CHARRED BARRELS

Because rice is a clean, sulfurless, distillate it doesn’t require copper stills to produce a drinkable beverage and is instead distilled in stainless steel still and distilled at a relatively low proof. After distillation the shochu, which would be called new make outside of Japan, is then transferred to new charred oak barrels and laid to rest in a warehouse that more closely resembles a Scottish dunnage than a Kentucky Rickhouse.

Appearance / Color : Warm Gold.

Nose / Aroma / Smell: The aroma is delicate but thick with florals, mixed citrus, and sandalwood.

Flavor / Taste / Palate: The palate opens up with a silky complexity stretching from exotic spices and mint to white plum and marmalade.

Finish: The palate is medium length and lingers with notes of marzipan and raisins.
