Mischief Farm Blackberries
We start with a floral and bright gin base (Tod & Vixen’s Dry Gin 1651) and steep blackberries in the finished gin for 24 hours.  The resulting flavor is fresh and bright with a balanced sweetness and a gorgeous natural magenta color.

Red Rooibos Tea
Red Rooibos comes solely from South Africa. The tea has a warm earthy flavor that compliments the pine and citrus flavors in our gin.

Bitter Orange Peel
Bitter oranges, not to be confused with their cousin the Bergamot, are used in preserves and medicinally around the world. We use their peel to compliment the fresh citrus notes and add another dimension to our gin and your cocktails.

Juniper Berries
Juniper is the only essential botanical in all gin. The word gin is derived from the Dutch word for juniper, jenever. While found in most temperate climates, we found the best growing region to be Southern Europe, specifically Macedonia. Juniper gives our gin it’s signature fresh pine and resiny aromas.

Coriander Seed
Coriander is the ripe seed of the cilantro plant. Although coriander and cilantro come from the same plant, they do not share the same flavors. Coriander adds zesty citrus notes to our gin.

Angelica Root
Historically, angelica root was used as a medicinal plant. It is now also used to flavor liquors and food. Angelica has a distinct earthiness that pairs nicely with the juniper and coriander we use in our gin.

Fresh Orange Peel
Sweet, juicy and low in acid, navel oranges are the foundation of our gin’s citrus notes.

Makrut Lime Leaves
Makrut lime leaves are native to tropical Southeast Asia and are frequently used in dishes from the region to balance the flavor of other spices – especially coriander. We use makrut lime leaves for the same purpose.

Orris Root
Orris comes from the root of the iris plant. We use orris not so much for its aromatics as a binding agent to balance and combine the other flavors in our gin.

Southern Alps of New Zealand

New Zealand water is unique because our geography is unique.

The rain that hits New Zealand is the same as the rain that hit New Zealand a thousand years ago. None of it comes through clouds passing over land masses belching out car fumes and agricultural enhancers. The first thing it hits is a huge, jagged mountain range that runs the length of the South Island. This mountain range then holds this water for 80 years. That’s how long it takes to travel through the layers of sediment until it’s finally released in to the depths of one of the world’s last natural aquifers. Think about that. The water in this gin has actually been filtering through rock since before your grandfather was the age you are now.

The Bottle

The bottle is deliberate. It’s a modern take on the original Genever bottles from 200 years ago.

If gin-makers from then were making gin today we know they would make it like we do, because we make it like they did.

Inspired by the Minke Whale, the majestic creatures that swim wild off our Atlantic Ocean coastline. The same local coastline is home to the unique botanical that gives Minke Gin its distinct flavour profile.

FORAGED BY HAND
We climb the cliffs along our shoreline to sustainably harvest native Rock Samphire, only by hand and only in season. It’s really worth the effort!

MINKE SPIRIT
The base spirit used to make Minke Gin is derived from whey, produced from our 9th generation family farm near Galley Head Lighthouse. This gives a unique velvety texture and mouthfeel to each delicious drop.

For Minke Gin we go full circle, grass to glass, harvesting nature at its best.

Maker Notes

We are delighted to introduce you to a new nautical member of our little herd Bertha’s Revenge Navy Strength Gin. We have raised the ABV to a lip-pursing 57.1%, and have shuffled the botanical blend slightly to accentuate one or two of the more pronounced flavour notes. The extra strength gives our merry crew of spices a megaphone through which to convey their message, which is a smooth and as well-balanced as you would expect from a cow riding at anchor.

Bertha’s Navy Strength gin tastes divine when sipped over ice. She is also an excellent base to gin-forward cocktails, especially a Gimlet.

Distilled with over 20 botanicals and then barrel-aged in French oak, the popular Old Tom Gin from our Distiller’s Workshop collection is now part of our permanent line of spirits. And, with a fancy new label! 

Distilled and aged in-house
New Deal Old Tom Gin is pot-distilled in-house from 100% grain. Juniper, rose petal, citrus, and orris root add depth and texture. Each small batch ages in Oregon wine barrels, developing warm, toasted notes and an amber color. Our Old Tom Gin is just lightly sweetened in the traditional style.

We’re proud to announce that New Deal Old Tom Gin was awarded the best-in-class Platinum Medal in Sip Magazine’s 2021 Best of the Northwest spirits competition. 

What is Old Tom Gin? There are no exact rules but Old Tom is a gin that is often barrel aged and lightly sweetened. Before the advent of the column still, spirits were often much cruder and it was common to add sweetening agents to make them more palatable. And palatable this gin was indeed! Before London Dry Gin stole the show, Old Tom Gin was the gin of choice in 18th century England. In fact, it was so popular that it led to a gin craze that was seen as problematic in the eyes of the government. Several prohibitive laws were passed to slow consumption but this only drove the gin scene underground.

How did Old Tom Gin get its name? Well, like the history of many cocktails and spirits, nobody knows the exact answer but there are several theories. Some think an old tom cat fell into a vat of gin. Yikes. Others say that two men named Tom worked at a distillery, one young and one old, and that Old Tom was the one that invented this style of gin. The most fun theory seems to center around a wooden cat. Since gin was nearly outlawed, pubs secretly selling this ‘mothers ruin’ would alert interested parties to its availability by putting a wooden plaque of a cat outside their building. After a coin was deposited through a slot in the wall, the bartender would slyly pour a shot through a pipe out to the patron. This is the story we like to believe.

Maker Notes

Our Spiced Roselle Gin pays homage to the Central Highlands of Việt Nam. Inspired by Vietnamese traditional fruit liqueurs, our Spiced Roselle uses the Rose Myrtle berry-quả Sim, which grows wild in the Central Highlands.

The Central Highlands of Việt Nam are well-known for their red basalt soils. This fertile earth, rich in iron from long silent volcanoes nourishes a vast array of plant species, among them coffee, tea, and silk. It is home to majestic waterfalls, untouched primary forests, longhouses, Gong culture, Dam San epic poetry, and elephant training. Where indigenous groups - Jarai, Bahnar, and more, have been called home for centuries. Where animist beliefs are still part of everyday life. It is a gin that truly embodies the land’s spirit: warm spices, sweet and savory roots, dried fruits, balanced with soft tannins, and subtle acidity. It inherits a rich ruby color from the Sim berries, reminiscent of the red soils from which they grow and the traditional textiles of the people here.

The recipe was crafted with the help of a London distiller then small batch distilled in L.A., giving it a distinctively premium and smooth quality, perfect for sipping and cocktails.

Named for its "London Tradition and California Spirit," this satin-textured beauty had us wowed for its approachability. A cloud of marshmallow and a zing of pepper mark the finish.

Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor.

STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

STEP 4: BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.
