We have been producing Cabernet Sauvignon since 1978. Blending fruit from estate vineyards and top Napa Valley growers, this wine embodies the complexity of the valley, while offering a seamless balance between fruit, oak and tannins. To add nuance, the Cabernet is blended with Merlot, yielding a wine that is approachable in its youth, yet worthy of cellaring.

Varietal Composition: 83% Cabernet Sauvignon, 13% Merlot, 2% Cabernet Franc, 2% Petit Verdot

Winemaker Notes

Beautifully rich and complex, this wine offers enticing aromas of huckleberry jam, black cherry and cinnamon spice, with hints of bay leaf, maple and violets. The lush dark berry and sweet baking spice notes are echoed on the palate, where the flavors are framed by a firm underlying structure and fine, dusty tannins that add depth and nuance to a long, robust finish.

Production

2020 brought another exceptional vintage to Napa Valley, resulting in wines with alluring polish and poise! The season began with a wet winter followed by a mild spring. While this led to a slightly later-than-normal start to the season, ideal summer weather with no significant heat spikes ensured ideal flavor development, yielding complex and vibrant whites, and refined reds with elegant tannins, enticing aromatics and beautiful fruit flavors.

The fighting 69th has long celebrated its Irish heritage, and in this tradition, we bring you their first Irish Whiskey. In the 19th century, Irish whiskey was the most popular spirit in the world, and today, it is the fastest growing whiskey category in the world. This fine whiskey is a tribute to the Irish-American spirit and a perfect tribute to America’s own Irish Brigade!

We use only the finest high quality distilling grains. Our mash bill consists of the finest barley and malted barley, which gives Irish whiskey its unique and distinctive character. We use a variety of mash bills and complete the minimum 3 year aging process in bourbon casks. We then create a variety of distillates using unique secondary cask finishing.

Our whiskey is triple-distilled in handmade copper pot stills, uniquely designed for maximum vapor and copper interaction. Our Fighting 69th Irish whiskey is a unique and superb blend of three distinct distillates, which undergo separate finishing processes. We then choose which finishes, in the right proportions, create the optimal blend.

All of our whiskies are matured in once used bourbon casks for a minimum of 3 years. We then secondarily finish our whiskies in a variety of other casks, including Single-Char casks, Double-Char casks, Oloroso Sherry casks, Rum casks, and Port casks. This uniquely finished blend results in a fine distillate that is both of robust character and a full smooth finish, a fitting tribute to the Fighting 69th Regiment!

Old Grand Dad 114 Kentucky Straight Bourbon Whiskey

Featured prominently in classic American songs such as "I Drink Alone"by George Thorogood and preferred by James Bond is his old-fashioned cocktails, Old Grand-Dad is more than just a clever name Old Grand-Dad was in fact a real person by the name of Basil Hayden who gained notoriety throughout the 1800s for making bourbon with a higher rye content. The elder Hayden passed down his passion for distilling to his son and then his grandson, R.B. Hayden, who honored his grandfather by dubbing the family's special recipe, "Old Grand-Dad." The Hayden family first established a commercial distillery in 1840, and Old Grand-Dad has been production continuously ever since. Even during Prohibition (by then, the bourbon had been sold to the Wathen family, another prominent whiskey family at the time), Old Grand Dad was one of just a handful of spirits sold as prescription medicine through the American Medicinal Spirits Company. Old Grand-Dad 114 Bourbon Whiskey honors Basil Hayden's longstanding Old Grand-Dad recipe by utilizing a higher rye content for a lighter, spicier bourbon. The bourbon's unique mashbill, combined with the barrel-strength bottling, results in a perfect balance of smoothness and flavor. Old Grand-Dad 114 Bourbon Whiskey is noticeably spicy on the nose, with strong oak notes and deeper hints of rye grains, leather and candied sugar. The bourbon's taste retains many of the spicier flavors, including pepper and tobacco, with the slight sweetness from the aroma becoming more discernible through touches of pear, apricot, vanilla and caramel that are evident on the palate. The finish is dominated by long-lasting notes of oak and vanilla.

Woodinville Bourbon Port Cask Finished

The story of Woodinville began with two best friends with a passion to make the greatest craft whiskey in the world. Woodinville whiskeys are made by time-honored traditions of bourbon production, using the highest quality locally grown grains, the best barrels, and coopers in the world, the most technologically advanced distilling equipment, and the wisdom of an industry legend, the late David Pickerell. Woodinville has already received notable accolades including "Craft Whiskey of the Year" for their Straight Bourbon, and "Craft Rye Whiskey of the Year" for their Straight Rye by the American Distilling Institute in 2018 and 2017 respectively. All of the grain used in production is grown exclusively for Woodinville whiskeys on the Omlin Family Farm in Quincy, Washington, run by third-generation farmers, Arnie and Phyllis Omlin. The locally sourced grains are mashed, distilled, and barreled in their Woodinville distillery, before heading over the Cascade Mountains to their private barrelhouses, where Central Washington's extreme temperature cycles stimulate the extraction of natural flavors from the oak. Before being coopered, the barrel wood used for maturation is open-air seasoned for eighteen months, allowing the elements to soften the wood's harsh tannins. The barrels are then slowly toasted and heavily charred to further enhance the wood's most desirable flavors. This meticulous process delivers a hand-crafted spirit with rich aromas of crme brle and spice cabinet, and decadent notes of rich caramel, dark chocolate, and vanilla bean on the palate with a sweet, lingering finish. The Port Finished expression takes their 5-year-old Straight Bourbon for another 6 months of finishing in ruby port barrels. This adds additional notes of candied cherries, dried fruit, berries, and chocolate to the already rich bourbon profile.

Vinification
Harvested by hand, the selection of ripening grapes in Freixenet's vineyards reaches across the span of several months. From the end of August for the harvest of the warm weather Macabeu grapes, through the beginning of October for the higher elevation Parellada variety, our winemaker awaits the perfect time to gather each bunch, letting the vines tell him when they are ready. The first fermentation is nurtured in stainless steel tanks at controlled temperatures between 57°- 60°F. Exclusively initiated from our own Freixenet cultures, the first fermentation is introduced into the tanks. After 10 to 12 days, the wine is racked and clarified as the blend is readied for bottling. The secondary fermentation finds the bottles of Cordon Negro cradled in the perfectly chilled caves for up to 18 months.

Palate
Cordon Negro Brut is a crisp, clean and well-balanced 'cava' sparkling wine. The fresh palate of apple, ripe pear and bright citrus flavors combine with a long finish and an exciting touch of ginger.

Serving suggestions
Pair Freixenet Cordon Negro Brut with anything from Eggs Benedict to seafood, such as lobster or bluefin tuna. It is also the perfect pre-prime rib cava selection for oyster, caviar, or sushi appetizers.

Barrell Whiskey American Vatted Malt

We partnered with small and large producers across the country to select whiskeys that express the full diversity of American terroir and style. The resulting blend is remarkable, and we are proud to be the first to showcase the growing category of American single malt in this way. 

We chose the name “American Vatted Malt” as an homage to the old Scottish category of vatted malt, which was once the preferred nomenclature to describe a blended whisky made entirely from single malts. Today, the Scots refer to that style as blended malt, but affection for the term “vatted” lives on.

As a new category, American single malt producers are notoriously creative, looking to their local environment and regional traditions to create distinctive whiskeys. That meant the blend was a challenging one technically, as it asked us to bring together a plethora of unique components. Never before have we strived to balance the distinctive tang of Southwestern mesquite smoke with the sweet and creamy maltiness of malted barley, or contrast briny coastal peat with the warm vanilla character of toasted oak. The resulting blend is complex and multi-faceted, rewarding the drinker with unfolding layers of flavor. 

This first release of American Vatted Malt was years in the making, as many of the components in the blend come from emerging distilleries that have never traded or sold bulk whiskey before. The physical and logistical work of sourcing and blending with a group of small, independent producers is neither easy nor short, but we believe it lays the groundwork for a new, exciting, and collaborative future. Some of our collaborators have asked to remain anonymous, but the core group of participants includes:
