In Carta Nevada Brut, Freixenet plays up a playful, fruit-forward style. Considered an easy introduction to Spanish cava, it is a terrific first taste for those who have not yet had the pleasure of enjoying a lively, effervescent glass of bubbly.
Vinification
Freixenet produces its sparkling wines in the traditional méthode champenoise, aging Carta Nevada Brut for nine months in the 'cavas,' the caves from which they take their name. Embracing double fermentation, the second fermentation takes place in the bottle as the wine ages on the lees. Through the process, Freixenet sets the stage for a generous mousse and continuous stream of fine bubbles upon opening.
Palate
Carta Nevada Brut has dosage, or residual sugar level, of 1.5%. Its fresh, fruity flavor is pleasant and slightly sweet, although still within the technical range of the brut category. This wine's refreshing, light taste leads from a full, ripe peach, apricot fruit and vanilla nose, encouraging big, round, soft flavors in the mouth, with an appealing finish. Perfect for brunch, it is also an excellent choice when mixing champagne cocktails.
