This year’s 2023 limited edition is an experience of subtle flavors and complex layers. Aromas of allspice, vanilla, and elegant oak mingle with a hint of cinnamon and clove on the nose. Rich layers of honey, vanilla, and rye spice are balanced with the flavors of ripe berries and pear that unfold and dissolve into a long mellow finish. The result is soft, smooth, and characteristically shareable.
AGED 12 – 25 YEARS

The intense fruitiness of Williams pears with the delicate complexity of Cognac. No additives (caramel or added flavours) or neutral alcohol are used. We only use pear eaux-de-vie, Cognac, water and vanilla sugar made with Fresh vanilla from Madagascar. It is the equivalent of 18 pears that are needed to make 700ml of Belle de Brillet!

The Matsutake (or pine mushroom) is a unique wild ingredient. Rare around the world, but abundant here in Bear Country.

Our first limited edition batch uses foraged Matsutake mushrooms, that are cask-infused with selected BEARFACE whisky to release the subtle tastes and aromas.

To create this expression, we mature our whisky in hand-selected ex-wine casks and sherry pipes inside repurposed shipping containers in the Canadian wilderness. We call this ‘Elemental Ageing’, and it gives our whisky a bolder, smoother flavour.

WINEMAKING
All KORBEL California Champagnes are made using the traditional méthode champenoise bottle fermentation process. The méthode champenoise process actually begins in the vineyard. We harvest the grapes for KORBEL Brut about two weeks earlier than is typical for still wines. The early harvest promotes the delicate, crisp, bright flavors of this varietal.

Yellowstone Limited Edition represents an annual exploration in top-shelf blends and finishes. Making each year a unique and sought after release. For 2023, we created a delicately balanced blend of 7-year, 13-year and 16-year bourbons, that is then finished in Tokaji casks. Available in limited quantities for those who seek it.

TASTING NOTES

Nose: Honey, green grapes and freshly baked cinnamon.

Palate: Dry spice followed by caramel, dark cherry, citrus and white pepper.

Finish: Dry tobacco, honeysuckle and smokey oak.

For this range we have sought out Single Malts of interest from distilleries not owned or run by ourselves. They are the issue of specific vintages, with full traceability of the distillation and cask ageing that they have undergone. The master blender has specially selected these barrels from our ageing warehouses, where many Single Malt Casks lie slowly maturing, as worthy of special Mossburn Distillers & Blenders bottling. Each batch exhibited the classic hallmarks of balance, depth and complexity that only the best Single Malts can deliver.

These Single Malt Scotch Whiskies have all been bottled without any colouring or chill filtration.
