Crafted in 1992 by Booker Noe as part of the Small Batch collection, Basil Hayden introduced a more subtle side of bourbon compared to its counterparts.

This style of bourbon was inspired by 1792 whiskey pioneer Meredith Basil Hayden, Sr., a rye farmer from Maryland who moved to Kentucky and began distilling. He chose to distill his bourbon with a higher percentage of rye, and Booker set out to create a similar high-rye mash bill that would offer the same refined, approachable taste profile.

Today, this bourbon stands as a tribute to Meredith Basil Hayden, Sr.’s high-rye mash bill ingenuity, as well as to Booker Noe, a true innovator who sought to welcome new drinkers into whiskey.

Tasting Notes

AROMA: Charred oak and sweet notes of vanilla & caramel with hints of dried fruit

TASTE: Charred oak flavor that is complemented with sweet brown sugar, a touch of black pepper, and dried fruit to round it out

FINISH: A pleasant, lingering charred oak finish with a touch of dried fruit

COLOR: Golden brown

Enjoy the following Cocktail Recipe: 

* 4 oz (120 ml) boiling water
* 2 oz (60 ml) Basil Hayden's Bourbon
* 2 dashes of walnut bitters
* 1 tbsp (14 g) butter
* Cinnamon stick, for garnish
* 1 lemon

Bring the water to a boil. Add your whiskey straight into a coffee or tea glass. Add the water, bitters, and butter, and then stir with a cinnamon stick until the butter is dissolved. Then, to make a string of lemon for garnish, use a lemon zester or sharp paring knife to gently go around the top of the lemon to create a spiral. Clean up the excess with the paring knife.  Garnish the drink with a string of lemon and a cinnamon stick. Great for colds!

Old Carter is the passion project of “flavor chaser” partners Mark Carter and Sherri Carter, whose beverage industry roots trace back to award-winning careers in the California wine business. After resurrecting the long-dormant bourbon brand Kentucky Owl in 2011, the two were irreversibly hooked on the art of whiskey making and blending. Kentucky Owl sold unexpectedly in 2017, but by then Sherri & Mark were so enamored with the vibrant spirit of Kentucky’s whiskey community, they made a commitment to carry on their love affair with whiskey by making a statement of their own, right in the Bluegrass. And Old Carter Whiskey Co was born.

THE DEACON

In Scots, a “Deacon” is an adept and proficient master tradesman. The expert distillers behind our Scotch fit the name perfectly: The Deacon is an homage to master craftspeople, whatever their trade may be.

THE DRAM

THE DEACON blend is a masterful blend of both smoky Speyside and peaty Islay malt whiskies, making it a complex, rich, and smoky dram. In our blend, the single malts from Islay have a characteristic peaty smoke flavour, while the single malts from the mainland have a bonfire-like smoke character. A nose of charred orange, sweet malty biscuits and woodsmoke gives way to juicy orange, echoing the nose, on the palate, delicate spice, and tangy peat. The finish is both sweet and smoky, long, and smooth.

Traditional copper pot stills used in our distillation process lend their iconic shine to The Deacon’s stunning bottle, which looks like nothing else on the shelf or back bar, covered in an ornate pattern and stamped with our iconic mascot.

Crafted from hand-selected bourbon barrels and made with 100% Texas grains sourced from a co-op of Texas farmers, Devils River Distiller’s Select is a “grain to glass” Texas Straight Bourbon.

THE LONE STAR STATE HEAT

Distiller’s Select is distilled and aged in the hot Texas climate for over two years in a new #3 charred American oak barrel. The Texas heat naturally accelerates the aging cycle making it the perfect location for our rickhouse. As the whiskey expands deeper into the oak staves, our bourbon developed its dark color and complex flavor.

WATER AND WHISKEY

Once our Distiller determines our whiskey is ready to bottle, Distiller’s Select is then brought to its final 120-proof by marrying the bourbon with spring water from the Devils River Region. Resulting in a well-balanced, high-proof bourbon.

TASTING NOTES

NOSE: Pepper, oak, rye and balanced with ripe apples, pears and vanilla.

Nose: This peated whisky showcases bright notes such as fresh fuji apple, ground cinnamon, charred wood, and strawberry rhubarb crisp. There’s a savory smoke note that teases the nose.

Crafted using only the finest ingredients, the white whiskey boasts a rich and complex flavor profile. Its 100% corn grain base is a nod to the traditional grain base used for "authentic" moonshine from the eastern mountains of the US. Despite being bottled at a gentle 80 proof, the whiskey still packs a punch, delivering a smooth and satisfying finish that lingers on the palate.

Nestville 9 Year old is the result of expert blending and aging techniques, with only the most exceptional grain and malt whiskies selected from archive stocks. These carefully crafted distillates have been aged in new virgin oak and bourbon casks, allowing for a bold and dynamic flavor to develop. On the nose, the whiskey exhibits sweet aromas of caramelized nuts, honey, and delicate flowers. The palate is a symphony of flavors, with subtle notes of creamy vanilla and rich caramel. As the whiskey finishes, it leaves a soft and intense impression, with a creamy-roasted touch that lingers long after the last sip.

Aged more than 3 years, the 2023 vintage of Pinhook Bourbon showcases a warm nose of butterscotch, dried apricot, and graham cracker. These transition to a palate of coffee, roasted peanuts, candied cinnamon, and crème brûlée. Each year, Pinhook releases a new vintage of bourbons and ryes. Every expression is the best representation of our barrels at that moment in time, and is dedicated to a promising young thoroughbred. Through a combination of careful barrel selection, blending in small batches, and meticulous proofing, each Pinhook vintage has a personality as unique as the horse on the label.

The Sagamore Spirit Barrel Select program is a unique Maryland-style blend of 7-year-old straight rye whiskies. Each barrel of high-rye is expertly blended with a low-rye mash bill by our distilling team. No two expressions taste the same, and you are guaranteed to enjoy a one-of-a-kind product. WE USE TIME-TESTED PRODUCTION TECHNIQUES THAT SHOWCASE EACH INDIVIDUAL GRAIN’S TERROIR RESULTING IN SINGULAR AND NOVEL WHISKEYS.

We use grains that mass production forgot.

The soulful, rich flavors of our no-compromise whiskey begin with our use of only heirloom and heritage grains. Modern agricultural has no interest in these low-yield, finicky grains, yet we could not create the singular profile of each Laws Whiskey without them. We are dependent on the two family-owned farms – the Cody’s in the San Luis Valley and the Ohnmacht’s out on Colorado’s eastern plains – willing to cultivate these specialized grains for us.Terroir is Our Master
Our whiskey chose Colorado. Don’t get us wrong, we think Colorado is a cool place to live, but that’s not why Laws is here. Our terroir-driven whiskey requires the rarified thin air, the hot days and cool nights of the Rocky Mountain region, and the rugged growing conditions of the San Luis Valley and eastern plains that stress our grains just enough to deepen their flavor.

There are No Shortcuts at Laws.

We always have and always will distil every drop we bottle. While our whiskey aged, we didn’t sell any whiskey for our first three years. Time is as critical of an ingredient as our heirloom grains. Every mash bill gets its own optimal distillation process, and we deploy time-intensive sour mash fermentation. We are the first Colorado distiller to bottle bonded whiskeys. For us, these steps are not extra, they’re mandatory to creating Laws Whiskey

Our Master Distiller is a Village.

At Laws, no person has the title ‘Master Distiller.’ We believe it takes the talents, smarts, quirks and obsessive passion of every Laws co-worker, aka The Village, to make our whiskey. In the Laws Village, you are part of something so much greater than self.

Cooperstown Doubleday Baseball Bourbon

This premium American Bourbon whiskey is a blend of select young and older, more complex bourbons. It drinks with a smooth and caramel coated flavor profile. A mash bill of corn, rye, and barley, this bourbon is “up proofed” by our distiller to 90 proof to help define the brown sugar nose, enhance the subtle notes of butterscotch and toffee, and accentuate the “band-aid” finish so typical of older whiskeys. Housed in a uniquely designed and patented baseball decanter, each bottle is individually blown and formed in the shape of a professional baseball, right down to the 108 raised stitches on the glass ball. Every bottle includes an ash wood stopper (used for baseball bats) and sits on a
raised pedestal base (all one molded piece) which is a clever replica of an actual baseball diamond, complete with the bases and home plate, pitcher’s mound, and running lanes. A blend of young and 5 year old bourbons, it drinks remarkably well, like a fine “older” bourbon should. Filled in our patented, specialty baseball decanter, this bourbon makes a great sipping spirit.

Our award winning, premium bourbon whiskey housed in a uniquely designed and patented football decanter bottle, each is individually blown and formed in the shape of an actual professional football, right down to the laces on the glass ball. Every bottle includes a pigskin replica stopper and sits on a raised pedestal base (all one molded piece), which is a quintessential depiction of an actual football field, complete with the yard lines and end zones. This beautifully complex 30 years old single malt is a tale of two worlds. With respect for the past and a passion for the future, our 30 years old single malt brings together the old and the new. In 2019, when the distillery met its new owners, some of our precious 30 years old spirit was taken and filled into new, specially selected European Oak sherry casks where it continued its maturation for a further year. It was then carefully blended with spirit that had slumbered for all three decades in the original wood. New ownership, new Whisky Maker, new wood, 30 years old casks and aged spirit all combine to create this luxuriant single malt.

A NEW ADDITION INSPIRED BY OUR UNIQUE LANDSCAPE

The beautiful, rugged surroundings of our distillery have inspired smoke-filled aromas and flavours found in The Glenturret 7 Years Old Peat Smoked. American oak sherry seasoned casks build the confectionery sweetness from the new make spirit whilst delicate refill casks deliver the abundant smoky notes. Akin to the comforting shelter from a warm highland bothy on the fresh Loch Turret hills, the whisky’s peated character heightens and amplifies from the outside in.

CELEBRATING THE EVOLUTION OF FLAVOURS FROM OUR BARLEY, SPIRIT AND CASKS

Peat features heavily in our distilling history - records show that The Glenturret dug peat from the mosses at our water source for whisky production in the early 1800’s. The Glenturret 10 Years Old Peat Smoked celebrates the varying sources of peat now procured for our smoky whiskies. The smoke flavours are constantly evolving and changing through time. Our peated spirit style is matured in both first fill and second fill European and American oak casks. The resulting whisky forms a complex single malt that commands a higher strength of 50% ABV.
