Heaven Hill distillery was founded in 1935, immediately after Prohibition ended in the United States in 1933, after a group of investors, including the famous Joseph L. Beam, decided to be ready for the rebounding market. Heaven Hill is located on a massive estate boasting 22 multi-story rick-houses across hundreds of acres of land. Now known as the "Heaven Hill Bernheim Distillery" they have the second-largest inventory of Bourbon Whiskey in the world. It is also the only remaining large-scale family-owned distillery in Kentucky. In 1837, Henry McKenna emigrated from Ireland to the United States. After spending nearly two decades as a farmer in Kentucky, McKenna founded an eponymous distillery in 1855. At the time, McKenna focused on the production of wheat whiskey (the only crop he was harvesting at the time) and was able to distill enough whiskey to fill one barrel each day. As word of McKenna's high-quality whiskey spread, McKenna was able to triple his distillation capacity and began experimenting with the production of bourbon. Following his death in 1893, McKenna's three sons Daniel, Stafford and, James began operating the business. The 80-proof Henry Mckenna Bourbon Whiskey honors the rich family tradition and pioneering spirit of Henry McKenna, one of the founding fathers of bourbon. He was among the first to age his whiskey in new, charred American oak barrels. Aged for a minimum of 4 years, it has a mash bill of 75% corn, 13% rye, and 12% barley and is bottled at 80 proof. The oak, vanilla, and butterscotch on the nose are accompanied by floral, citrusy, and cinnamon notes. The mouthfeel is quite creamy and the oak and vanilla are joined by pepper and nutty overtones. There's a well-balanced sweetness with caramel and dried fruit. The finish is medium and slightly warming.

Kentucky Bourbon Distillers are the owners of the Willett distillery in Bardstown. Willett distillery was built in 1936, just a few years after the repeal of National Prohibition by Lambert Willett, a former distiller for Max Selliger & Co. The distillery was initially a success, principally through its Old Bardstown and Johnny Drum brands, however it was hit hard by the bourbon slump of the 1970s. The result was an ill-advised move into producing ethanol for the production of "gasohol," spurred by the 1979 energy crises. When that market re-stabilised, Willett was left floundering and eventually closed in the early 1980s. Lambert's granddaughter, Martha Willett and her husband, Even Kulsveen, then purchased the distillery and established Kentucky Bourbon Distillers in 1984. They originally bottled the remaining barrels of 1970s-distilled stock, however as that gradually diminished, they began sourcing barrels from other producers in order to replenish it, becoming one of the most important independent bottlers in Kentucky. The majority of their barrels were believed to have come from neighbouring Heaven Hill, and with these casks they developed a wealth of important brands, including the Willett Family Estate, Noah's Mill and Rowan's Creek. In addition, they contract-bottled brands for other companies, such as the Very Olde St Nick and Black Maple Hill brands. Revered for the quality of their whiskey, their products have become some of the most collectible to come out of Kentucky.

Deep within the scenic Carlow countryside, sits the 18th century home of the Walsh Whiskey. The family owned and operated company was founded by Bernard and Rosemary Walsh, previous owners of a ski chalet in France, in search of the perfect Irish whiskey with which to spike their famous coffee. Eventually, their search led them to the founding of their whiskey brand Irishman in 1999. Set out to rediscover Irish-style Whiskey as it was made 200 years ago, they initially contracted their distilling to Bushmills. After becoming successful they were eventually able to build their own distillery. The Walsh Whiskey ceremoniously opened in June of 2016, in the heart of Southern Irish farm country where they produce four versions of The Irishman, three Writer's Tears, and two varieties of Irish Cream Liqueur. The picturesque Walsh Whiskey marks the return of Whiskey distilling to County Carlow for the first time in over 200 years. With its three specially crafted imported pot stills built in the legendary Scottish Forsyths and two, forty plate column stills. They are the only independent Irish Whiskey distillery to produce the three styles of Irish Whiskey pot still, malt, and grain under one roof, in one still room. Walsh Whiskey has the capacity to produce 650,000 cases of Whiskey per annum. Writers' Tears is a truly unique vatting of Single Malt and Single Pot Still whiskeys. This expression is non-peated and triple distilled from 60% Pot Stilland 40% Malt. After being distilled the Irish whiskey is matured and aged in American Oak bourbon casks. This incredibly aromatic, flavorful expression won a Gold medal at the International Spirits Challenge in London.
