Reserva Heredad was created to set a style in the world of high-end sparkling wines. We make it with the aim of offering an elegant and versatile cava. To do this, we select only the best wines from each harvest, which will then age in the bottle in contact with their lees for more than 24 months. The ageing process ends when the expert gives each bottle the magic touch with the “poignettage”, a twist of the wrist that intensifies the contact of the lees with the wine, thus giving a more complex bouquet.

You can't fake 12 years of rest… Rare distillation and barrel aging practices, coupled with over a decade's rest, have produced an American Whiskey with notes of maple, vanilla, ripe apple, and a long smooth finish. The whiskey is aged 12 years and made with a mash bill of 99% corn and 1% barley. The spirit was distilled to 189 proof, barreled at 140 proof, then bottled at 92 proof from second fill barrels.

Color: Brilliant deep amber
Nose: Sweet notes of vanilla, reminiscent of bakery goods and sugar cookies, with hints of fresh leather.
Taste: Elegant and balanced mouthfeel showing notes of rose and dried cherry followed by toffee and baking spices. Rye spice and herbaceous notes appear mid-palate and into the finish.
Finish: Rich earthy finish led by a lingering rye spice.

Hakuto Gin, crafted at Matsui’s Kurayoshi distillery, offers a crisp and refreshing profile made from nine distinctive botanicals: pear, juniper berry, coriander seeds, orange and yuzu peels, wakayama mochi, gyokuro, cherry blossoms, and black pepper. These ingredients come together to create a delightful blend of sweet and spicy flavors. Whether sipped on the rocks, mixed with tonic water, or enjoyed in cocktails, this release showcases yet another impressive creation from the rising Matsui distillery.

Proof & Wood Ventures has unveiled The Cabinet, a limited-edition whiskey that highlights its finest ryes and bourbons. Part of the award-winning DC Collection, it features The Senator, named Best American Rye at the 2022 World Whiskies Awards, and The Representative, recognized as the World’s Best Bourbon in 2023.

Originally launched in 2022 in Washington, D.C., the 2023 edition will be available nationwide but limited to around 600 six-bottle cases.

Maker Notes

The Land
After research spanning multiple seasons, a particular plot of land was selected in Winters, California (approximately 35 miles from the distillery) for its nutrient rich soil, maximum sun exposure and access to water.

The Grain
An ancient heirloom grain, the Bloody Butcher corn comprises 70% of the recipe. The balance is 16% Red Winter Wheat and 14% malted barley. The Bloody Butcher corn, notoriously difficult to grow, provides intense flavor and structure. The Red Winter Wheat provides a velvety texture and generous mouthfeel. Malted Barley rounds out the mashbill and provides structure as well as flavor.

Tasting Notes
Deep caramel with an orange hue. Bright aromatics of ground cinnamon, dried orange peel and lilac blossoms. Finishes with a long, unctuous cherry flavor with pronounced minerality and a core of power.

Liqueur made from the infusion of green and red rhubarb chunks.

TASTING NOTES

Color: Slightly opaque brick red color.
Scent: Intense aroma, typical of rhubarb.
Taste: A stewed note that prevails over the astringent characteristic of the fruit, making the liqueur both lively and sweet.

About the product
5,000 years ago, rhubarb was used for medicinal purposes by the Chinese. It is thanks to the English that it made its appearance in the kitchen a few centuries later.
Harvested in the spring, rhubarb is the favorite plant of pastry chefs who combine it with sugar and strawberries to balance its intense acidity. It is also possible to make syrup, liqueur or wine from rhubarb.
