We will continue to create authentic Victorian age American frontier Whiskey aged in small freshly charred new American white Oak barrels. Aged two years Cut Throat brings scents of leather, burnt honey & clove while tasting of raisin, chocolate, caramel and allspice. Using our unique mash bill & crisp Northern Sierra Mountain water our distiller has captured in this bottle the message of love shared from mother to son.

TASTING NOTES

Anejo has a deep golden color tone. Maturation process between 12 - 18 months in Jack Daniels Whiskey barrels. Very aromatic tequila, the scents of wood are complex, notes of vanilla, light coffee, caramel and floral. Full-bodied, balanced with a dominant unctuousness on the palate with a long-lasting sweet and smooth woody finish.

Reposado has a light golden color tone. Maturation process of 6 to 8 months in Jack Daniels Whiskey barrels with a light toast. A mixture of herbal notes and spices (pepper, woody), slightly sweet, smooth on the palate. A slightly unctuous body with a herbal finish and cooked agave.

STRAIGHT AGED IN EX-RYE BARRELS .
This beautifully blanched, fragrant rum is fully matured in American rye casks, bringing a beguiling intensity to its flavour. Spicy and peppery notes combined with a smooth, sweet complexity shows a whole different side to Don Papa.

Employing agave sourced from both the elevated highlands and the lower-lying regions of Jalisco, we curate a distinctive flavor profile. Our tequila is meticulously fashioned using age-old techniques, such as utilizing stone ovens for agave roasting and pot stills for a meticulous double distillation process. The entire collection embodies an exquisitely balanced spirit with a velvety agave essence that permeates every sip.

E. Cuarenta Anejo is crafted from 100% blue agave, presenting a luscious amber hue and a medium-bodied profile. This refined sipper boasts an elegant fusion of rich agave and wood characteristics.

E. Cuarenta Reposado undergoes a meticulous two-month aging process in previously employed American oak barrels. This classic liqueur is bursting with the taste of tree-ripe peaches and makes a mean cocktail.

The inaugural release of the 2021 Proprietary Red Wine upholds the level of excellence expected from winemaker Thomas Rivers Brown. It expresses a fragrant perfume of ripe red cherry, blueberry, and pomegranate, mingled with bell pepper, iron, and vanilla bean. On the palate, generous red and blue fruits are complemented by blackberry compote, dark chocolate, and espresso. The wine has silky tannins, food-friendly acidity, and a lingering finish. It is ready to drink upon release but will cellar well for years to come.

Varietal Composition: 50% Cabernet Sauvignon, 25% Merlot, 25% Cabernet Franc
Barrels: Matured in 50% new oak, of which 78% was french and 22% was American oak, which adds vanilla, nutty complexity

TASTING NOTES
Simple ingredients done well with appreciation for essential quality was our top aim in creating this blend of 2 to 6 year old rums. As we tasted through our cellar, we discovered our maturing barrels had the potential to make a richer, deeper rum blend suited for easy-to-reach, everyday occasions. After casks are selected and carefully blended, we proof them with aged water and re-cask the rum into old oak barrels to mingle, marry, and create a harmonious flavor profile.

Finally, we harvest these rested barrels and bottle. This rum expresses our evolution in pushing for deeper flavors, richer concentration, and a richness that is at once accessible, generous, and sincere. We hope you enjoy it your favorite way be it neat, on the rocks, or in a cocktail.

Maker Notes

Northern Rye is a style of whiskey created by Mammoth Distilling that combines North American traditions with old-world techniques to create a spirit showcasing character from both grain and oak. The result is a new expression of whiskey. One that explores the nearly endless possibilities of complex rye grain character while balancing the structure, flavor and depth that comes from oak. The inspiration for Northern Rye No. 02 came from the local wineries of Northern Michigan, whose ethos and production techniques involve blending old world viniferous varietals with new American hybrids and aging them in French and American oak barrels to create wines worthy of their own designation. This whiskey is the next chapter of our story, where Northern Rye meets Northern Michigan wine for a perfect marriage of terroir and technique.

What's In This Bottle?
Northern Rye No. 02 contains a blend of 11% straight Michigan Wheeler rye aged in first-use, char level 3 Missouri white oak barrels, 21% 18-year Alberta rye finished in American Oak Port barrels from 45 North Vineyard & Winery, 20% 18-year Alberta rye finished in Bonobo Winery’s Estate Pinot Noir French oak barrels, and 48% 15,16, and 18-year Alberta rye in second- and third-fill American casks.

TASTING NOTES
Gingersnap and fig on the nose, followed by strawberry jam, tobacco and grass, warming into pink peppercorn and ripe pear, with a long velvety finish of sweet challah bread, port and leather.
