As part of our award-winning, independent “Single Barrel” range, each barrel is evaluated, bottled, and hand-selected from Milam & Greene’s growing sourced collection. The team only bottles whiskies that demonstrate elegance and personality. No two casks are the same. Each barrel yields approximately 280 bottles and the cask number, proof and alcohol by volume is hand-written on each label. This year’s lot comes from Tennessee and has already won numerous double gold medals in international competitions. Our fans can expect a variety of gorgeous single barrel offerings for years to come.

The bonds of our friendship strengthened while drinking bourbon. For years, we dreamed of making our own bourbon and how we wanted it to taste. Every year, Pinhook releases a new bourbon and rye, each of which is connected to a promising young thoroughbred horse. The whiskey in each release is the best expression of our barrels at that moment in time, and we blend and proof each release to be as unique as the horse on the label Bourbon Country is the latest edition of straight bourbon whiskey produced by Pinhook. The traditional mashbill has over three years of barrel age and was blended and proofed by Sean Josephs at Castle & Key Distillery in Frankfort, KY.

Eagle Rare Kentucky Straight Bourbon Whiskey is masterfully crafted and carefully aged for no less than ten years. The rareness of this great breed of bourbon is evident in its complex aroma, as well as the smooth and lingering taste. To sip Barrel Proof is to experience Bourbon in its purest form: uncut, straight from the barrel, and without chill filtering. Each bottle is labeled with its unique proof and batch number; but the nose, taste, and finish are pure Elijah Craig.

UNDERSTANDING THE LABEL

Each batch of Barrel Proof contains an uncut selection of 12-year-old Bourbon bottled straight from the barrel. As a result, each batch varies by proof. The batch number on the label provides specific information about each batch. The first letter indicates the order of the release for that year, starting with "A.” The first number represents the month of the release. The third and fourth digits indicate the year.

TASTING NOTES

The nose will knock you off your feet. Lots of rye, barrel, heath bar and leather. The palate is ridiculously viscous, with cinnamon candies, rye, barrel, roasted vanilla bean and chocolate.

COLOR: Deep amber

AROMA: Caramel with toasted oak, fruit notes of apple and orange

TASTE: Rich vanilla, caramel, and butterscotch along with spices of black pepper & cinnamon at the back of the palate

FINISH: Nicely layered showcasing all flavors, fades slowly then lingers as it cools

Nose is sweet, herbal, citrus. The palate is herbaceous, sweet fruit, vanilla, on a layer of oak and earthiness that goes on like a champion marathon runner.

ONCE UPON A TIME IN KENTUCKY A BASIL HAYDEN HISTORY

Crafted in 1992 by Booker Noe as part of the Small Batch collection, Basil Hayden introduced a more subtle side of bourbon compared to its counterparts.

This style of bourbon was inspired by 1792 whiskey pioneer Meredith Basil Hayden, Sr., a rye farmer from Maryland who moved to Kentucky and began distilling. He chose to distill his bourbon with a higher percentage of rye, and Booker set out to create a similar high-rye mash bill that would offer the same refined, approachable taste profile.

Today, this bourbon stands as a tribute to Meredith Basil Hayden, Sr.’s high-rye mash bill ingenuity, as well as to Booker Noe, a true innovator who sought to welcome new drinkers into whiskey.

TASTING NOTES

AROMA: Charred oak and sweet notes of vanilla & caramel with hints of dried fruit

TASTE: Charred oak flavor that is complemented with sweet brown sugar, a touch of black pepper, and dried fruit to round it out

FINISH: A pleasant, lingering charred oak finish with a touch of dried fruit

Our high in small grain Kentucky Straight Bourbon Whiskeys are offered as a Small Batch  – Bottled in Bond. The Small Batch selection offers nuances only premium cooper select barrels can create from their toasting and using 18-month-old air-dried staves. After all, the barrels impart a large part of the flavor.

In addition, the Bottled in Bond gives you assurance the Bourbon was properly distilled, aged between 5-6 years and bottled by us under the supervision of the U.S. Government at 100 proof.

In 1866, Domenico Canale’s spirits business was booming. Rail cars bearing oak-aged whiskeys rolled in and out of the D. Canale & Co. warehouse at Huling Station. Any bottle bearing the Old Dominick brand was known far and wide to be  fine whiskey. More than 150 years later, Huling Station Straight Bourbon is an homage to the whiskeys of 1866 Memphis, bottled at 100 proof and made from a high-rye mash bill reminiscent of the spirits offered by Domenico Canale.

Huling Station Straight Bourbon opens with stone fruit, dark cherries, and creamy vanilla with a wisp of rye spice on the nose. The palate hints at cinnamon and rich caramel, as dry, subtle notes of pipe tobacco and velvety dark chocolate round out the finish.
