TYKU Tokubetsu Benihana Sake

TYKU is a premium sake brand and one of the fastest-growing in the US. It is handcrafted in Umenoyado Brewery in "The Birthplace of Sake", Nara, Japan. The brewery has won the prestigious Japanese sake competition Zenkoku Shinshi Kanpyo Kai 10 times. The Umenoyado Brewery has been overseen by the Yoshida Family for 5 generations and is currently ran by Kayo Yoshida, the first female brewery owner in Nara. The iron-free and soft pure water is sourced from the underground springs and the production of sake is natural, using only 4 simple ingredients: non-GMO rice, water, yeast, and koji, a mold that is used for breaking down starches into sugars. Sake is mainly produced using traditional methods and TYKU is no different. First, the residual powder, left over from polishing the rice, is washed off. The rice is then steamed, before being sprinkled with koji mold and yeast and left to ferment. The liquid then gets pressed from the mixture and gets filtered. After pasteurization, the sake is matured in barrels for around 3 weeks before finally being bottled. The special edition Tokubetsu Benihana Sake was created in partnership with the American Benihana restaurant company and is a Tokubetsu Junmai. Junmai is a premium sake where 30% or more of the rice is polished off. A special blend of sake rice is used along with ultra-purified water, making for an exceptionally smooth and subtle sake that is meant to be enjoyed chilled and with a wide variety of cuisines.

Delamain Reserve de la Famille Cognac

The family-run House of Delamain is one of the oldest cognac houses and has been in the art of making cognac for more than 2 centuries. Based in Jarnac, France, it was founded in 1759 when James Delamain left Ireland to settle in the French town. After his death in 1800, the business closed its doors to be reopened in 1924 by James' grandson Henri Delamain, who founded Maison Delamain. Several generations have shaped the character of the house of cognac, as it was run by botanists, writers, ornithologists, humanists, archaeologists, and historians. The cognac house is focused on XO cognac and uses eaux-de-vie from Grande Champagne exclusively, this being the most prestige of all the cognac crus (regions). Delamain pride themselves on letting time work its magic, never rushing the tasting, assessment, and selection of the thousands of samples that come their way. Time is a crucial element here, as they deal with rare cognacs, often aged 50 years or more. Once an eau-de-vie has been selected it goes into the cellars of Cellar Master Dominique Touteau, where it is closely monitored throughout its long stay. The aged French oak casks preserve the fruity flavor and subtleties and are moved between different cellars; sometimes the cask needs a damp environment, other times a breezy one, a cool or warmer one. The liquid inside breathes and follows the rhythm of the seasons. When the time has come to blend the meticulously-developed cognac, the Cellar Master already knows the tiniest details and temperaments of each eau-de-vie. The blending of the cognac is left until last, only leaving the two years of marrying the final liquid in order to let all the aromas and flavors gel and make Delamain the fantastically elegant spirit that it is. The exceptional and ultra-premium Delamain Cognac Reserve de la Famille was originally meant for the Delamain family and their guests. It's special in that it's a single-estate, single-barrel Cognac. Instead of being blended, it's a single Grande Champagne eau-de-vie that has been aged for arguably the maximum amount of time that still benefits the liquid inside, around 60 years. It's undiluted, as the alcohol content has dropped naturally through the years to 43% ABV.

During the early 19th century, illegal distilleries were commonplace throughout the Speyside region of Scotland. In 1823, however, Alexander Gordon pushed the Excise Act of 1823 through Parliament. The Excise Act allowed illegal distillers throughout Scotland to apply for and obtain licenses to legally distill spirits. In 1824, a businessman named George Smith applied for one of the first licenses in the Speyside region of Scotland and opened the doors to The Glenlivet Distillery. For nearly two centuries, The Glenlivet Distillery has been producing the "single malt whisky that started it all." The Glenlivet Single Malt Scotch Whisky is made using barley sourced from Crisp Maltings, Portgordon (Portgordon is a village in Moray, Scotland). After the barley has been malted and mashed, it is fermented in wooden washbacks for approximately two days. The wooden washbacks used by The Glenlivet are more difficult and expensive to maintain as compared to the stainless steel washbacks used by most Scottish distilleries, but impart a distinctive, floral quality to the whisky. After the barley has been fermented, it is distilled twice first through Glenlivet's wash still, and then again through Glenlivet's spirits still. Originally designed by George Smith, the copper-pot stills have a unique, lantern-like shape, which encourages contact between the whisky and the copper (the copper strips the whisky of any impurities it may have, and provides for a lighter and more pure flavor profile). In addition, the height of the stills ensures only the lightest vapors are condensed, and makes for a more delicate and elegant whisky. Recently, folks at The Glenlivet have been experimenting with mysterious releases without tasting notes and cask information. Spectra is one such limited-edition box set that contains a selection of 3 distinct 200ml single malt bottles. The first hints at a fruity expression, the second promises a smoky and briny experience, and the last holds a creamy sweetness. Each expression showcases The Glenlivet's signature style and presents a tasting challenge in the form of a digital experience a journey that starts by scanning the provided QR code. After completing the guided digital tour and receiving a grade based on your performance, you get to compare your findings with the thoughts of Master Blender and Distiller Alan Winchester.
