With seven different Mezcals under our belt, we wanted to pay homage to the Mezcaleros and their families. We are eternally grateful for everyone who shared their experiences and lessons passed down over generations. Our Pechuga Mezcal celebrates the friendship among Mexicans and our combined effort to rescue our Mexican traditions. Our Pechuga is a celebration Mezcal distilled a third time with turkey breast, fruit, and spices. These additions are chosen by Eduardo and Julio’s mother Doña Ángeles and Maestra Mezcalera Doña Sabina. With only one production a year, each with a unique recipe, this Mezcal is truly special.

Tasting Notes

A delicious taste of smooth and complex with a distinct and traditional taste. A blend of two unique expressions – Blanco and Anejo one aged the other freshly cooked and interwoven to co-exist with flavors of citrus, wood, orange, earth, olives and buttery finish. Clean. Earthy. Smooth.

COLOUR: Visually, the Ruinart Blanc de Blancs has a brilliant robe with a beautiful pale yellow color and slight hints of almond green and jade green reflections.

THE NOSE: The first nose reveals intense aromas of fresh fruit: ripe lemon, juicy pear, or freshly picked peach. The secondary aromas are more floral with hints of white flowers, accompanied by a spicy touch combining ginger and pink peppercorns.

PALATE: Balancing tension with roundness, the enveloping structure is highlighted by fresh aromas of ripe citrus and tropical fruit. With a long and delicate finale.

The Spring Run series pays homage to the majestic wolves of the region, creatures renowned for their resilience, spirit, and unity. These qualities serve as the brewery's inspiration, and Batch #3 is no exception. Tasting Notes:

Appearance: Pouring a rich amber hue with a slight, lingering haze, this ale entices with its warm, inviting color.
Aroma: The nose is greeted by an enticing bouquet of floral hops, balanced with subtle notes of caramel and toasted bread, promising a well-rounded experience.
Flavor: The first sip reveals a delightful complexity. The malty backbone is met with a gentle kiss of citrus and piney hops, creating a perfect balance of sweetness and bitterness.
Mouthfeel: Medium-bodied, smooth, and with a crisp finish, it offers a refreshing and quenching sensation.

Pairing Suggestions:
This versatile amber ale pairs beautifully with a range of foods. Whether enjoyed with grilled meats, hearty stews, or a cheese platter featuring local artisanal cheeses, it complements and enhances the dining experience.

This wine was produced under the watchful eye of a team led by Luis Sottomayor, who is renowned for his ageing and blending of Port wines. The pinnacle, in terms of excellence, of Sandeman's range of Aged Tawnies, this blended wine consists of wines with an average age of 50-year-old. It forms part of a range of remarkable consistency that has won international acclaim.

Tasting Notes

A golden colour with greenish tints. An aroma of good aromatic intensity and excellent complexity with balsamic notes of cedar and tobacco box, hints of wax and ginger, and spices such as pepper. It has further notes of caramelised fruit and jammy apricots. On the palate, it has good volume and a vibrant acidity with prominent notes of spices and crystallised fruit that invite an extraordinarily long and elegant finish.

The backbone of the 14th annual Octomore series, the character of the 14.1 offers a necessary comparison from which the other expressions alternate and evolve. The base for this latest series showcases the delicate and intricate balance between smoke, malt, cask and maturation – resulting in an all-encompassing drinking experience. Matured for five years in first-fill ex-American whiskey casks, the 14.1 shows the power and potential of its essential raw ingredients. Sweet caramel and vanilla open on the nose, with bright citrus cutting through Octomore’s signature smoke - elevated with roasted coffee and subtle spice.

Distilled from 100% Scottish mainland barley and peated to 128.9 PPM, Octomore 14.1 is as youthful and dynamic as its predecessors.

TASTING NOTES

COLOUR: Light Amber

NOSE: Smoked vanilla, sweet caramel, and toffee notes open on the nose, with sooty smoke balanced with delicate coconut and flaked almonds. There is an unmistakable earthy smokiness and a hint of citrus, with lemon meringue pie cutting through rich barbeque pork.

PALATE: Bright citrus, smoke and a distinct minerality come through on the palate, followed by charred oak and beach bonfire embers. Toffee and creamy vanilla are balanced with the earthy smoke, with bright notes of pear, gooseberry fool and green apple simultaneously adding brightness and depth. Roasted coffee, hints of clove and nutmeg begin to come to the fore, with a gentle hint of heather honey.

FINISH: Butterscotch and vanilla are balanced with Octomore’s signature earthy peat smoke and a hint of salt spray, with burnt heather and gorse flowers settling on the finish.

Octomore 14.2 uses the same barley varietal and is malted to the same PPM as the 14.1, but the liquids diverge profoundly with the influence of wine and sherry casks on the 14.2 spirit.

TASTING NOTES

COLOUR: Deep Amber

NOSE: Leather, prunes, red currants and malted barley come to the fore, followed by toasted oak and hints of cinnamon, green apple and black pepper. Waves of smoke and distinct red fruits follow, complemented with cereal notes of malt and porridge. The peat smoke is dry and brooding, with a hint of burnt heather and subtle pipe tobacco from the oak.

PALATE: The influence of the European oak is unmissable, with a touch of dryness balanced with the vibrancy of wood spices, smoked oak and roasted coffee. Barbeque sweetness and a crack of black pepper is complemented with rich fruit cake and dried fruits. A drop of water opens the smoke and fruity sweetness from the wine casks, bringing a beautiful balance as notes of apple and pear grow with the dram.

FINISH: Smoked malt, smouldering oak and sea salt settle on the finish.

AÑEJO 
An authentic 100% Blue Weber Agave tequila made in the Traditional Method. Produced with fully mature 7-10 year agave from 50% Highlands and 50% Lowlands of Jalisco, slow-roasted in brick ovens, slow-fermented, never diffused, roller press extraction, double distilled, Bourbon Barrel Aged 18 months, and additive free.

Tasting Notes

Aroma: Its roasted-pineapple opening aroma; more time in the glass allows a peppery almost viscus, floral perfume to develop. Nice aromas of toasted oak and vanilla bean also emerge.

Palate: palate entry shows roasted peppers, orange blossom, and tropical fruit. Then the mid-palate showcases luscious flavors of chocolate, orange, and sugar cookies.

Finish: Aftertaste is naturally sweet, sugary and long. A ton of chocolate, caramel, and dulce de leche flavors are very notable. This is the choice of the most sophisticated consumers searching for the full-body obtained from the more dominant wooden essence.

Loco Ámbar is a limited production Reposado Tequila that exhibits a measured complexity that is layered, elegant, and innovative. The highly artisanal process incorporates a carefully balanced selection of new and aged barrels.

The matured Irish whiskey and stout beer provide compelling and exotic notes of honey, malt, roasted grains, and cereals; the one that aged port gives delicate notes of nuts; Pedro Ximenez sherry provides fine floral and herbal notes, and French white oak contributes exquisite and elegant spicy notes. Loco Ámbar rests for six to eight months in each barrel so that our Maestro Tequilero achieves the perfect and complex balance. Legent Yamazaki Cask Finish Blend, an exclusive release inspired by diverse perspectives in whiskey craftsmanship, unfolds a remarkable journey. Originating as an exceptional Kentucky Straight Bourbon Whiskey meticulously crafted by Fred in Kentucky, it embarked on a transpacific voyage to Japan. There, at the revered Suntory Yamazaki Distillery near Kyoto, Shinji nurtured it in specially chosen French Oak wine casks and Spanish Oak sherry casks, adding rich nuances and a vibrant spiced finale. A select reserve further matured in sherry casks that once cradled Yamazaki Single Malt Japanese Whisky, contributing a full-bodied malty depth and intricate layers of flavor.

Our whiskeys are proofed with pure limestone mineral water from the Legendary Rosendale Mines of NY, just 100 miles north of our home in Red Hook, Brooklyn.

The Vaults is a limited release of our rarest & oldest bourbons. The whiskey was finished in casks from the Adirondacks in New York, where we found forty two months air seasoned white oak, fire bent and thoughtfully toasted, charred and raised into barrels, resulting in truly New York finish.
