About this Chapter 7 Whisky

Blair Athol is one of Diageo's workhorse distilleries. Much of its malt whisky ends up in Bell's blended scotch. It's a beautiful distillery built in 1798 in Pitlochry. Majority of Blair Athol casks destined for blending are ex-bourbon barrels. It has a nutty character resulting from cloudy worts and short fermentation. Allowing controlled levels of solids coming across in the wash still adds a deep, rich meat loaf character.

Tasting Notes

Nose: Fruit syrup, honey and brown muscovado sugar. Apple, canned pears, peaches, apricots, and kiwis.

Palate: Barley syrup and preserved fruits. Muesli and cereal. Citrons, lemon zest, and chalk.

Finish: Vanilla, coffee liqueurs and creams.

The majority of Blair Athol casks destined for blending are ex-bourbon barrels. So, this release from Chapter 7 is a rare exception: a wine cask aged Blair Athol. The cask is likely a 2nd or 3rd fill, resulting in a complex dram rather than a dominant one.

STORY AND INSPIRATION (Written by Neil Giraldo)

When I first began playing guitar, I realized that if I could learn to play three basic chords — the roots of the blues — feel their meaning, and perfect their sound, I could have a career in music. I also recognized that the beauty of the perfect melody, the arrangement of those notes, and the vibrations of those tones, could impact one’s mood and elicit powerful emotions.

One night as I was sipping bourbon in my studio with friends, the conversation naturally turned to music, sound and composition. We began to wonder how blending the “tones” of various whiskeys together could create a unique “harmony” of flavor.

We knew bourbon’s role in Americana music and the American dream. We knew we loved it.  We knew that the blues and the “three chord” progression were a blank score that we could compose our own masterpiece with. Truth, heart, and integrity.

But we wanted to do more than just create another whiskey. We wanted to shake up the industry yet maintain respect for the tradition and legacy of heritage whiskeys. To look at the process differently. To create a taste profile comparable to the finest whiskeys in the world. To craft a new classic whiskey with the same precision and passion with which I create music. The product we created is Three Chord. The process with which it is created we call “Perfectly Tuned Taste.”

Our Tennessee Straight Whiskey is light yet flavorful, distilled and aged at least 36 months. Using the maple charcoal filtration process, we have refined the whiskey to a “Perfectly Tuned Taste.” Just as a three-chord progression is at the foundation of great music, Three Chord Tennessee Straight Whiskey is at the heart of a great spirit.

After full maturation in charred new American oak barrels, we finish Penelope Bourbon in a new, freshly toasted barrel. Each batch is a unique blend of our signature three bourbon mash bills and all have different custom chars & toasts – making each bottle unique and different. The barrels selected for this series are the best our inventory has to offer and go through an extensive hand-selection process.

That’s right, the moonshine business hasn’t always been on the right side of the law, but since it led us to where we are now, crafting some of the best moonshines and whiskies you’re ever gonna taste, you could say it was totally worth it. (And you’d be right.)

Today, we still make that kick-in-the-mouth moonshine folks have loved for over a century, but we’ve also continued to innovate with flavors like Lemon Drop, Peach and Apple Pie that have made us famous; because having a heritage you’re proud of is great and all, but being really great today is even better.

Sour Watermelon Moonshine

Tart doesn't even begin to cover it. This moonshine starts with a sour, lip-smacking punch that leaves you with a sweet kiss of watermelon on the end.

The tradition of our Peatside continues, once again capturing the power and vibrancy displayed within youthful peated whisky. This vatting combines two fledgling single malts, one heavily peated, the other creamy and sweet. Together they unite to create a blend with an intense natural peaty smokiness. By further maturing these Scotch whiskies in fresh Pedro Ximènez Sherry and bourbon casks, our Whisky Creations Team achieve a brilliant balance between peat, malt and oak. Our latest Peatside is a perfect example of the Art of Maturation that we are dedicated to at Murray McDavid.

Tasting Notes:

Nose: Warm apple pie, butterscotch, oak, vanilla, subtle minty-rye spice, and lemon zest

Taste: Rich and creamy texture loaded with heavy caramel, fresh apple pie, gentle rye spice, and vanilla

Finish: Long! Notes of allspice give way to wildflower honey and lemon cookies; lingers with toasted oak
