TASTING NOTES

COLOUR: Ruby mahogany.

Cumberland Falls Kentucky Straight Bourbon is named after a unique and scenic landmark of the state of Kentucky. The Bourbon of Cumberland Falls honors its remarkable beauty and native spirit. An astonishing feature of the site is the moonbow, a lunar rainbow that is visible when there is a full moon.

In our attempt to find the finest whiskey, we found ourselves in awe of the breathtakingly scenery of the moonbow, over the mighty waterfall of the Cumberland River.

Some time after we discovered our perfect bourbon, we were excited to travel there once again, to experience the beautiful view, with a glass of whiskey in a hand and the success of our adventure. It was at that point that we made the decision to name the bourbon after the majestic Cumberland Falls.

We would like to celebrate the creation of our first premium Kentucky Straight Bourbon with everyone who value heritage, honors spirit and appreciate the finest authentic bourbons.

TASTING NOTES

COLOR: Beautiful medium to dark amber bordering on copper.

NOSE: Lemon, pine, and faint allspice, minimal notes of char gives way to banana and summer fruits. Almost no alcohol on the nose. Oak is as minimal on the nose as it is on the palate.

PALATE: Vanilla overlays all of the rye spice, which follows the young, new, lightly charred oak. Hints of alcohol accompany the short creamy vanilla finish.

Introducing Telsón Blanco, a remarkable tequila hailing from the enchanting region of Los Altos. This extraordinary spirit stands out through its meticulous production process, which begins with the careful selection of agave plants, ensuring only the finest ones are chosen. These specially selected agaves undergo a unique transformation, starting with their cooking in an Autoclave under high pressure, followed by the use of a roller mill.

The next stage in crafting Telsón Blanco involves fermentation in stainless steel tanks, where the agave is carefully processed without any fibers, using pure deep well water. This precise fermentation process sets the foundation for the tequila's exquisite flavor profile.

After fermentation, Telsón Blanco undergoes a meticulous double distillation in stainless steel stills, capturing the essence of the agave with precision. Finally, the tequila is bottled at a perfect 40% alcohol by volume (abv), ready to be enjoyed by tequila enthusiasts worldwide.

Upon first encountering Telsón Blanco, your senses will be tantalized by the delightful aromas it offers. The nose presents intriguing hints of fresh agave, accompanied by bright notes of lemon and lime citrus, intertwined with a subtle touch of alcohol. As the tequila opens up, a creamy almond note emerges, delicately balancing the aroma with a hint of sweetness.

Savoring this remarkable tequila reveals an exceptional tasting experience. The initial taste is graced with a gentle sweetness that quickly gives way to the distinct flavors of fresh agave detected on the nose, followed by a pleasant peppery undertone. The palate also delights in subtle hints of green melon and the delicate essence of honeysuckle, adding depth and complexity to every sip. The finish, while relatively short, leaves a lingering sweetness that invites you to indulge in another delightful taste of Telsón Blanco.

Loch Gorm is the name given to our annual sherry matured limited edition.  Named after Islay’s largest freshwater loch neighbouring the distillery, the dark murky colour of the loch’s water is reflected in the rich coppery tones of our sherry matured Loch Gorm release.

International Spirits Challenge – Gold

For the 2023 Edition Anthony and Robin selected a total of 22 casks, 8 distilled in 2013, 6 distilled in 2014, and 8 distilled in 2015.

NOSE: Hints of cacao with an essence of leather, black cherry and light smoke.

PALATE: Roasted hazelnuts, dark chocolate and roasted dark fruits give way to light ashy peat smoke.

FINISH: Balanced and long with fresh Islay sea breeze.

OLOROSO SHERRY CASKS

Loch Gorm is exclusively matured in oloroso sherry casks from the renowned bodega, Jose Miguel Martin. It is common for distilleries to use a variety of sherry producers but for our consistent quality and character, it is vital that we source them all from just one bodega. We select a combination of sherry butts and hogsheads from Jose Miguel Martin that provides two separate styles of maturation.

These ex-oloroso sherry casks impart a combination of heavy sherry notes, spicy dark chocolate, rich fruits and burnt sugar. This balances beautifully with the Kilchoman peat smoke and citrus fruits found within our farm crafted spirit.

Time, combined with the distiller's skills, has worked its magic. Three ingredients - water, malted barley, and yeast - have come together to create something new, crafted on The Clydeside. Stobcross, the road where the journey began.

In 2017, Tim Morrison fulfilled his lifelong aspiration of reviving the art of distilling Single Malt Whisky in Glasgow by opening The Clydeside Distillery. This endeavor also involved the restoration of the dock constructed by his great-grandfather. On October 15, 2021, The Clydeside Distillery proudly unveiled its inaugural Single Malt Whisky.

The historic name of Stobcross originated from an ancient cross that once marked the path to Dumbarton Rock. Along this road in the 1600s, the Anderson family constructed a magnificent mansion known as Stobcross House. Later, they went on to develop the prosperous weaving village of Anderston. Over time, as the River Clyde witnessed industrial growth in 1875, Stobcross House was dismantled to make room for the Queen's Dock, which became the thriving hub of Glasgow's renowned global maritime trade.

A WHISKY OF CHARACTER

This Clydeside Single Malt Whisky is produced using clear water from Loch Katrine, 100% Scottish barley and then matured in the finest Oak casks.

NOSE: Floral notes, fresh sweetness with tropical tones

PALATE: Orchard fruits and hints of white pepper

FINISH: Fresh, fruit tones. 

Inspired by a classic, Juniper-led London dry gin bouquet, a supporting duo of Hawke's Bay lemon peel and coriander, NDC’s New Zealand Dry Gin is a London dry like no other, super charged with up to three times the botanicals than the big brands.

An approachable, easy drinking everyday dry gin and a great all-rounder.

Traditional pine and citrus notes are embellished and guided to a deeper place by the unctuous, yet finely structured tones of New Zealand Orris root.

Only pure certified organic cereals are used in the production of Spirit of Hven organic vodka. The final distillation is carried out in the unique copper pot stills situated at the Spirit of Hven Distillery. The result is a natural organic vodka with the distinct mellow flavour and elegant mouth feel characteristic of the Hven stills.

A unique product on the market being the only organic wheat pot distilled vodka working with oak maturation prior to last pot distillation.

SCENT
This Vodka has a clear heritage in the taste, distinct full flavoured and oily. Hints of Vanilla from the oak maturation in between distillations pass through in the stills and in to the final spirit giving the spirit a round mouth feel.

TASTE
The vodka is smooth yet multifaceted with discrete notes of cut hay and wheat, the copper pot still distillation gives a round, butter, sweet tone.

Maker Notes

Aged more than 4 years, the 2023 vintage of our High Proof Bourbon showcases a warm and rich nose of molasses, roasted peanuts, and caramel which leads to a dense palate of baked apricot, vanilla, and burnt sugar.
Pinhook’s High Proof Bourbon is a limited annual release comprising a small selection of our finest barrels, blended for whiskey enthusiasts and connoisseurs. It’s bottled close to or at cask strength, at a proof chosen to maximize complex flavors and integrate them with the alcohol for a long and balanced finish.

Our 2023 Bourbon is paired with Bourbon Resolve, by Hard Spun out of the mare All Mettle, by Touch Gold.

In partnership with Six Columns Stable, Bourbon Resolve was purchased by Bourbon Lane Stable for $200,000. He is a well-balanced colt who really came on as a two-year-old. He stands a good bit off the ground at 16.2 hands, setting him up for a big three-year-old campaign.

17 long years. Imagine the flavour, the depth, the richness, that develops over all that time in a first-fill Oloroso sherry butt. The Irishman – 17-Year-Old is a superlative Single Malt. A highly exclusive expression – just three casks are produced each year.  Each bottle comes numbered by cask as a mark of quality. Triple distilled, non-chill filtered, and crafted from a mash bill made entirely of Irish barley. Bottled at 56% ABV.

TASTING NOTES

NOSE: The influence of the Sherry cask is forever present, with notes of dark chocolate.

TASTE: Toasted oak and sweet sherried raisins gives a complexity that is satisfying to the palate.

FINISH: A combination of nutty oloroso sherry as well as a dark chocolate that begs to continue.

Distilled at Loch Lomond distillery which sits in Alexandria, West Dumbartonshire, this is a heavily peated dram, known as their "Inchfad" expression, and was matured in Oloroso sherry casks since 2021. It displays bbq meat notes from the outset and slight hints of cinnamon and pepper add a mild spice to the dram that also has a sweet element on the palate. A mix of both bold and subtle flavours.

Tasting Notes

Nose: Meaty, BBQ, cinnamon sticks

Flavour: Spare ribs in BBQ sauce, smoked cheese, honey glaze

Finish: Pulled pork, dark chocolate, soy sauce, white pepper

This deeply sweet and nutty small-batch release is the first Glenmorangie ever to be finished in rare Palo Cortado sherry casks. Aged for 12 years, it brings a new elegance to the Highland Distillery’s delicate style.

The single malt spent its first eight years mellowing in American white oak bourbon casks. Then, delighted by that whisky’s smooth, soft character, Dr Bill was inspired to finish a select batch in Palo Cortado casks, never before used at Glenmorangie.

Palo Cortado is the rarest variety of sherry, created purely by chance, when the protective ‘flor’ yeast does not form on sherry intended to become Amontillado.

Enchanted by Palo Cortado’s sweet and nutty flavours, Dr Bill sourced a handful of its casks, which are incredibly hard to come by. He filled them with the whisky, imagining the unparalleled depth and complexity they might bring Glenmorangie. Finished in these deliciously wonderful casks, Dr Bill’s creation developed all the rich elegance he had dreamed of.

Uniquely complex and nutty, it layers dark plum depths with milk-chocolate richness, Brazil nuts and sweet spice.

TASTING NOTES

COLOUR: Burnt Amber

NOSE: Rich, elegant and rounded. Toffee, fudge and vanilla sweetness entwine with mossy notes and mulled wine hints. Then come scents of honeyed ginger and milk-chocolate truffle dusted with cinnamon. A splash of water reveals notes of orange sherbet, carnations and Brazil nuts.

TASTE: An oily yet peppery texture leads to a burst of rich, sweet flavours. Treacle toffee and milk chocolate are threaded with notes of clove, ginger, cinnamon and nutmeg. Meanwhile, fruity undertones of raisins, dark plums and bitter orange find delectable balance with baking ryebread and salted nuts.

FINISH: Long and nutty, brimming with spice, leather and a touch of aniseed.
