The first Edition of Colere marks a monumental step forward for not just Westland but the whiskey industry as a whole. This is the first in what will be an ongoing annual inquiry into unique varieties of barley bred outside the commodity system with flavor first as a goal. Colere Edition 1 is made with the varietal that began it all, Alba (a six-row winter barley) and intentionally matured in only used casks to relegate the oak influence to a supporting role and focus the attention on the grain itself.

Sherry casks

The distillery uses Sherry cask types, including Fino, Oloroso and Pedro Ximenez. These casks give the whisky notes of tart cherry, golden raisin, fig, caramelized plum, brown sugar and spice.

Aged a minimum of four years, this 100% malted barley whisky is matured in former Spanish Sherry casks.

This whisky showcases its natural color and is not chill filtered.

Cuvée casks 

This innovative barrel is sourced from premium European red wine producers. After the wine is removed, the cask is broken down, the interior shaved, re-toasted and re-charred, and then put back together again. The re-toasting and re-charring of the cask energizes the wood sugars and brings forward barrel spice, bright red fruit and toasted pecan.

Aged a minimum of four years, this 100% malted barley whisky is matured in specialty Cuvée wine casks. The casks originate from premium red wine producers, and the interior is shaved, re-toasted and re-charred before putting spirit into the cask for maturation.

Created in collaboration with Americana duet Jamestown Revival, we crafted their one-of-a-kind signature bottle of whiskey. We begin with a rye made from 95% rye, 5% malted barley, then aged in charred American White Oak barrels. After aging, we add a twist – a French Oak spire, seasoned and toasted, imparting rich, hearty flavors, and notes of candied fruit, toffee, and cinnamon.

Using our proprietary BLACK NOISE™ finishing process, each batch of whiskey is blasted with its very own Metallica playlist, curated by the band themselves. The low-frequency sound waves force the whiskey to penetrate deeper into the barrel, extracting more caramel, honey and vanilla flavors from the wood. Burnt caramel, oak & honey on the nose, with honey, cinnamon, allspice, dark fruit, clove and mint filling the palate. The finish is long and smooth, slightly creamy with hints of butterscotch taffy, maple and honey.

AT COPPER FOX, WE HAVE A PARTICULAR PASSION FOR WHISKY.

The revelation of a distinct and wonderful whisky that uses fruitwood peat came to me as I visited many American distilleries with the dream of opening my own. By spring of 2000, I made the journey to Scotland, home of more than 130 distilleries and arguably the best whisky in the world. I came away with new knowledge — and great appreciation of the necessary skill, a reinforced determination, and an offer to intern at Bowmore Distillery on Islay, one of the few distilleries in the world that still malts their own barley. Three years later, Copper Fox Whisky was launched into the marketplace as the first applewood-aged whisky in the world. Our distillery in Sperryville opened in January of 2005, and with it, the first US distillery malt floor and kiln since the repeal of Prohibition.

All of our grains are grown locally by one farmer, and our 6-row Thoroughbred barley was developed for us at Virginia Tech. We floor malt the barley in the traditional style, which allows us to develop and maintain a connection to the grain throughout our entire production process.

Our innovation begins in the kiln, where instead of peat, we use local fruitwoods to gently smoke and dry the grain.

Copper Fox is the only distillery on the planet to mature their whisky with toasted applewood. This process further develops and enhances the flavor of the smoky malt, resulting in a complex and singular flavor experience. 

All of our products are non-chill filtered, allowing the natural oils to deliver to you the rich, full flavor of our grain.

We believe the result is something distinctive, original, and unlike anything else you've tasted.

Our continuing quest to bring new flavors to the whisky world led us to the delicate complexities of peachwood. Both as a smoking medium during the kiln drying process and as a maturing catalyst inside our barrels, peachwood contributes a symphony of fruity, floral notes to our signature single malt.

TASTING NOTES

Color: Auburn, tarnished copper

Nose: Complex aromas of ripe stone fruit, sweet smoke/ash (campfire) and cinnamon pastry

Palate: Medium-full body; just slightly tannic/drying, sweet but earthy at the same time; syrupy mouthfeel; flavors of marzipan, clove, orange zest, and underneath it all a subtle, salty smokiness

Finish: Medium-long, dried fruit, raw honey, and toasted oak notes

About the Brand

Situated in the hills of the Willamette Valley, Oregon surrounded by world renowned wineries, Branch Point is a small independent distillery founded in 2016. By taking a different approach, we focus exclusively on grain to glass and on that premise whiskey should reflect its place of origin. 

Our Single Pot Still is a whiskey created with locally grown barley which blends Oregon craft brewing innovation with a traditional whiskey style. Locally grown barley; crystal malt, chocolate malt and distillers’ malt. Aged 3 years in new American Oak barrels, #3 char.
