BARRELS & AGING
White American Oak Char #3 barrels are hand-crafted by local cooper Seguin Moreau and the Bourbon is aged for a minimum of three years, and often longer. All aging is done on site in one of three locations, all with ideal yet different conditions relating to temperature, humidity, sunlight and air flow.

FINISHING BARRELS
Once deemed mature by Master Distiller Jordan Via, a portion of the Bourbon is transferred to Dave Phinney’s Cabernet Sauvignon barrels for a period of about two months. This additional aging adds flavor, texture and character.

75% Corn, 21% Rye, 4% Malted Barley

TASTING NOTES

Aroma: Aged for a minimum of 6 years in the barrel this bourbon leads with a scent of vanilla and sweet hay, accented by sandalwood and mace.

Taste: It enters the palate smoothly, and the bourbon is nicely balanced with a hint of pecan pie sweetness.

Finish: It fulfills the promise of its nose before evolving into a warm, rich, spicy sensation and leaves the drinker with a complex, yet balanced and long-lasting signature chestnut finish.

Before it was Burnt Church Road it was known as Palmer’s Stretch, named after black businessman George Bell Palmer. This road is where the infamous local, Harry Cram, held community-wide horse races each Thanksgiving.
