Situated along the northern coast of South America, Guyana was colonized by the Netherlands in the early 17th century. Much like other European countries at the time, the Dutch used their settlement's tropical climate Guyana enjoys an average temperature of up to 89.6 F and up to 137.8 inches of rain annually as a source of raw, fresh ingredients that were unable to be harvested on the European continent. In 1658, Guyana began exporting sugar back to the Netherlands and within a decade, farmer's along the Demerara River began distilling their excess cane sugar into rum. By the turn of the century, the tiny Caribbean country had over 300 unique distilleries. Today, Demerara Distillers Co. the last remaining rum distillery in the country pays homage to Guyana's rich tradition of distilling fine rum with El Dorado 12 Year Old Rum. El Dorado Rum is made from fresh, raw sugar cane cultivated in Guyana's rich, alluvial soil. After the sugar cane has been harvested by hand, it is transported back to Demerara Distillery by barge. There, the molasses is fermented with a proprietary strain of yeast specifically designed to control the Brix of the wash (Brix is the measure of dissolved solids in a solution). Following fermentation, the rum is distilled through Demerara Distillers' antique wooden and copper stills (the stills, which are up two centuries old, were used when the country was still a settlement). El Dorado 12 Year Old Rum is matured in bespoke, 45-gallon American oak casks for a minimum of twelve years. The hand-coopered barrels are allowed to mature in a custom-built warehouse, where Guyana's intense heat and tropical climate forces the rum and wood to mingle. Th rum has a smoky, savory aroma, with hints of oak, cinnamon and caramelized oranges. Notes of tropical fruits, banana bread and coconuts dominate the palate, and are complemented by touches of tobacco, cedar and woody spice, and lead to a long, caramel finish. El Dorado 12 Year Old Rum earned the Gold Medal and the title "Best in Class" at the International Wine and Spirits Competition in 2011. Ron Zacapa Centenario Edicion Negra Solera Rum

Situated over 1,000 feet above sea level in southwestern Guatemala, the Ron Zacapa Plantation enjoys a generous amount of sunlight and mineral-rich, volcanic soils, making it ideal for the cultivation of fresh, raw sugar cane. There, expert farmers many of whom have been tending to the land for decades carefully analyze the sugar cane as it matures on the estate, harvesting only the canes that contain high levels of sucrose and fiber and low levels of impurities. While most rums are made using molasses, which is a byproduct of refining sugar cane, Ron Zacapa Rum is made using virgin sugar cane honey. The virgin sugar cane honey is extracted from the first pressing of raw sugar cane harvested on the Zacapa Plantation and lends a luxurious, smooth texture to the rum. Once the honey has been extracted, it is fermented with a unique strain of pineapple yeast before being distilled through a single column still lined with copper. Following distillation, Ron Zacapa's Edicin Negra is solera-aged through a series of casks that were previously used to mature bourbon, sherry and Pedro Ximenez wine. Solera aging is a process that has traditionally been reserved for aging cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As rum from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of rum from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new rum. As a result, no cask in the solera is ever fully emptied. Also, as the younger rum cascades through the solera, its average age and complexity gradually increase over time. Ron Zacapa's Edicin Negra is a marriage of rums from 6 to 24 years old, extra-aged in an assortment of double charred American oak and Pedro Ximnez wine casks. Expect an explosion of flavors on the palate, with delicious smoky elements, chocolate, and caramelized and dried fruits.

Alexander Murray Ardlair 9 Year 2010 Single Malt Scotch Whisky

Although categorized as a Highland whisky, Ardmore flirts heavily with the South-east peripherals of Speyside, lying boisterously at the foot of the Grampian hills. Big and brash, it is also known for flirting heavily with peat, at least some of the time that is.

Built in 1989 for the purpose of producing single malt for blends, Teacher’s opted to make peated whisky here. This move alleviated the company’s reliance on Islay’s producers of peated whisky to add smokiness to blends – a particularly astute decision, given the growing popularity of Scotch whisky at the time. Today, since the distillery adopted steam during distillation rather than coal fires, two spirit characters are made here, a practice that is becoming increasingly prevalent.

Both spirit styles are produced at separate times of the year, in which the point of difference in production is the Phenol level of the barley delivered to the distillery, i.e. the level of peat used in drying. ‘Ardmore’ is the heavily peated single malt; ‘Ardlair’, or ‘Ardless’ as it’s sometimes known, is the unpeated single malt. Worth noting is that, although each spirit is vastly different in character, because Ardmore and Ardlair are from the same distillery, they can be vatted (or married) together and still be called a single malt.

Sometimes big, brash, earthy and smoky; sometimes subtle, floral and fruity. A real Jekyll and Hyde distillery. Let your nose prepare you accordingly.

This 2010 vintage is fantastically assertive: rich and nutty, with bags of the Highland character. A real ‘pick-me-up’ dram; however addition of water reveals layers of complexity, and a softer side that is not immediately apparent.

The origins of the French company Giffard can be traced back to 1885, when mile Giffard started looking into the digestive and refreshing properties of mint. Giffard was a pharmacologist at the time, making and selling medicine in Angers, France. What he ended up creating was a mint liqueur, which he immediately put to the test, and offered to the guests at a hotel to provide relief from the scorching summer sun. The pure and refined drink proved a hit and prompted the Frenchman to transform his pharmacy into a distillery. The liqueur was named Menthe-Pastille after the mint sweets that were popular at the time. Today the family business continues the tradition and continues carrying the Giffard banner, five generations later. Giffard's liqueurs are crafted by macerating locally-sourced fruits and plants in alcohol for 48 hours up to 3 months. This infusion serves as the basis for their liqueurs. These are masterfully blended, filtered, and meticulously tested. Giffard is constantly innovating and working on recipes with the same passion that led to the brand's creation all those years ago. Today they have several liqueurs, syrups, and spirits on offer, even producing tequila, sake, and sauces. Aroma: Heady, intense and powerful. Swirl the glass and dip your nose into the torrents of tarry ropes, creosote and linseed oil rising from deep within the vortex. A collision of waxy dark chocolate, warm blackcurrants and muscovado sugar pulls you under its spell with a burst of plump cherries and earthy pine needles leaping from its depths. From salty seasoning comes a briny character with tangy crisp seaweed and smoky bacon swirling on the surface with hints of sweet vanilla, spicy cloves and blueberries. Surrender to its dangerous depths with the heady force of menthol, treacle and chilli sauce.

Taste: Plunge into the whirlpool and torrents of taste well up on the palate; deep, peppery and chewy, bombarding the tongue. The first plunge brings forth chewy peppered steak soaked in pepper sauce with the tang of crispy seaweed. As you descend deeper, encounter a mouthful of black tarry espresso coffee that coats the palate with rich melted dark fruits (blackcurrants, blueberries and cherries) and bitter almonds.
