Introducing Orchard Cobbler, the third release in our boundary-pushing and experimental Huntress series. Truly a one-of-a-kind limited edition whisky, in that the spirit used is only produced once a year when the distillers cross over from one distillation recipe to another. We find we can taste delicious flavours of Cherry Bakewell, apricot marmalade and vanilla custard, with a side of peppermint tea.

Unlike most distilleries, we run two different spirit runs each year, one for whisky set to be released at a younger age, and one set to be released after ten plus years. The spirit matured for Huntress Orchard Cobbler comes from the distillation in the week after this spirit recipe is switched over - a time where cut points are changed and unusually high fruity compounds flood into the spirit. So fruity, that the whisky is named after one of the team’s favourite desserts.

Our rich, complex original.
Solera was our very first whisky and is a bona fide Starward take on a traditional whisky expression. Rich and well balanced jammy fruits, creme brûlée and spice with a lingering dry finish. Solera neat, over ice or shaken up in a classic cocktail.

There’s a time for tradition and there’s a time to go rogue.
Solera was the first whisky where we borrowed from tradition then started asking questions. It left us with a whisky deemed world class not just by us, but award judges too.

Solera is a traditional method the Spanish used to age their Sherry and keep it consistent. A fractional amount of each young cask is blended with more mature spirit. It's the inspiration for making our Solera. And it means there's still a touch of our first ever cask in every bottle made today.

We source every Solera ingredient from just a day's drive away. A quintessential grain like Australian malted barley was a no-brainer to start with. Then, for a bold, craft flavour we ferment our barley with brewers' yeast.

A testament to our passion, patience and pioneering spirit.
Our small lot series allows us to continue our spirit of experimentation by applying our hard-won house style to products with a specific focus. This straight rye whiskey is in a league of its own.

Palate:
Van Duzen is an exceptionally complex Straight Rye Whiskey with a large portion of malted barley in the mash bill. Pushing the boundaries of rye, this whiskey is as rare as it is unique. Distilled grain-to-glass, this small lot release was artfully blended from 45 barrels and bottled at 94 proof.

Mash Bill: 67% Rye, 31% Malted Barley, 2% Wheat

VAN DUZEN RIVER
Runs through 429 square miles of redwood groves. 

The mighty Van Duzen River is a significant tributary to the Eel River, carving its course through 429 vibrant square miles of countless redwood groves. The river is a fitting tribute to James Van Duzen, a member of the Josiah Gregg exploration party who first made the overland trip to Humboldt Bay in 1849.

Our latest and last in the Extinct Blends Quartet Celestial takes to the sky through billowing clouds and glittering constellations, inspired by a whisky from the 1960s with both an extravagant flavour profile and an equine theme. Crafted in mind for the explorer, but don’t be shy to venture into this spirit! During the fermentation process, its vivid color & buttery fragrance flows through the distillery, trailing a sweet & complex aroma. Made from 100% Organic and non-GMO Blue Corn, also known as Hopi Maze, this whiskey stands alone in flavor. Blue corn is an heirloom varietal, dating back over 100 years, making it one of the oldest families of corn. By mashing this ancient grain we pulled a plethora of tannins, spice & creaminess you would miss in a classic yellow corn whiskey. You may even notice a higher viscosity & thick legs trailing down your glass as you sip! We aged this batch for 4 1/2 years in American Oak Char #3 barrels. 

Tasting Notes: Strong on the nose of dough and butter, finishing on the pallet with butterscotch, cream and walnut

Cocktail Recommendations: This deserves to be enjoyed by itself or with a cube of ice but if you really want to experience it in a cocktail, an Old Fashioned.

Edition No. 3 – Jordan Salcito
In this third edition, Sean revisited his wine roots with Jordan Salcito, our 2024 collaborator. Jordan is an internationally renowned sommelier with a storied career in the wine world and at leading restaurants including Restaurant Daniel, Eleven Madison Park, and Momofuku where her wine list was named the “Most Original Wine List in the World” by World of Fine Wine Magazine. In 2016, she founded Drink RAMONA, a family of award-winning Italian spritzes. 

She bonded with Sean Josephs over their shared love of wine and backgrounds as sommeliers. Together, they blended this extraordinary Australian whisky from four distinct styles of Starward Australian Single Malt, which had been exclusively aged in red wine barrels, further bridging the worlds of wine and whiskey.

Like Pinhook, Starward is known for moving beyond tradition and letting curiosity and creativity be their guide. The Process
Using only pure Jamaican molasses, Myers's Rum is made from continuous and pot still distillation and matured in white oak barrels. The rum is then carefully blended making for a very distinctive color, aroma, and flavorful taste.

Buzzard's Roost is excited to announce the latest addition to their bourbon collection. Created from a blend of 4- and 5-year-old double-barreled bourbons, Toasted American Oak Bourbon is made from a blend of two mash bills.

The color is a vibrant mixture of bronze and apricot. With elegant and enticing tasting notes, this bourbon is best enjoyed on its own or in a classic whiskey cocktail.

To the nose, Toasted American Oak Bourbon lends itself to caramel, coconut, and vanilla notes met with delicate candy aromas. The Open Course Collection single malt has been crafted by Michael Henry our master distiller using a combination of whisky from our unique Straight Neck pot stills and more traditional Swan Neck stills, then aged in Organic American Oak casks to create the signature fruit, honey and soft smoke style only found in Loch Lomond single malt whisky.

Distilled at Loch Lomond in the year 2000 in our remarkable stills. This whisky uses predominantly unpeated Organic barley and has been taken at a range of collection strengths to create a complex whisky that showcases our capability in distilling and the impact on flavour.
